Cuisine of Denmark
Danish cuisine , like that in the other Scandinavian countries, ( Sweden and Norway ), as well as that in northern Germany , its neighbor to the south, is traditionally heavy and rich in fat . This stems from both its agricultural past, as well as its cold, long winters. Before the country became industrialized (ca. 1860), small family-based agriculture formed the backbone of Danish society. One lived rather self-sufficiently, and made do with the food one could provide by one's self, or by what could be purchased locally , in a very close proximity. This meant reliance on locally available food products. These form the basis of the traditional diet: cereal products dairy products pork seafood ... beer and bread Agriculture still plays a large role in Denmark's economy, and Danish agricultural products are generally preferred over imported items. Due to long winters and a lack of refrigeration , the ability to store food for a long time was important. This helps explains the lack of fresh fruits and vegetables in many traditional recipes, and the emphasis placed on seasonally available foods. It also helps explain some of the traditional food preparation processes which favored smoking pickling and other food preservation techniques that prolong the storage life of products.

Along with industrialization and the rise of agricultural productivity around the year 1900, came the improvement of the old breed. Far-sighted farmers crossed Lincoln, Leicester, Wensdale CotsWold, Hampshire Down and other breeds to form the origin of the Texel breed. This breed quickly spread throughout many countries. This is why Texel sheep from all countries look alike. However, cultural traditions as well as climate and nature have influenced the breed, so that each country has developed its own caracteristic Texel sheep.

    3 tsp plain flour
    8 fluid ounces lager
    8 ounces grated Havarti cheese
    8 ounces grated Samsoe cheese
    Sweet and sour gherkins and chunks of light rye bread for dippers
    Instructions
    Put bacon, onion and butter into a saucepan and cook until bacon is golden and onion is soft. Stir in flour, then gradually add lager and cook until thickened, stirring frequently. Add cheeses, stirring all the time, and continue cooking until cheeses have melted and mixture is smooth. Pour into a fondue pot and serve with gherkins and chunks of light rye bread.     1/2 cup water
    1 to 2 tsps. fresh lime juice (optional)
    Heavy cream, plain yogurt or sour cream
    Instructions
    Place the strawberries in a medium saucepan, add the 3 tablespoons sugar and mash with a potato masher. Let stand for 10 minutes. Meanwhile, stir 1/2 cup water and the cornstarch together in a small bowl until thoroughly blended and there are no lumps. Add to the berry mixture. Cook over medium heat, stirring, until the mixture boils and becomes transparent, about 3 minutes. Remove from the heat and add the lime juice, if using.

    Pastry:
    1 package active dry yeast, 1/2 cup warm milk ("blood warm", to be exact!)
    1 3/4 cup bread flour, 1/2 teaspoon salt, 2 tablespoon sugar, 1 egg, 2 tablespoon butter, melted, 1 egg white, lightly beaten, 2 tablespoon ground or chopped almonds
    Filling:
    2 tablespoon butter, soft, 8 oz. cream cheese, 2 eggs, separated, 1/2 cup sugar, grated zest of 1 lemon, 1 tablespoon golden raisins Proof yeast in warm milk. Sift flour and salt together into large bowl. Add sugar and stir in yeast mixture. Beat in egg and butter and work into a dough using a wooden spoon; dough should be smooth and elastic and not stick to sides of bowl. Cover bowl with a cloth and let rise in a warm place until double, about 1 1/2 hours. Turn dough out onto floured surface, punch down, knead until smooth and elastic. Roll out into rectangle about 1/2" thick. Cut into 3" squares. Arrange squares on greased baking sheets about 1" apart.
    For filling:
    Combine butter, cheese, egg yolks, sugar, zest and beat (or process in machine) until smooth. Beat egg whites until stiff and fold into mixture. Stir in raisins.

    4 cups water
    1/2 cup white vinegar
    1/2 tablespoon white peppercorns bay leaves 1/2 tablespoon dried dill seed 1 tablespoon dried mustard seeds 1 pound firm-fleshed boneless, skinless white fish fillets For the Cucumber Salad: 1-1/2 cups white vinegar 1/2 tablespoon dried mustard seeds 1/2 tablespoon white pepper corns bay leaves 1/2 cup brown sugar 1/2 cup water cucumbers , peeled and thinly sliced TO MAKE THE FISH: In a deep saute pan, combine the water, vinegar, peppercorns, bay leaves, dillseed, and mustard seeds. Bring to a boil. Reduce the heat and add the fish. Simmer for 8 minutes. Remove the fish and keep warm. TO MAKE THE SALAD: In a medium saucepan, combine the vinegar, mustard seeds, peppercorns, bay leaves, brown sugar, and water. Bring to a boil and boil for 3 minutes. Strain over cucumbers.     3/4 cup 1 percent cottage cheese
    1/3 cup sugar
    1/3 cup 1 percent milk 1/4 cup canola oil 1 teaspoon vanilla extract 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt For the Filling: 4 ounces reduced-fat cream cheese 1/4 cup sugar egg , separated 1 teaspoon grated lemon peel 1 teaspoon vanilla extract 1 cup fresh or frozen blueberries 1 tablespoon water For the Glaze: 1/2 cup confectioners' sugar 2 teaspoons lemon juice In a blender or food processor, cover and process cottage cheese until smooth. Add sugar, milk, oil and vanilla; process until smooth. Combine the flour, baking powder and salt; add to cheese mixture. Process just until dough forms a ball (dough will be sticky). Turn onto a floured surface; knead 4-5 times. Place in a bowl; cover and refrigerate for 30 minutes. In a mixing bowl, beat cream cheese and sugar until smooth. Add egg yolk, lemon peel and vanilla; mix well. Turn dough onto a 17-in. x 13-in. piece of parchment paper. Roll into a 16-in. x 12-in. rectangle. Transfer with paper to a baking sheet. Spread cream cheese mixture lengthwise in a 3-1/2-in.-wide strip down center of dough; sprinkle with blueberries. On each long side, cut 1-in.-wide strips about 3-3/4 in. into center. Fold alternating strips at an angle across berries. Pinch ends to seal and tuck under. Beat egg white and water; brush over dough.
