Chocolate Mousse With Crunchy Feuilletine Ingredients Butter, dark chocolate, white sugar, eggs, flour, Praline paste, milk chocolate, crunchy almonds, milk, brown sugar, gelatine, brown rum, whipped cream, vanilla sugar and vanilla bean Instructions 1. Sacher Sponge: Place 360g of butter, 360g of dark chocolate and 180g of sugar into a bowl and stir until creamy. Add 330g of egg yolks and stir. Combine mix with 510g of egg white and 420g of sugar. Add flour and mix before placing into 56 by 36cm frame and bake for 60 minutes at 180C. Bake another five minutes at 200C. 2. Feuilletine: Combine 350g of Praline paste, 350g of milk chocolate and 250g of crunchy almonds and mix. 3. Equatorial Mousse: Place 250g of milk with 100g of brown sugar and bring to a boil. Add 9g of gelatin. Put 400g of milk chocolate into a mixer and finely grind. Add this to 10g of brown rum and combine into mixture. Add 375g of whipped cream when batch reaches 30C. 4. Ivory Mousse: Place 500g of milk with 20g of vanilla sugar and one vanilla bean. Bring to a boil before adding 18g of gelatin. Put 800g of white chocolate into a mixer and finely grind. Add this to the mixture and allow it to reach 30C before adding 750g of whipped cream. 5. Finale: Place Sacher sponge into a frame and spread the Feuilletine on top. Let dry before pouring the mousse. Cool in deep freezer. Sprinkle with chocolate for decoration. - KIM HEE-SUN

  • Combine chocolate, sugar, coffee, cinnamon, salt and water in medium saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Heat to boiling; reduce heat and simmer uncovered, stirring constantly for 4 minutes.

    The Calypso Alphabet by John Agard read aloud kindergarten, readability grade 1 John Agard takes readers on a wonderful Caribbean journey through the alphabet. Each letter of the alphabet is paired up with something you would find or hear on the Caribbean island including idioms and food. John Agard's rhythmic poetry and Jennifer Bent's bright illustrations make readers feel like they actually are visiting the Caribbean (or at least want to vacation there soon!). "r for roti. Eat it like bread, flatter than a bake." Make some West Indian Roti: (makes 5 or 6) What you need:
    • 2 cups of all-purpose flour
    • 1tsp. baking powder
    • 1/2 tsp. salt
    • 3/4 cup cold water
    • corn oil or melted butter as needed (melted butter tastes better)
    What to do: Mix dry ingredients in a large bowl. Continue to mix while adding water, until you get a stiff dough. Put dough in a greased bowl, cover and let rest for about 20 minutes.
    Form dough into 5 or 6 balls and flatten each one with a rolling pin. Spread oil or melted butter on top of each one and then fold each one back up into a ball by bringing the sides into the center. Place the balls back into the oiled bowl and let rest for another 10-15 minutes. Roll each ball back into a very thin circle and brush both sides with more oil or melted butter. Cook each one on a hot griddle for about 6-7 minutes, flipping it frequently. When removing the roti from the griddle, clap it between your hands two or three times or hit it with a wooden mallet several times. Wrap the cooked roti in a clean kitchen towel to keep them warm.
