Banana Bread: For a moister and tastier banana nut bread, pour half of the batter in the baking pan, spread 1/8" - 1/4" of pineapple tidbits (drained) over the batter, then cover with remaining batter. This is especially effective for those of us who buy the boxed mix. The addition of the pineapples should only vary baking time by a few minutes, if at all. (Submitted By: Mike King) Breads: To cool a loaf of yeast bread, remove loaves from pans immediately and place on wire racks. To have a softer crust, brush the loaf with shortening and cover with a towel for a few minutes. For quick biscuits to round out a meal, use a drop biscuit recipe and they are done in a flash. Also try slicing leftover rolls and breads, spread softened butter and then freeze them wrapped in foil. Pull them out and reheat them easily in the foil wrapping. Cakes: When using a glass baking dish for cakes, lower oven temperature by 25 degrees. To keep a cake longer, place half an apple in the cake container when storing. To cut a cake without messing up the decorative icing, cut it with dental floss. When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead, and there won't be any white mess on the outside of the cake. Don't have a cake or tart cover? Try inverting the bottom of a salad spinner or springform pan. To dress up cakes and pies, place a doily on top, then sprinkle powdered sugar and remove. Quick and impressive!

N ot all people are chefs, but we are all eaters. Most of us need to learn how to follow a recipe at some point. To create dishes with good flavor, consistency, and texture, the various ingredients must have a kind of relationship to one another. For instance, to make cookies that both look and taste like cookies, you need to make sure you use the right amount of each ingredient. Add too much flour and your cookies will be solid as rocks. Add too much salt and they'll taste terrible. Ratios: Relationships between quantities That ingredients have relationships to each other in a recipe is an important concept in cooking. It's also an important math concept. In math, this relationship between 2 quantities is called a ratio. If a recipe calls for 1 egg and 2 cups of flour, the relationship of eggs to cups of flour is 1 to 2. In mathematical language, that relationship can be written in two ways: 1/2 or 1:2 Both of these express the ratio of eggs to cups of flour: 1 to 2. If you mistakenly alter that ratio, the results may not be edible. Working with proportion All recipes are written to serve a certain number of people or yield a certain amount of food. You might come across a cookie recipe that makes 2 dozen cookies, for example. What if you only want 1 dozen cookies? What if you want 4 dozen cookies? Understanding how to increase or decrease the yield without spoiling the ratio of ingredients is a valuable skill for any cook.

1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
1 egg 1 tablespoon water
1/2 teaspoon vanilla
3/4 cup sifted flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 1/2 cup quick cooking oats 1 cup chocolate chips 1/2 cup chopped nuts Directions Preheat oven to 375 degrees. In small bowl combine sifted flour,baking soda and salt. Set aside. Cream butter, brown sugar and sugar. Add egg, water, and vanilla and mix thoroughly. Add dry ingredients and mix until well combined. Add oats, chocolate chips and nuts and mix with spoon. With teaspoon, drop on to greased cookie sheet and bake for 8 to 10 minutes.

Place 2 inches apart on ungreased cookie sheets, and pat each portion into a 2-inch circle. Bake at 375 deg for 9 minutes. Cool on wire racks.
Yield: 26 cookies (serving size: 1 cookie).

1/2 C raisins, finely ground 2 T vegetable oil 1 egg white 1/4 C unsweetened frozen apple juice concentrate 1/2 tsp maple flavoring 1/2 C pecan halves and pieces 1 small apple, coarsely ground Mix dry ingredients. Add finely ground raisins and mix well. Combine wet ingredients. Add to dry ingredients and beat well. Reserve 36 pecan quarters from 1/2 C of pecans. Chop remaining nuts and add to mixture. Mix in coarsely ground apple. Drop by level tablespoons onto ungreased cookie sheet. Press pecan quarter into each cookie center and bake at 350 degrees for 10 minutes or until bottoms are golden brown. Lightly cover cookies with a towel for several hours or overnight. Finished cookies will be moist and chewy. Chocolate Chip Cookies 1 1/2 cup all-purpose flour 1 1/2 tsp baking soda 1/2 tsp salt 1 1/3 softened stick unsalted butter 1/2 cup sugar 1/2 firmly packed cup light brown sugar 1 large egg 1 tsp vanilla extract 1/2 cup miniature semisweet chocolate chips PREPARATION: 1. Preheat oven to 350 degrees.

These cookies are really popular at our bakery, Grace Baking. A pastry bag is faster than a spoon for piping the cookie batter; use a #4 tip. It's okay to pipe the cookies close together; they won't spread much during baking.
Yields about 4-1/2 dozen cookies.
2 oz. (4 Tbs.) unsalted butter; more for the pan
12 oz. bittersweet chocolate, chopped
3 large eggs, at room temperature
3/4 cup sugar 2 tsp. vanilla extract 1-1/2 oz. (1/3 cup) all-purpose flour 1/4 tsp. baking powder 1/4 tsp. salt 4 oz. (1 cup) chopped toasted pecans In a double boiler over simmering water, melt the butter and chocolate. Stir to combine; let cool. In an electric mixer with the whisk attachment, beat the eggs and sugar on medium high to a ribbon consistency, 3 to 4 min. Take the bowl off the mixer. Add the cooled chocolate mixture and the vanilla; stir to combine. Sift the flour, baking powder, and salt together. Stir the flour mixture and the nuts into the batter; let the batter rest for 5 min. Spoon the batter into a pastry bag fitted with a #4 tip (or into a heavy-duty zip-top bag with one bottom corner snipped to create a 2/3-inch diagonal opening). For each cookie, pipe 1 Tbs. batter onto the lined baking sheet. While you pipe the second tray, bake the first until the cookies are puffed and cracked and the tops barely spring back when pressed, 8 to 10 min. The cracks should be moist but not wet. Cool the cookies on a wire rack.

  • 2 cups sugar
  • 1/2 cup milk
  • 1 tsp vanilla
  • 5 cups quick cooking oats, divided
  • 1/4 tsp butter
  • 3 tbsp cocoa
  • 1/2 cup crunchy peanut butter
Mix sugar, butter, milk and cocoa. Bring to rolling boil and cook 1 minute. Remove from heat and add remaining ingredients. (Add 3 cups oats, then gradually add more till consistency is reached.) Drop quickly by teaspoons onto waxed paper. Chill. var s0 = 'Make-Stuff

All good cookies need ingredients. This may require you to go outside in order to buy them. Cookies make ideal food for programmers, as they are full of unhealthy things like butter, sugar and chocolate. Note the ordering of the ingredients, as this will become important later on.
Preheat oven
Unlike computers, when you press the buttons on an oven, it may take a few minutes for it to actually do what you've told it to. This is commonly referred to as "preheating" and may take a bit longer than an AMD Athlon without a heatsink. If something interrupts this process, then you're a bit shafted, as the name "cookie" implies that it must be cooked.
Combine ingredients
I cheat and use a bread maker to mix it all up within 6 minutes :) The ingredients are no good on their own. We have to mix them up first. This is essential to ensure that one of the cookies doesn't look like a fried egg when it comes out of the oven. Try mixing everything up until you achieve a nice, consistent dough, but leave the egg and chocolate chips until last. Try not to eat too many, they'll be better in the cookies, trust me.
