  • 1 lb frozen shrimp
  • Lg jar cocktail sauce
  • Assortment of crackers
Spread cream cheese into a low mound in the center of a plate. Mix together shrimp and cocktail sauce. Pour mixture over the cream cheese. Spread crackers around the edge of the plate, or on a separate platter. Provide your guests with small knives to scoop with.

A few years ago this wonderful way of outdoor cooking had almost died out, but thanks to a few devotees who keep it alive, it now flourishes.
Why is it such a great way of cooking? Because you can make anything in a dutch! Scrumptious roast meats, delightful vegetarian dishes, delectable hors d'oeuvre, aromatic breads and sinful deserts.
Dutch ovens are perfect for any type of outdoor activity. But you don't have to go on an outdoor trip to enjoy dutch oven cooking. You can cook right in your own backyard. Instead of barbecuing, do it in a dutch! Fire up the briquettes and start cooking away. Your guests will beg to be invited back Each year for the last 15 years, we've been holding a dutch oven cook-off. It's on the last day of a dutch oven class that we teach, and everyone cooks up their best dish. We'd like to share with you a few of the winning recipes. Cooking With Yogurt Cheese How to make Yogurt Cheese
Simply place the filter on the rim of a quart size yogurt container or bowl. Pour the yogurt into the filter. Allow 1 cup of yogurt for every 1/3 cup of yogurt cheese. Place in the refrigerator and allow to drain. Drain for 3 to 12 hours depending on the desired consistency. The longer it drains, the firmer the yogurt cheese will be. Draining overnight will give you a soft cream cheese-like consistency. Yogurt cheese should be stored in the refrigerator and will keep for about a week. Plain yogurt is called for by most recipes but flavored yogurts can be used as long as it contains no fruit or gelatin. Stonyfield Farm yogurts contain no gelatin.
Never put yogurt cheese in the food processor and avoid vigorous mixing. For dips and spreads combine ingredients with a spoon or fork. A simple glance at a cheese won't help. Nor will taking a whiff. You must taste it. Don't be afraid to ask retailers for a sample. They're usually ecstatic when a customer wants to learn more. But if you're stymied about what to do with the cheese once it's in your hands, here are a few hints and recipes with cheese from Laura Werlin, author of The New American Cheese Find what you like
  • First, tell the retailer what style of cheese you like. Then ask for one or two recommendations Try several cheeses in the same category. Don't try a blue cheese and then a fresh goat cheese. Instead, go from mild to strong, soft to hard, within the same category of cheeses.
  • A cheese should always be at room temperature before sampling. A cold cheese has muted flavors and aromas and cannot be appreciated at its full value.
  • If the cheese is not at room temperature, take a small piece and rub it between your thumb and index finger. Then smell it. By rubbing it, you're warming it up and you're also helping to release some of its aromas, which will in turn further your evaluation of the cheese. The aroma is just as important as the taste, and this is the simplest way to coax out this essential component in the cheese. Also, by rubbing it between your fingers you will begin to get a visceral understanding of the differences between semi-soft, semi-hard, and hard cheeses. There's nothing like touching a cheese to understand its moisture or dryness.

    Cheese has been an important food for centuries and is still widely used in various parts of the world. Many varieties have been developed, each with its own special flavor. The wide range in price, excellent food value and good keeping quality make it easy to use cheese often in planning nutritious meals.
    Kinds of Cheese
    All cheese is made from milk. Most is made from cow's milk, but some varieties are made from the milk of sheep or goats. Cheese making starts with the coagulation of the milk protein to form the curd. This is then separated from the liquid whey by heating, stirring and pressing. Next it is salted and cured or ripened. The specific method used gives a particular cheese its appearance, consistency, texture and flavor. More than 2,000 varieties of cheese have been defined and classified by several methods.     Soft cheeses should be eaten soon after purchasing. As a general rule, the harder the cheese, the longer it will remain fresh. But remember, natural cheese will continue to ripen, no matter how carefully it is stored. Hard cheeses will generally keep for several months, whereas softer cheeses will keep from one to three weeks after opening, if stored in an airtight container. In addition, large pieces of cheese tend to keep longer than shredded cheese. Process cheese slices are best if used within six months when stored in the original package at a constant 32 °F. Opened packages rewrapped tightly and stored between 30 °F and 40 °F are best if used within three to four weeks. Frozen packages opened and rewrapped tightly, and stored at °F or below, are best if used within six to eight weeks.
