Welcome to Paru's! We specialize in the cuisine of South India, where cooks typically use rich spices and aromatic herbs to transform intricate conjurations of vegetables, lentils, and rice into tasty meals that are as fulfilling as they are filling. Masala Dosa, Idli, Uppuma, and Sambar are the mainstays of a style of cooking with which all India, and now much of the rest of the world, has fallen in love. Paru's was first established in Washington, D.C., in 1975, after my family had immigrated from India. They wanted to engage in a business that would harmonise with their beliefs and their life-style, and so my father combined his entrepreneurial skills with my mother's talents in cooking and plunged boldly into the difficult job of keeping a small restaurant running seven days a week. Following the success of that first venture, we moved to California where our present location opened in March of 1979, and we've been here on Sunset Boulevard ever since. As more and more people have become aware of the physical, social, spiritual, and environmental benefits of the vegetarian diet, Paru's has become somewhat of a landmark both to local vegetarians (as well as non-vegetarians who simply like the food!) and to visitors from abroad. Our staff is friendly and considerate and has been part of the Paru's family for many years, and our kitchen is 100% vegetarian. Most of our offerings are vegan as well, except for many of the drinks and desserts which may contain milk products.

"Chef for a day in Wimberley" "Who's doing the cooking at Blair House?" Something smells good in the kitchen at Blair House in Wimberley, and you just might be cooking it. No, you don't have to do all your own cooking at this inn, settled on 22acres strewn with wildflowers in the Hill Country. There are other things to do as well. You can stroll over to WImberley Glass Works, plat golf at five nearby courses, or browse through 125 shops and galleries just a little more than a mile away. But what's that aroma coming from the kitchen? Usually, chef [Christopher Stonesifer] is the one creating a fine meal, but each month, you can get flour up to your elbows, too, and take home all the recipes. The Blair House Cooking School has become a major event for the inn. For three days each month, guests gather around...and explore foods from down the road or an ocean away. [Chef Christopher] prepares the breads, bountiful breakfasts, desserts, and the inn's Saturday night, five-course gourmet dinners ($55.00 per person). Attire is casual, although guests may show up in anything from jeans to cocktail dresses."

    Oyster Stew Yields 4 to 6 servings
    Before the days of freon, so many foods signaled such a particular time of year that they were symbols of the seasons more reliable than any calendar. Even today asparagus heralds spring more surely than any number of robins; blackberries mean July, hot weather, and chiggers. Persimmons avenge themselves on those who try to jump into fall. And when the months of cooler weatherthe "R" monthsreturn, so does the oyster. Before acceptance of refrigerated food transport (for meat only, first, and that was in the 1880s), inland food supplies depended on the weather. Even after the first frost warm spells threatened the integrity of almost any product, especially seafood. Only December, though the fourth "R" month, guaranteed enough sustained cold weather for shipping. Then, from Baltimore, to Charleston, to New Orleans, oysters were shoveled onto the flat backs of horse-drawn wagons and packed down in wet straw and seaweed for an inland journey sometimes lasting two weeks or more. Far from the coast, oyster became a symbol of the arrival of the winter holiday season, appearing in the markets by Christmas Eve and on the tables that night as oyster stew. A basic southern oyster stew highlights the simplest ingredients: 3 parts milk, 1 part heavy cream, heated, with 2 parts shucked oysters added and poached lightly, seasoned only with fresh black pepper and whole buttersalted crackers the only accompaniment. A more elaborate version follows, which celebrates a winter harvest of watercress (many southerners guard the secret location of their personal wild cress springs as if they were gold mines).
