    Microwave Gingerbread Cake Presented by Becky Low on December 21, 1998
    "Lucille Proctor, USU Home Economist in Garfield County shares her quick way to make old fashioned gingerbread - then she tops it with a wonderful lemon sauce. Great recipe for Christmas. Serve 8 " Ingredients:

  • 1/4 cup butter
  • 1 tablespoon sugar
  • 1 egg
  • 1/2 cup molasses
  • 1 1/4 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt Method: Cream butter with sugar. Add egg and molasses. Beat well. Stir in 1/2 cup boiling water. Combine flour, cinnamon, soda, ginger, and salt. Stir flour mixture into creamed mixture. Pour into a greased 9 inch microwave safe pie plate. Microwave on HIGH heat about 7-8 minutes, or until a toothpick inserted in center comes out clean. To cook evenly, rotate plate 1/4 turn every 2 minutes during cooking. Cover with wax paper and allow to stand 5 minutes. Remove wax paper and invert cake on serving plate. LEMON SAUCE: Ingredients:
  • 1 cup sugar
  • 1/2 cup butter or margarine
  • 1 egg
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon peel, grated

    Boiled lobsters, hot melted butter, crusty bread and small glass good, fresh white wine. What more can one ask for? Servings: Ingredients Preparation
    • 2 live [approximately 1 1/2-pound - 680-g each] live lobsters
    • 3 cups [750 mL] boiling water
    • 2 bay leaves
    • 3 slices of unpeeled lemon
    • Hot, melted butter
    • Arrange one [1] lobster into a glass 1 x 8-inch [30 x 20-cm] dish.
    • Pour boiling water over lobster.
    • Add bay leaves and lemon slices.
    • Cover and microwave, on 'HIGH', for 5 minutes, turning lobster twice.
    • Remove lobster from water.
    • Microwave second lobster [in the same water], on 'HIGH', for 5 minutes, turning lobster twice.
    • Half lobsters lengthwise.
    • Remove and throw away stomach and veins [in tails] from lobsters; break-up claws.
    • Serve, over heated plates, along with hot, melted butter.

    With microwave cooking, the trick is to learn to cook by time not sight. Many people become frustrated when attempting to cook in the microwave because they do not realize that most recipes for microwave ovens are written for the 700-watt oven (the industry standard). Don't be discouraged if your first attempt is not a glowing success. It takes time to learn how to cook in your microwave oven. Now for the few recipes that I have. One of the first things I did when I started cooking in my microwave, was to buy a microwave cooking book and followed it exactly, until I was comfortable with using the microwave. The second thing I did and this very important, I kept a notebook beside the microwave and as I experimented with different recipes, I marked down the time it took to cook that recipe. Then there was no more guessing! There is no set conversion from conventional to microwave cooking. Remember when you are converting a recipe, use less liquid (almost 1/4 less) because there is less evaporation; and you can almost eliminate using salt. Foods containing liquid, sugar and fat cook faster. So reduce the cooking time by 1/4 of conventional cooking and then gradually increase until you obtain the desired result.     Have you ever used your microwave to cook an entire meal? Using the microwave won't heat up your kitchen, more nutrients are retained during the cooking process, and some foods, like vegetables, have better taste and texture. These tips and recipes will make you a microwaving expert in no time.
    • Standing Time
      Every microwave recipe has a specified standing time. The dish or casserole must stand on a solid surface to retain heat and finish cooking (DON'T use a cooling rack or trivet). Remember, microwave ovens cook by making water, sugar and fat molecules vibrate, creating heat. Standing time allows heat to spread, cooking to finish, and allows the temperature of the food to stabilize and moderate.

    Cooking time: 12 Minutes
    Utensil: 4 cup GLASS (must be glass) measuring cup, Pyrex or equiv.
    STEP 1
    2/3 Cups Flour
    2/3 Cups Veg. Oil
    Microwave on High Power for 7 Minutes, stir and wisk at 4 minutes and again every 30 seconds until you get a nice dark caramel color, don't burn. You may get the color after only 5 to 6 minutes.
    STEP 2
    1 Large Chopped Onion 2 Starks Chopped Celery 1/2 Chopped Green Bell Pepper STEP 3 1 Bunch Green Onions (Tops) Chopped 1 Bunch Parsley, Chopped (Optional) 4 Cloves Garlic, Minced Add Green Onions, Parsley and Garlic, stir. Saute on High Power 2 Minutes. Your 4 Cup Glass Measuring Bowl should now be above the 3 Cup Mark and your color should be a nice dark color. You are now ready for the next 2 Recipes. CRAYFISH ETOUFFEE (ETOUFFEE IS THE FRENCH WORD FOR "SMOTHERED" ANY MEAT, SAUSAGE, SEAFOOD OR POULTRY CAN BE SMOTHERED IN A THICK SAUCE TO BECOME AN ETOUFFEE OR STEW
