I purchased this book many years ago, and for many years it has sat in my buffet (where I put all cookbooks whose recipes I dont like). I am Cuban, as over 400 years of my ancestors were, and I found nothing in this book that reminded me of anything I grew up eating. Instead, I strongly suggest you buy "Memories of a Cuban Kitchen" by Mary Urrutia Randelmann. This book provides true Cuban food.

Serves 3-4 Sopa de Frijoles Negros - Cuban black bean soup Serves 3-4 A good winter soup which keeps well in the fridge. Rinse the soaked beans and place with one pint of water in a large saucepan - make sure the beans are well covered with water. Cover, bring to the boil and simmer for two hours. When the beans are tender enough to be mashed easily puree them with the liquid, return to the pot, add the stock and simmer. In a skillet or pan heat the olive oil, add the pork and brown, adding in the onions and garlic. Add this to the pureed beans, cover and simmer for two hours before adding the vinegar, sugar and cumin and simmering for 15 more minutes. Add salt and pepper to taste. Enjoy it!!!
Traditional Cuban cooking is unique and very different from other Latino styles. Cuban cuisine is often called criollo or creole, the name for Spaniards born in the New World - mainly farmers and planters of the Cuban countryside who developed their own style of cooking which was also influenced by French planters fleeing from Haiti in the 1790s and the African cooking of the plantations. Together with chicken, pork and fish these became the central ingredients in Cuban cuisine. Some dishes were also based on indigenous Arawak Indian cooking. Every single recipe in this book has been a proven hit with my in-laws who are Cuban. It is authentic and the recipes are easy to follow. The ingredients are not expensive but the flavors just burst with every recipe. I have used this book for over a year and continue to get ideas out of it. The short answer is that there is Cuban food outside of Calle Ocho in Miami, and even though that neighborhood is referred to as Little Havana, the name seems perfectly appropriate to this friendly and popular restaurant on the other side of town. To be sure, there's nothing fancy about Little Havana. Lodged for years now in what was previously a chowder house, it has a sprawling and bright dining area that could serve as a small-town convention center.

He was born in Cuba to a Dominican father and a Cuban mother. They moved to the Dominican Republic when he was young. As a boy in the Dominican Republic, his first job was for his grandmother in the tiny restaurant she ran in the town of Bani.
