"Now what are you doing?" Dad asks with shaving cream sliding down the right side of his face. So I burnt the toast. Anybody can do that, but then again my daughter says anybody should be able to make toast without burning it. Once it starts to smoke I guess it should be a sign to pop it out. My sister and I flipped a coin to see who would be in charge of the various holiday dinners. I'm pretty sure she rigged it because she was really careful which side of the coin was up whenever she flipped it. She won so she picked Thanksgiving. Easy for her. How hard can it be to cook a turkey?

Cranberry Sauce with Walnuts

Holiday tradition: Christmas
This recipe serves 6 and takes about 15 minutes to prepare. Ingredients: 2 cups cranberries 1/2 cup apple juice 1/4 cup orange juice 1/2 cup sugar 1 teaspoon grated orange rind 1/2 cup walnuts, chopped A few large pieces of walnut for garnish (optional) Instructions: Combine apple juice, orange juice, and sugar. Stir until sugar begins to dissolve. Add cranberries. Simmer until cranberries pop (about 5 minutes). Remove from heat and stir in rind and chopped walnuts. Cool to room temperature and then chill. Garnish with walnut pieces if desired.

The malls are bedecked with tacky decorations, Christmas carols are playing everywhere, the neighbors already have their Christmas lights plugged in, and everyone is exchanging Christmas gift lists. It is one of my favorite times of the year, and the time for my favorite holiday tradition...Christmas cookies. Every year we make thousands of Christmas cookies. Literally. I have the photos to prove it. And the frosting stained cramped hands every year to boot!

Christmas cooking is an important part of the celebration. In the old villages kichen table was always the center of the houses, which was covered and decorated only for holidays. The Christmas table-cloth had a magic meaning of power: health and abundance. People put straw under the table remembering to the manger in Betlehem. Main dishes were: turkey and brioche with walnut and poppy-seed, which is called 'beigli.' Almost all Christmas food had magic meaning: poppy-seed and pear brought abundance, honey made life sweet, galic brought health, apple meant beauty and love.
Another common dish of today's Christmas-dinner is fried fish, which is a tradition mostly in towns. The scale of fish means money, wealth.
The leftover morsels from Christmas table were kept in the next 12 days,then were spread over the fields believing in good harvest in the next year. In some places they were burnt and the ash and smoke was used to cure sick children and animals.
Most of these traditions originate in the pre-Christian history, since Christmas is about the shortest day of the year, which was the end of the year for long. These traditions include superstitious predictions for future health, wealth, harvest and family life.
Ginger-bread has been an important part of Christmas baking usually made weeks before the holiday. Gingerbread figurines are used to decorate house or the tree.

FRESHLY SALTED SALMON
Preparation time: about 25 minutes
Salting time: 1-2 days
Not suitable for freezing
Large piece of salmon, about 41/2 lb. (2 kg)
2 tablespoons coarse salt
1-2 tablespoons sugar
1 tablespoon roughly-ground white pepper
plenty of fresh dill
1. Fillet the salmon unless bought already filleted. Do not, however, remove the skin.
2. Wipe the fillets with paper towels without rinsing.
3. Sprinkle the bottom of a suitable sized dish with salt and place one of the fillets, skinside down, on the salt. Spread the seasoning over both the fillets, placing the other fillet, skinside up, on top. Sprinkle the rest of the salt and the dill over the fish. Cover the dish tightly with aluminium foil. Put a small weight on top and store in a cool place. 4. Scrape off all the seasoning and cut the fillets down to the skin into thin, oblique slices before serving.
