You've probably never heard of moros y cristianos ropas viejas , or media-noche . Most Americans haven't—unless they live in Miami. The first (literally "Moors and Christians") pairs black beans with white rice; the second ("old clothes") combines braised shredded skirt steak and vegetables; while the third ("midnighter") is a grilled Cuban cold cut sandwich. These dishes are cornerstones of Cuban cooking and are turning up at such trendy nuevo latino restaurants around the country as New York's Calle Ocho and Miami's Yuca. Cubans have been a dominant force in Florida's culinary melting pot since the early 1800s, when Cuban cigar workers settled in Ybor City, today part of Tampa. Key West has always had a large Cuban population, thanks to its close proximity to Havana, which is only 90 miles away. Spanish is the first language for more than 70 percent of my hometown, Miami. But Cuba's culinary influences have spread far beyond the boundaries of Florida.

Cuban Recipes
Columbus came to Cuba in 1492 which at the time was inhabited mostly by the Arawak Tribal people. By the early 1500’s a full scale invasion of Cuba was on the way by the Spaniards. The Arawak were systematically killed, and African slaves were imported to work the sugar cane fields. In 1898 Teddy Roosevelt and the Rough Riders drove the Spaniards out of Cuba. Although initially, a very welcome liberator, the United States soon became another unwanted foreign ruler. In 1909 US troops left (mostly) and in 1933 Batista became dictator. He was overthrown by Fidel Castro in 1959. Later we get to the Kennedy era and the Bay of Pigs event which is where most American schools pick up on Cuban history. And what does any of this have to do with food? I just thought you should know a little bit more of the origin of the food you eat. Black Beans

When puréeing in small amounts, the mess is not worth the trouble. Here is a tip that will get a delicious purée without the blender/food processor mess. Simply place the ingredients to be puréed into a large shallow rounded -bottom bowl. Using a small sturdy salad fork, mash the foods to be puréed thoroughly and completely, in a very small amount of the liquid. Return the purée back to the cooking pot. Stir in thoroughly. How to Thicken a Sauce Made Easy 5 to 8 minutes before serving, into a small bowl, ladle out 2 cups of pot sauce. Add 2 Tablespoons of flour and 3 Tablespoons of salted Butter. Whisk until smooth and return to pot. Stir into pot liquid until combined. This, over 5 to 8 minutes will thicken the pot sauce a bit.

Herald Staff Writer Cuban culinary guru Nitza Villapol who taught generations of Cubans how to cook and, in the last decades, how to cope with a ration book and acute food shortages has died in Havana at age 74, Cuba's official press announced Tuesday. The circumstances of her death were not reported. Villapol was known for her cookbook Cocina al minuto (Cooking to Order), dubbed ``the bible of Cuban cuisine,'' and for her TV show of the same name. A Cuban Julia Child of sorts, she also starred on radio cooking shows and wrote at least two other books on Cuban cooking. In the 1950s, young brides took their cooking lessons from Villapol. Some of them later fled to exile in South Florida with their worn copies of Villapol's Cocina al minuto. Copies of the book reprinted in the United States without her permission, Villapol once complained still circulate in Spanish-language bookstores in Miami-Dade County. A home economist, Villapol became well versed in making do with little while studying in wartime England. She put the skills to work decades later in what became her greatest challenge and a controversial role: teaching Cubans how to cook without meat, milk and a whole range of spices indispensable to traditional Cuban cooking.

With Cuba in the news more and more these days, the debut of this self-published bilingual cookbook by Cuban culinary arts instructor Josefina Alvarez couldn't be more timely. Alvarez includes all the well-known staples of the Caribbean island's national cuisine, everything from the ever-present sofrito (an aromatic vegetable mixture used to flavor many dishes) to arroz con pollo (chicken and rice in a pot), ropa vieja (shredded beef), and even cuba libres (rum and Coke). The first 11 chapters feature the Spanish versions of each recipe, and the second half of the book presents them in English. While the book is very simply produced, with no color pictures or fancy typefaces, its value is definitely in the authenticity of the food. Cuban food is not known for great diversity or overt spiciness, but the hearty peasant food is flavorful and satisfying. The chapter on appetizers didn't offer much to tempt me, but I found several recipes in the rice section that got me moving toward the kitchen. The Arroz con Pollo Cubano reminded me somewhat of the delicious version I've often enjoyed in the home of Puerto Rican friends, though I don't think their recipe includes either beer, wine, or saffron as this one does. Viviana Carballo, May 30, 2002 There is no such thing as Cuban haute cuisine, and there never has been. Cuban cooking is the result of Spanish and African influences combined with zesty native ingredients. Cuban dishes come alive with onions, garlic, tomatoes, peppers, lime juice, plus spices and herbs such as cumin, oregano, parsley and cilantro. Sofrito, a mixture of minced vegetables sauteed in olive oil, is an aromatic building block for many dinners. Rice and plantains, either ripe or green, serve as backdrops for bolder flavors. Though Cuban Americans often cook for nostalgia, duplicating the dishes popular in the Cuba of the 1950s, health concerns and the desire for convenience have dramatically changed the way we eat today. Under no circumstances would we give up flavor, and many of us would rather do without a certain dish than compromise authenticity. Yet certain changes are acceptable substituting ground turkey for beef in Picadillo, for example, or pork tenderloin for fresh ham in Filete de Cerdo con Adobo.
