Tips on Cooking With Cheese
  • Cook cheese as briefly and gently as possible, or else incorporate it into a stable base such as a sauce.
  • Combining cheese with other ingredients tends to mellow the flavor, so use flavorful cheeses in cooking, even if they're a little stronger than what you would munch on.
  • The more aged the cheese the grainier the melting texture; the younger, the creamier.
  • Cheese is easier to grate, crumble and slice when refrigerated; if you want to mash or spread it, bring it to room temperature.
  • Cooking with cheese is a great way to enjoy some of your favorite cheese without getting a lot of fat and calories; remember that fat in cheese is measured in dry matter, so as a general rule a high-moisture cheese such as Brie is not as high in fat as the percentage indicated; while drier cheeses, such as aged cheddar, are higher, but their more intense flavor means you can use less.

(Peanut Butter Stuffed Wheat Ball) 1 can chick peas
½ cup Cream of Wheat or farina
2 cups fine bulghour
1 cup water
salt, pepper to taste Filling:
6 med. onions
1/3 cup water
1 cup chopped parsley
1 tbsp. crushed basil 1 lb. peanut butter ½ can taheen Kufta shell: Blend chick peas in blender or put through the fine blade of a meat grinder. Put chick peas, Cream of Wheat or farina and bulghour, salt and pepper into a bowl, add the water and set aside for 30 minutes. Chop onions. Put in a two quart saucepan, add 1/3 water and cook on a medium flame until onions are limp but not browned. Strain onions and set aside to cool. Reserve water for the kufta mixture. Add parsley, basil, peanut butter and taheen to cooled onions. Mix and fill kufta shells as follows: Knead the kufta mixture. Wet your hands from time to time as you knead the mixture. As you knead you will see the mixture will hold together and feel firm. Continue kneading for 12 to 15 minutes.

    • 1 tsp. salt
    Preparation -
    Beat cream cheese until smooth. Stir in 1 cup pecans and the other ingredients. Shape into a ball. Roll in the remaining 1 cup of pecans.     Since Cheese is a produce obtained by the enzymatic ripening of milk, it is also one of the easiest food substances to digest. You will agree that it is just what growing children need, specially the ones who never seem to want those necessary cups of milk.
    Cooking of Cheese
    Cheese requires gentle handling. It is a delicate flavoursome substance that must not be overcooked. The flavour of cheese is exclusive. It is as easy to enhance as it is to destroy. Always use the full quantity of cheese mentioned in a recipe. Cheese, especially in Indian recipes requires a light masala base. When putting cheese in curries, lessen the ginger and garlic, strong flavours that interfere with the cheese taste. Strong heat isn't good for cheese - in baking, grilling or pot cooking. In frying, since the cheese is normally covered or coated it can withstand a high fire without spoiling. When a recipe calls for sliced cheese, thin slices are advised because they melt more easily. Sliced cheese is considered cooked as soon as melts. In its grated form cheese can melt, bubble and brown without toughening. Broadly speaking you are safe in mixing cheese with most firm vegetables. Of the soft ones aubergines suit best. Cheese adds flavour to lentils and pulses. Eggs and cheese are the traditional twosome. The Indian equivalent of adding cheese to pastry is to add it to parathas - in the stuffing or in the dough. When baking always preheat the oven to temperature specified.

    Macaroni and Cheese
    A few days ago, my husband surprised me with a new cookbook. Now, this was no ordinary cookbook. This was a collector's item. A hardbound Better Homes and Gardens Cooking with Cheese circa 1966. He found it in some second-hand bookstore and bought it for a song. I guess its original owner wasn't into cooking. How much? PHP120.00 (a little over US$2.00). This was a great find. Yep, recipes from an era when there were no microwaves and frozen TV dinners. Good old homecooking. Dips, fondues, pasta, salads... It even has a 5-page cheese guidefrom ordinary processed cheese to real gourmet cheeses, all with detailed photos. You know, the kind that costs a fortune in this country. After scanning through the pages, I decided that the first thing I wanted to try was the Classic Macaroni and Cheese recipe. In the Philippines, macaroni and cheese means just that. Plain macaroni and cheese sauce. The same the you get from those ready-to-cook pasta with dehydrated sauce in pouches. This 1966 recipe has whole slices of tomatoes, milk and cheese. The works. When my husband saw me pouring over the recipe and listing down the ingredients, he said, "No meat?" Urgh! Why couldn't he eat vegetarian pasta? He always has to have his meat. It took me months to get him to appreciate pasta with seafood. Now he enjoys all of them. I guess it'll take longer to get him to eat vegetarian pasta with zero-zero meat. So, while classic macaroni and cheese recipe is meatless, I had to improvise a bit to avoid grumbling from certain quarters (the kids would have loved the pasta even without the meat). I used processed cheese and omitted the milk. When we finally sat down to dinner, he said he couldn't find the beef. I gave him a real mean look and he made no more comments after that. He had two helpings of pasta. I wondered what he was complaining about in the first place.

    Salami and Cheese Fettucine
    A variation of the classic Spaghetti a la Carbonara , this pasta dish uses fettuccine noodles and bits of cooked salami. There are several varieties of salami available in deli shops as well as in the frozen section of most supermarkets. I personally prefer the dried varietythe one you need to ask the grocer to slice for you. In some supermarkets though, you can buy them pre-sliced in styro trays. Dried salami is the kind used as pizza topping. Then, there is the frozen varietyotherwise known as sandwich salami. The second kind is lots cheaper than the first kind. But, dried salami is spicier and richer in taste. Your choice, really. I have used both in cooking pasta dishes. Ingredients : 250 g. of fettuccine
    150 g. of salami, sliced into 1/4" thickness
    4 tbsp. of butter
    1 c. of cream or full cream milk
    salt and pepper to taste
    1/2 c. of grated cheese food or processed cheese
    1/4 c. of grated parmesan or edam cheese How to : Cook the fettuccine according to package directions. Drain but do not rinse in cold water. Transfer to a serving bowl and toss with 2 tbsp. of butter. Keep warm.

    BY HEATHER BROOKS This month will feature recipes using cheese. Natural cheeses are made from cows, sheeps or goats milk or cream that has been solidified by curdling and the liquid whey removed. Some cheeses are then aged or ripened, such as Cheddar. Cheeses that are not aged, such as cottage or cream cheese, are called fresh or unripened. They are more perishable because they have a higher water content than hard cheeses. Cheese is a very versatile food which can be used in appetizers, sandwiches, salads, sauces, soups, pastas and desserts and of course, enjoyed just by itself. OH WHERE - OH WHERE- DO I FIND REAL CHEESE? (Sung to the tune of: "Oh where, oh where has my little dog gone....") I do realise that trying to score some real, honest to goodness cheese is sometimes a difficult thing in Japan (especially if you live out in the "inaka") but it is still possible to make do with the processed cheeses available in most local supermarkets. You may be limited to the tiny plastic 120g containers of grated mixed NACHURARU CHEEZU labelled for pizza or cooking, but it is actually not too bad. Larger supermarkets usually carry bigger packages which are much cheaper, and they keep well in the fridge, for two months or more. "Top Value" brand costs about Y298 for 300g, and only Y498 for 500g.
