Donna Maurillo: Say it with Southern cooking
For my first Southern dinner, we all went out to a fish camp and filled up on deep-fried catfish. Dredged in cornmeal and cooked in peanut oil, it arrived on our plates with a deep brown, crunchy crust that I still long for. Hot pepper vinegar was a kitchen staple. It was made by piercing tiny fresh jalapeno peppers with a toothpick, then packing them into a bottle with a shaker top. Apple cider vinegar was brought to a boil and then poured into the bottle. After it cured for a week or two, the vinegar was ready for drizzling on cooked turnip or mustard greens. Then the cooking juice ("pot liquor") was sopped up with thick slabs of rustic bread. I quickly adapted to Southern cooking, but it took a little longer to understand the Southern drawl. When my mother-in-law sent me to the store for self-rising flour, I returned empty-handed because I couldn’t find any "safforizing flour."

by Brad Edmonds Southern food is fun. The whole point of food is fun. We should prepare our food the way we like, and Southerners do that. Ben Franklin is reported to have said "eat to live, don’t live to eat." I suppose technically he was correct, but as long as your doctor isn’t getting really mad at you, you should learn some techniques from Southern cooks. Slather some comfort on that food, and enjoy. Louisianans love mud bugs (a.k.a. crawdads, and they are bugs – lobsters are apparently close cousins of cockroaches, too). They’ll boil them in a giant pot with crabs, potatoes, leeks, onions, jalapenos, and whatever else is in the kitchen that might work (indeed, legend has it that "jambalaya" loosely translated means "what’s in the fridge?"), along with about a cup of ground spices and dried herbs. I’ve seen a vintage cooking show where the cook was struggling to get the lid on the pot against all the crawdads and crabs struggling to get out. This is proper – you want to know the seafood is fresh. Only in Louisiana is boiling a form of performance art. The Louisianans are known for putting heat into most of their savory dishes. Easy dishes use Tabasco or powdered cayenne pepper; when cooking from scratch, diced hot peppers are added to the mirepois. Cajun cooking, it should be said, is not typical of most Southern food: The classical techniques and general style derive from French cooking, which seems to owe its best aspects to inheritances from Italy dating back to the paleoculinary epoch. The deepest roots of Cajun cooking thus are Mediterranean, with the attendant abundance of fresh vegetable type things with bright colors. And herbs.

Then I hit on it, or, more precisely, it called to me from the New Books display at our local mega-bookstore. Summertime, when the livin’ is easy what better to read than a cookbook?
The Gift of Southern Cooking, Recipes and Revelations from two Great American Cooks , written by Edna Lewis and Scott Peacock, is part essay, part memoir and filled to the brim with delicious southern food and gorgeous color photographs. Perfect for whiling away a summer afternoon, whether you’re reading or cooking.
Edna Lewis, who also authored The Taste of Country Cooking and is the recipient of numerous awards for her culinary skills, is in her mid-eighties. Her Virginia country roots compliment Alabama-born Scott Peacock, who is half her age. These two hands-on chefs share mouth-watering family recipes and Southern traditions in this glorious collaboration.
A grandchild of slaves, Miss Lewis’s world was as different from her friend Scott Peacock’s as two parts of the South can be. I have always been extremely interested in not only food but in the preparation of food wherever I have lived. I have spent many hours in the kitchens of my friends and family. I have also spent much time in figuring out the ingredients to a particularly delicious dish when I ate in restaurants. When I like the food, I ask for the recipe. I consider it a compliment when people ask me for my recipes, and I have always handed them over - No, I have never left out an essential ingredient to prevent the "competition" from reproducing my recipes. So, when I got married to a European and told my father we were moving to back to the South, he was absolutely appalled. But I looked at it as the beginning of many adventures and opportunities to learning about culture, language and life. Yes, in the South, there prevails a different mode of speech called the southern drawl, culture which is a slower, easy style of living and in general a wonderfully different cousine. The language was English, so I managed that after a short period of adjustment, the culture created no great obstacles, but I learned much about food. Outdoor cooking is very much a part of the southern life style. Everyone participates in the preparation, the cooking and eating the food, thus making it a wonderful event. There is a mild blend of cousine in the South of cookouts or barbecues, and Cajun and/or Creole food. When we say that America is a melting pot of cultures, we can also say that America is a melting pot of cousines.
