The third graders were introduced to cooking in the colonial American times. The children got the chance to bake Johnny Cakes and cookies from Early New England. Both were widely popular! During colonial times, Johnny cakes were likely to appear at any meal. Many think that the original name was "Journey Cakes", because they were so often taken along on a journey, since they could be stuffed into a traveler's pockets. Try them hot or cold, with butter and syrup.
Johnny Cakes
1 cup yellow cornmeal
1/2 teaspoon salt
1 cup boiling water
1/2 cup milk
Mix the cornmeal and salt. Add the boiling water, stirring until smooth. Add the milk. Stir well. Grease a heavy, 12-inch frying pan. Set over medium-low heat. Drop teaspoons of the batter onto the pan. Cook until golden, about five minutes. Turn the cakes carefully with a metal spatula. Cook the other side five minutes. Serve the first cakes hot with butter and maple syrup with you cook the rest of the batter. Makes 12-15 cakes.
Cookies from Early New England
1 cup brown sugar
1/2 cup shortening (margarine)
1 egg
1 1/2 cups flour
1/2 tsp. baking soda

The word mocha, which we use to mean a chocolate-coffee combination, comes from the name of a port in Yemen where coffee trees were first cultivated. Here powdered cocoa provides the chocolate flavor and instant espresso powder the coffee.

Cookies, Making Sliced
For the Cookies: 3/4 cup butter or margarine , softened 1/3 cup packed brown sugar 1/3 cup unsweetened cocoa powder 1 teaspoon instant espresso coffee powder 1 teaspoon vanilla 1/8 teaspoon salt 1 1/2 cups all-purpose flour For the Frosting: 3 tablespoons butter or margarine 2 1/4 cups sifted powdered sugar 1 teaspoon vanilla 1 to 2 tablespoons milk FOR THE COOKIES: In a large mixing bowl beat butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, cocoa powder, espresso powder, vanilla, and salt; beat till combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Shape dough into one 10-inch roll. Wrap in waxed paper or plastic wrap. Chill dough for 2 hours, or till firm. Cut dough into 1/4-inch-thick slices. Place about 2 inches apart on lightly greased cookie sheets. Bake in a preheated 375 degrees F oven for 8 to 10 minutes, or till edges are firm and bottoms are lightly browned. Remove cookies and cool on a rack.

2 cups sugar
1/2 cup whole milk
3 tablespoons unsweetened cocoa powder 1/4 cup unsalted butter 3 cups rolled oats 1 cup flaked coconut 1 teaspoon vanilla extract 1 cup mini marshmallows In a pan, mix the sugar, milk, cocoa and butter together. Have an adult help bring this to a boil on the stove. Boil for just under 2 minutes and then remove from heat. Put the mix into a large bowl. Now stir in oats, coconut, vanilla, and marshmallows. Stir well.

Use your heart-shaped cookie cutter to make Shamrock Cookies for St. Patrick's Day. Here's how: Time needed from start to finish, including time to put icing on the cookies, 2 to 2.5 hours.

  • 1/2 cup shortening
  • 1/2 cup butter or margarine
  • 2 cups sugar
  • 3 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 5 cups flour
Cream shortening and sugar together. Beat in eggs. Stir in milk, vanilla and salt. Mix in flour. Work the dough with your hands for a minute before rolling out. Roll out the dough to 1/8 inch thick. Use flour as needed to roll out the cookies. For each shamrock, you will need 3 heart-shaped cookies. Place one heart on an ungreased cookie sheet, then put one heart on each side at a 90-degree angle so the tips at the bottom are overlapping. Gently press the cookies together where they overlap. Take a lump of dough the size of a small walnut. Roll into a rope. Press one inch of the rope onto the bottom of the shamrock. Shape the remaining rope into a stem and flatten gently. (Four or five shamrocks will fit on each cookie sheet.) Bake in a 350 degree oven for 12 minutes, or until golden brown. Immediately remove the cookies from the cookie sheet and allow to cool.

Five Secrets to Making Better Cookies

  • Make sure your cookie sheets aren't too thin. The heavier your cookie sheet, the less likely your cookies are to burn. If you can't afford heavy-duty cookie sheets, you can cover your thin ones with layers of aluminum foil.
  • Experiment with the temperature of your oven. My oven is always hotter than what I set it for. I set my oven 25 degrees cooler than what a recipe calls for.
  • Always place your cookie dough on cold cookie sheets. If you don't let the cookie sheets cool, your cookie dough will spread too much from the heat of the cookie sheets.
  • Don't bake the cookies for too long. They should be light brown around the edges. Keep in mind that the cookies will continue to cook from the heat of the cookie sheet after you remove them from the oven. I always let my cookies bake too long because I didn't think they were done yet. Your cookies should look a little underdone when they come out of the oven.
  • Cool the cookies on the cookie sheet until you can lift them with a spatula without breaking them. Cool them completely on wire racks, if you have some, otherwise you can cool them on paper towels or waxed paper.

2 c. White Sugar
2 c. Brown Sugar
4 Eggs

Nuts, optional Directions: Cream together butter, white sugar, and brown sugar. Beat in eggs and vanilla. Set aside. Mix together flour, baking powder, baking soda. Fold this into butter mixture. Add to this the oatmeal, candy bars, and nuts (if using nuts). Make large cookies and bake in a preheated 375° oven for 8-10 minutes (note: it is best to underbake a little). Also, you can use 1/2 butter/1/2 margarine. Makes 4 doz. large cookies.
