Focus on Indian regional cooking with some hands-on cooking, but mostly includes a mixture of talks, demonstrations, visits to markets, lots of rustic meals and plenty of time for sightseeing and relaxation. The tours run in February or October with a maximum group size of 15 and an English-speaking guide. Courses available There are two courses based in Kerala, southern India. The Spice Gardens of Kerala is a 16-day tour in February/March - a wonderful introduction to the fragrant cuisine of this region with its spices, fresh fruits and vegetables and seafood. The tour begins in Periyer visiting the spice plantations and then travels down through the country with talks by local chefs, boat trips, jungle walks and plenty of opportunities to sample local dishes. The Curry and Rice Tour is an eight-day tour with more emphasis on practical cookery. A Taste of Rajasthan is a 15-day tour of the north run every October, visiting Lucknow, Agra and Jaipur. Plenty of talks and demonstrations by local chefs, and visits to street markets. Prices start from £900 off-peak.
