  • Preheat oven to 300 degrees.
  • Coat bottom of 9-inch springform pan with cooking spray and set aside.
  • Combine 1/2 cup granulated sugar, 1/2 cup brown sugar, water, and espresso in a large saucepan.
  • Stir well and bring to a boil, then remove from saucepan.
  • Add cocoa, salt, and chocolates, stirring with a whisk until chocolate melts.
  • Stir in flour.
  • Cool to room temperature. Set aside.
  • Beat egg whites and cream of tartar at high speed of a mixer until foamy.
  • Add 1/3 cup granulated sugar, 1 tablespoon at a time, beating until stiff peaks form.

    This is a very moist and delicious chocolate cake. The "secret ingredient" of beets is what makes this cake so moist. 1 can (15 oz.) whole beets, drained (save juice)
    1 1/4 cups granulated sugar
    1 cup oil
    1/2 cup juice from beets
    3 eggs
    1 teaspoon vanilla
    1/4 teaspoon salt
    1 1/2 teaspoon baking soda 1 3/4 cups all-purpose flour 3 squares (1 oz. each) unsweetened chocolate, melted Sift together salt, baking soda, and flour. Set aside. Place beets in blender jar and puree. Add sugar, oil, and beet juice to beets and blend. Add eggs and vanilla. Blend well. Pour the beet mixture into a mixing bowl and add the dry ingredients. Mix well on medium speed for approximately one minute. Stir in melted chocolate. Pour batter into two greased and floured 8- or 9-inch round cake pans. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted comes out clean. Let cool. Frost with your favorite chocolate frosting and decorate top with chocolate curls if desired. To make chocolate curls: Melt semi-sweet chocolate chips or semi-sweet baking squares in the microwave. Invert a baking sheet and spread the chocolate in a thin layer over the sheet. Let set in refrigerator until chocolate is set but not hard. Take a spatula and scrape the chocolate from the pan to create a curl. The curls will be as wide as the spatula used. If the chocolate breaks let it soften at room temperature. If it is too soft, return to the refrigerator for a few more minutes. When you have the right consistency you will be able to create beautiful chocolate curls. Place a pile of curls on the cake and lightly dust with powdered sugar.

    is BellaOnline's Home Cooking Host Chocolate Easter Lollipops Molding your own chocolate Easter lollipops is an easy way to add your own personal, creative touch to your Springtime celebration. It's also a fun family project. Purchase the plastic molds, chocolate, lollipop sticks and clear lollipop bags in craft and kitchen shops, locally or online. Chocolate melts are available in milk chocolate, dark semi-sweet chocolate, white chocolate and in Easter colors like lavender, pink, yellow and other pastels. Making lollipops can be as simple as pouring your favorite color of chocolate into a mold, adding a lollipop stick and letting it set or become a candy artist and use different chocolate colors to "paint" the raised designs in a mold for contrasting bows, hats, flowers, and other details. Melt the chocolate in a microwave oven or in a double boiler. To melt in a microwave oven, place the chocolate melts, no more than about 6 or 8 ounces at one time in a microwave safe container. A pyrex measuring cup works well for this. You can also buy plastic squeeze bottles for chocolate melting, wherever candy making supplies are sold. Microwave no longer than a minute to start. Stop and stir. Return to the microwave for 15 second intervals just until melted. Be careful not to overheat and scorch chocolate. Only a very small amount of chocolate colors are usually needed to "paint" contrasting areas of a mold. I use small pyrex dessert cups to melt those colors. Instead of buying many colors, you can also just buy white candy melts and easily tint them any color of the rainbow with special oil-based tints made by Wilton. Do not use regular food coloring to tint chocolate.

    Getting Started For smooth, free-flowing chocolate, use a parchment decorating bag. Because they do not require the insertion of a metal decorating tip, these disposable bags are clog-resistant. (You can find them at cake decorating supply shops and gourmet kitchenware stores.)
    Melt about 1 cup chopped chocolate (or chips) in top of a double boiler. Fill pastry bag 1/3 full and then, to keep remainder of chocolate fluid, remove pan from heat but keep top over hot water. If needed to complete your design, melt more chocolate, about 1 cup at a time.

    CHOCOLATE
    Chocolate: 1 square baking chocolate = 1 oz Substitute: 1 square = 4 TB cocoa and 1/2 TB fat 1 pound grated chocolate = about 3 1/2 cups White chocolate originates from the cocoa (cacao) plant, but it is not 'chocolate.' According to the FDA, to be called 'chocolate' a product must contain chocolate liquor, which is what gives it the biter intense chocolate flavor (and color) to dark and milk chocolates. White chocolate contains cocoa butter, milk solids, sugar, lecithin and flavorings (usually including vanilla). Cocoa butter is the fat from cocoa beans, extracted from the cocoa beans during the process of making chocolate and cocoa powder. Cocoa butter has very little 'chocolate' flavor. Cocoa butter is one of the ingredients used to make real chocolate, it is gives chocolate the ability to remain solid at room temperature, yet melt easily in the mouth. Cocoa butter is one of the most stable fats known, containing natural antioxidants that prevent rancidity and give it a storage life of 2 to 5 years. It is used for its smooth texture in foods (including chocolate) and in cosmetics and soaps.
