Penne with Walnut Pesto
and Goat Cheese
There are countless variations of pesto, but this is one of my favorites. It has a hint of spiciness combined with the richness of the walnuts. Pesto pairs perfectly with goat cheese, resulting in a fantastic pasta dish that is both delicious and comforting.

2 cups fresh basil leaves, washed and drained
1/4 cup walnuts
2 garlic cloves 1/2 teaspoon red pepper flakes pinch of sea salt 1/2 cup extra-virgin olive oil pasta 12 ounces penne 4-5 ounces soft goat cheese, fresh pesto Place the basil, walnuts, garlic, red pepper flakes and salt in a food processor. Pulse several times to get the mixture started. Turn the processor on and add the olive oil in a slow, steady stream. Set aside. pasta Fill a large pot with water, approximately 5-7 quarts. Add two teaspoons of salt and bring the water to a boil. Cook the penne according to the package instructions, until the pasta is al dente. Drain well and place the pasta in a large saute pan. Combine the pasta with the pesto and goat cheese. Toss over low heat until the mixture is warmed through and thoroughly combined, about one minute. * Serves 4 wine suggestion Low tannin, young red such as Bardolino from Veneto, Italy. Unoaked, fruity dry white such as California Sauvignon Blanc. A bit of acidity will deal with the pesto.

Italian Zucchini Lasagna
Lasagna Ingredients
  • 1 lb. lasagna noodles, cooked
    1 16oz can(1 lb.) stewed tomatoes
    3 or 4 lg. zucchini
    grated parmesan cheese
    1/2 lb. mozzarella cheese, shredded
    3/4 C. chopped onion
    4 to 6 cloves garlic, chopped or minced
    1 sm. can tomato paste 1/2 cup sliced mushrooms
    1 lb. lean ground beef
    1/2 tsp. oregano 1/4 tsp. thyme 1/4 cup fresh basil/chopped ground pepper optional: 1/4 cup red wine Cook lasagna noodles according to package directions or until tender but still firm. Drain, keep warm. Meanwhile, to make lasagna sauce, saute ground beef, garlic and onion is a large heavy skillet or cast iron frying pan until beef is done. Add sauce, mushrooms, oregano, thyme, basil, wine or 1/4 cup water, touch of pepper and mix well. Simmer 45 to 50 minutes. To prepare Zucchini for this recipe, cut in half or cook whole in a large covered pot with 1 to 2 inches of water. Boil gently for about 5 minutes, drain and cut lengthwise into 1/4 inch slices. Grease a 9" x 13" or larger, baking pan. Arrange a first layer of noodles so the ends hang over both sides of the pan. These will be folded back-over the top on the final layer. Next, add a layer of the cooked zucchini, a layer of lasagna sauce, a layer of mozzarella cheese. Repeat. For the top layer, fold the ends of the pasta from the first layer over the top and add more sauce. Top with parmesan cheese and cover with foil. Bake at 350 degrees for about 35 to 40 minutes, uncover and bake until brown, approximately 10 minutes. Serve this Italian food with french bread and have additional parmesan cheese at the table.

Cut fillets into serving-size portions. Place fish in a shallow baking dish. Combine dressing, lemon juice and salt. Pour sauce over fish and let stand for 30 minutes turning twice. Remove fish from sauce and place in a well-greased baking dish 12x8x2 inches. Bake in a moderate over, 350 degree for 15 to 20 minutes or until fish flakes easily when tested with a fork. Crush onions. Add cheese and mix thoroughly. Sprinkle onion mixture over fish. Bake 5 more minutes to brown onions.

Peel garlic and slice each clove lengthwise into about 6 ovals. Heat oil in deep, heavy saucepan over medium-low heat. Add garlic ovals and simmer 5 to 7 minutes, being careful not to burn or brown cloves. Remove slices as they float to the surface and are light brown in color. Drain on paper towel. Reserve oil for cheese. Mince garlic and mix with Italian seasoning. Spread half the cheese slices evenly with garlic mixture. Press remaining cheese slices on each of make 15 bars. Dip flour-coated pieces into egg again, then into bread crumbs mixed with parsley. Be sure to cover sides. Reheat oil to medium-high and fry cheese in oil a few pieces at a time until lightly browned (takes about 2 minutes). Drain cheese on paper towels and keep warm until all are fried.     SHRIMP ENCHILADA SOUP
    1 lb. shrimp, peeled and deveined
    3 cans chicken broth
    1 onion, diced
    1 cup salsa
    2-3 cloves garlic, minced
    3 to 4 good sized handfuls of plain tortilla chips
    2 cans diced green chiles
    1 cup sour cream
    1-2 T. butter
    In a large pan, bring broth to a boil. Add tortilla chips and turn off heat. Let stand for 10 minutes. In a skillet over medium high heat, Saute shrimp in butter with garlic and onions until shrimp is pink, around 3 to 4 minutes. Add shrimp mixture to broth. Add green chiles and salsa to broth. Heat thoroughly but do not boil. Stir in sour cream just before serving. Garnish individual bowls with grated cheddar jack cheese, cilantro, and additional tortilla chips.

    2 cups all-purpose flour 1/2 cup packed brown sugar 2 teaspoons baking powder 3/4 teaspoon ground cinnamon 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 of an 8-ounce container cream cheese with strawberries 2 beaten eggs 3/4 cup milk 1/4 cup butter or margarine , melted 1/2 teaspoon vanilla 1 cup fresh or frozen raspberries Powdered sugar (optional) Lightly grease eighteen 2 1/2-inch muffin cups or line with paper baking cups; set aside. In a medium mixing bowl stir together flour, brown sugar, baking powder, cinnamon, baking soda, and salt. Using a pastry blender, cut in cream cheese till the mixture resembles crumbs about the size of a pea. In a small mixing bowl combine eggs, milk, melted butter or margarine, and vanilla. Add all at once to flour mixture. Stir just till moistened. (The batter will be lumpy.) Fold in fresh or frozen raspberries. Spoon into the prepared muffin cups, filling each two-thirds full. Bake in a preheated 400° oven about 20 minutes, or till golden brown. Remove from pans; cool slightly on racks. If desired, sprinkle lightly with powdered sugar.

    MEXICAN POTATO SOUP
    2 cans chicken broth
    2 cans water
    4-5 medium potatoes - cubed
    1 7 oz can whole green chilies- cut into strips
    longhorn cheese - cubed
    cumin, garlic salt, pepper (to taste)
    In dutch oven pour broth and water, add potatoes, green chilie strips and seasonings. Cook until potatoes are just about done, add cubed cheese and continue to cook till the cheese is stringy and potatoes are done. I serve with flour tortillas and sometimes a green salad.

    3 cups medium pasta(I like to use the multicolored spirals)
    1/2 cup celery
    1/2 cup onion
    1 can cheddar cheese soup
    1/2 cup mayo (I use Miracle whip... it gives it that extra little flavor!)
    3/4 cup wine (I use a dry white)
    1 Tbl dill weed
    2 6oz cans tuna packed in water, drained
    1/4 cup pimento
    1/2 cup sliced black olives
    1/2 cup sharp cheddar cheese, shredded French Fried Onions Cook pasta. (of course I'm sure you knew this part! lol) Drain, set aside. Of course there are many variations for Tuna Casserole, including making it a salmon, crab or shrimp casserole. This is one of DH's favorite meals. I serve this with salad, and garlic toast.     REILLY'S TUNA NOODLE CASSEROLE
    3 cups uncooked elbow macaroni or 4 cups uncooked larger noodle (we use bowtie...farfalle)
    Cook the macaroni until done, drain, and set aside.
    one tablespoon butter
    1/4 cup chopped onion
    1/4 cup shredded carrot
    1/4 cup chopped celery
    1/4 cup chopped red pepper
    Saute the onion, carrot, pepper and celery in the butter until onion is translucent and soft.
    In a large bowl, mix the cooked veggies with one can of reduced-fat cheddar cheese soup (11 oz. can). Add one cup of light sour cream and 1/2 cup milk, you can use nonfat milk. Than add 1/2 cup shredded sharp cheddar cheese.
    Stir in the cooked macaroni and GENTLY add two small cans or one large can tuna packed in water, drained.
    Pour into a 1 1/2 quart casserole, sprinkle with another 1/2 cup shredded sharp cheddar and 1/4 cup shredded parmesan or romano cheese. Cover tightly. Here's the fun part...top with 1/2 cup of extra cheddar Goldfish crackers...not the bland ones but the extra cheesy ones..they taste like Cheese Nips. It is a cute tie-in, yes? Get it?
