"If the words "buttery" and "crunchy" conjure up positive food images for you, then this recipe is a can't-miss. A pastry dough rather than a pizza dough, a galette is a thin, free-form pastry that has plenty of butter and does not need to rise. This dough definitely makes for a rich dish, but it also creates a delicate, flaky crust for the cheese and vegetables. You might not know it, but there's a cheese revolution going on in this country. Ten years ago (according to Laura Werlin, author of The New American Cheese), there were only a handful of specialty cheesemakers in this country; today there are over 200. At Fine Cooking, we've been lucky enough to witness this revolution first hand. On our travels often in search of artisans to feature on our back cover we get a chance to meet the hard-working folks (and their cows, sheep, and goats) responsible for this explosion. These handmade cheeses, with their incredible flavors and textures, have turned us all into cheese freaks. So we thought we'd keep you posted on our favorite finds by highlighting a "cheese of the month." And by the way, our passion for cheese doesn't stop with American artisans. A first-course dish, this strudel got the highest possible rating for taste in our Test Kitchens.
1 cup diced dried figs (about 10 figs
1/2 cup raisins
1/2 cup apricot nectar 1/3 cup honey Butter-flavored cooking spray 2 cups coarsely chopped sweet onion 2 tablespoons balsamic vinegar 4 ounces crumbled blue cheese 8 sheets frozen phyllo dough, thawed 2 teaspoons powdered sugar Preheat oven to 350 degrees F. Combine first 4 ingredients in a small saucepan. Bring to a boil, and cook 5 minutes. Remove from heat; cover and let stand 30 minutes. Coat a medium nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and vinegar; cook 20 minutes or until deep golden, stirring frequently. Remove from heat; stir in fig mixture and cheese. Set aside. Place 1 phyllo sheet on work surface (cover remaining dough to keep from drying); lightly coat with cooking spray. Working with 1 phyllo sheet at a time, coat remaining 7 phyllo sheets with cooking spray, placing one on top of the other. Place a sheet of plastic wrap over phyllo, pressing gently to seal sheets together; discard plastic wrap. Spoon onion mixture along 1 long edge of phyllo, leaving a 2-inch border. Fold over the short edges of phyllo to cover 2 inches of onion mixture on each end.

This recipe has become one of my regular Christmas gifts. My family and friends each get their own small loaf, wrapped and decorated. One year I decided not to bake CCCCCC, and you should have heard the complaints! This recipe will make 2 large loaves or 3-4 small loaves. I usually double (and sometimes triple) the recipe, depending on how many people I'm baking for. Ingredients:
  • 1/4 lb butter (1 cube)
  • 8 oz. cream cheese
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup milk
  • 6 oz. semi-sweet chocolate chips Topping:
    • 1/4 cup sugar
    • 1 tsp cinnamon
    • 1/4 cup pecans

    Mix #1-5 in a large bowl, beat till creamy. Combine #6-8 in a separate bowl and blend slowly into large bowl. Stir in milk and chocolate chips with a large spoon. Grease bread pans and fill with batter, 1/2 to 3/4 full. Combine topping ingredients. Sprinkle over top of each loaf and bake at 350° for 50-55 minutes. Test by sticking a knife into the center of a loaf. If it comes out "clean", it's done!
