Chef Rick (alias Rich McDaniel) serves up a delicious blend of all these styles of cuisine, as well as cooking tips, food trivia, advice on choosing and using cookware and much more. Rick is a native North Carolinian but has always had a love in his heart for the people and food of Louisiana. Cajun and Creole cooking is one of his specialities and there are a lot of good recipes in the recipe section. Rick is a food writer who learned his Southern cookery from his grandmother and a friend from Charleston. He launched his weekly cooking column "What's Cooking" in 1990 as a way to spread his love of Southern regional cuisine and to make huge amounts of friends and money. Southern Foods and Recipes
All Purpose Marinade
  • 3 C Dry white wine
  • 1/2 t Cayenne pepper
  • 1 t Onion powder
  • 1/2 C Soy sauce
  • 1/2 t Garlic powder
  • Mix all ingredients together.
  • Marinate the meat for 3 hours to overnight.
  • May be used as a mop sauce during grilling. Dry Rub for Chicken, Ribs or Brisket
    • 1 T Ground black pepper
    • 1 T Ground white pepper
    • 1 T Sugar
    • 2 t Cayenne pepper
    • 2 T Chili powder
    • 1 T Cumin
    • 1 T Garlic powder
    • 1 T Brown sugar
    • 1 T Ground oregano
    • 4 T Paprika (the sweet kind not the hot kind)
    • 1 t Dry mustard
    • 1 T Celery salt
    • 1 T Salt
    • (All amounts can be adjusted for taste!)
  • Thoroughly combine all ingredients.
  • Rub mixture into the meat, wrap tightly with plastic wrap.
  • Refrigerate for 8 hours or overnight.
  • Store leftover mixture in an airtight jar or in freezer. Barbecued Pork Ribs #1 Makes: 4 servings.
    • 4 lbs. Pork ribs, cut in pieces
    • 1 Lemon, thinly sliced
    • 1 Large onion, thinly sliced

    I watched the PBS show that this book originated from and immediately ordered the book. I already own over fifty cookbooks and this has become my favorite. As a native "Baltimoron", I've thoroughly enjoyed the stories and info about Baltimore. The recipes are fabulous. You must try a "Dirty Gertie". Fantastic. These recipes are the best that Maryland has to offer. John, hats off to you! Living in Ocean City, we can sample the best seafood in the world. Now, my kitchen is the best in town. Thanks. I love this cookbook! I ended my search for the perfect crabcake recipe with this cookbook! His crabcakes are wonderful, the best ever. And the rest of the recipes and narratives in this book are delicious and entertaining, Shields provides an inviting glimpse into the Chesapeake culture and cuisine. Makes me want to visit the area someday. Five stars from the Crabcake Queen!!!

    Cooking in the south is slowly becoming a lost art. Our ancestor's history can be told in food as well as in numbers and names in some dust covered book. If we have a look at the food prepared in East Tennessee and compare it to the foods of Scotland, it's not hard to see where the roots of the Eastern part of our state were originated. Most of the meals prepared by our ancestors in the "Old South" reflect the history and economics of the region at that time. The south was best known for cotton plantations made famous in books like Gone With The Wind. These did exist but for the large part most rural southerners were sustanance farmers. They made due with what they could grow and what plants and meats they could find in the wild. This was in part because of their financial situation and in part because the areas were so isolated. The art of "Old Southern Cooking" is best summed up as this:
    A good old southern cook like many of our grandmothers and great grandmothers could go into a kitchen and declare how there is no food in the house. In an hour's time they can have food cooked for thirty people, all of it on the table and all still hot.
    This is an art form that is rarely duplicated today even with modern conveniences like microwave ovens.
