Cooking With Cheese
  • Cook cheese as briefly and gently as possible, or else incorporate it into a stable base such as a sauce.
  • Combining cheese with other ingredients tends to mellow the flavor, so use flavorful cheeses in cooking, even if they're a little stronger than what you would munch on.
  • The more aged the cheese the grainier the melting texture; the younger, the creamier.
  • Cheese is easier to grate, crumble and slice when refrigerated; if you want to mash or spread it, bring it to room temperature.
  • Cooking with cheese is a great way to enjoy some of your favorite cheese without getting a lot of fat and calories; remember that fat in cheese is measured in dry matter, so as a general rule a high-moisture cheese such as Brie is not as high in fat as the percentage indicated; while drier cheeses, such as aged cheddar, are higher, but their more intense flavor means you can use less.
  • lb. of cheese makes about 2 cups grated.

French Cheese
France produces almost 400 different varieties of cheese, each one is as distinctive as a finger print. This wide selection — more than any other country has to offer — includes cheeses made from cow’s, ewe’s or goat’s milk, or in combination. Each region has its specialty — Normandy, France’s kingdom of milk and cream, is famous for unctuous Camembert and Pont l’Evêque; the Loire Valley and Provence for the tangy goat’s milk cheeses; Alsace for robust Munster; the Alpine region for firmer, subtly-flavored cheeses, such as Reblochon and Beaumont; the Paris area for the world’s most prestigious cheese, Brie — even from the Pyrénées comes Chiberta, firm, slightly nutty- flavored, a specialty of which the hardy Basque people are proud.
Each region’s specialty is made according to tradition which has existed for centuries. The professional cheese- maker learns his craft as painstakingly as an attorney the law. France’s reputation for being a paradise for cheese lovers is well-deserved. Today, Americans are fortunate because they need no longer be on the original spot to relish their favorites — they can readily find them at local cheese retailers. . . almost 100 different varieties. Store such as Whole Foods Markets and Bread and Circus have great selections. You may enter Good Cooking's Cheese Shop courtesy of igourmet and purchase any one of 66 French Cheeses from the French Cheese Selections.

Ahh, the power of Cheese!™
Thanks to The A merican Dairy Association for allowing Good Cooking to reproduce their Cheese appreciation Guide! Limburger Cheese: I ran away from the kitchen every time my mother and father ate it! It was a special treat to them when my grandfather returned from visiting relatives in the Yorkville area of New York City with bricks of the "smelly stuff", as I called it. In fact I didn't like cheese at all, well, except Velveeta! You should see what I eat now, some that put that Limburger smell of my childhood to shame. French and Italian cheeses have long been cherished by the people of those lands and thanks to many factors they are available all over the world these days. In fact most American cheese production copies the methods and techniques of European cheese manufacturing. American cheddar is a good example. Cheddar is a town in England where this firm, yet crumbly, sharp, and slightly salty cheese was born and where its name comes from. Cheddar from all across the United States, whether from Vermont, New York or Oklahoma, derive from this. Blue cheese from Denmark is cloned in Iowa as Maytag Blue. Brie from France is produced in Wisconsin. And so the cheese crumbles across our country. American Dairy Association Here are a few of Good Cooking's favorite American made cheeses.

A Wisconsin Art Form Storing Your Wisconsin Cheese To keep cheese purchases at their peak once you get them home, they must be stored properly. In general, unopened cheese stored in the refrigerator between 34'F and 38'F will retain quality even beyond any freshness date stamped on packages. The key lies in keeping it tightly wrapped or sealed to prevent exposure to air and airborne, natural mold spores. Once you open the manufacturer's packaging, follow these guidelines.
  • Fresh cheeses, such as Cottage, Cream, and Mascarpone, are high in moisture, which makes them more perishable than firmer cheeses. These cheeses should be kept tightly sealed and cold and used within two weeks.
  • Semi-soft, firm, and hard cheeses wrapped tightly and stored in the refrigerator remain fresh for four to eight weeks. Some aged cheese may be held even longer under proper storage conditions.
  • Hard cheeses, such as Parmesan and Asiago, should be stored in grated form in sealed containers in the refrigerator for up to two weeks. Freeze for longer storage and use directly out of the freezer.

29. Potato Cheese Soup
Full recipe using chicken stock; serves six, at Lisa's cooking Cache.
http://www.cookingcache.com/potatocheesesoup2.shtml
POTATO CHEESE SOUP
"A hearty soup with year-round potential. Serve it for lunch or as a light supper, garnished with pumpernickel croutons."
4 tablespoons sweet butter
2 cups finely chopped yellow onions
2 cups peeled and chopped carrots
6 parsley sprigs
5 cups chicken stock
2 large potatoes, about 1-1/2 pounds, peeled and cubed (about 3 to 4 cups)
1 cup chopped fresh dill
salt and freshly ground black pepper, to taste
2 to 3 cups grated good-qualify Cheddar cheese
1. Melt the butter in a soup pot. Add onions and carrots and cook over low heart, covered, until vegetables are tender and lightly colored, about 25 minutes. 2. Add parsley, stock and potatoes, and bring to a boil. Reduce heat, cover, and simmer until potatoes are very tender, about 30 minutes. 3. Add dill, remove soup from the heat, and let it stand, covered, for 5 minutes. 4. Pour soup through a strainer and transfer the solids to the bowl of a food processor fitted with a steel blade, or use a food mill fitted with a medium blade. Add 1 cup of the cooking stock and process until smooth. 5. Return puréed soup to the pot and add additional cooking liquid, about 3 to 4 cups, until the soup reaches the desired consistency.

There's something good about simple, satisfying foods. Here, "In the Kitchen," we celebrate good food! Our real sour cream dip and naturally aged cheese are super for snacking, but why limit your taste buds? Check out the Heluva Good Recipe Box for tasty seasonal recipes for any time of the day. And join us every month, right here, for cooking tips, entertaining, and more. Read on. Celebrate Summer with Dairy - June is Dairy Month! Since 1937, the first year June was recognized as Dairy Month, companies like Heluva Good have taken a moment to recognize our country's dairy farmers and their importance to our economy and our food supply. Heluva Good salutes America's dairy farmers! Dairy foods are an important component in a healthy diet plan because of the natural presence of calcium, which we need for strong bones, muscles, and teeth. While recent research and diet trends may be overwhelming at times, the bottom line fact is that dairy foods should be considered part of a healthy diet and exercise plan. Cheese Naturally aged cheeses, like Heluva Good's, are naturally low in carbohydrates and are nutrient dense because of the natural aging process. You can get the same amount of calcium in 1.5 to 2 ounces of natural cheese as you will from one cup of milk. That is equal to one daily serving of dairy containing up to 300 mg of calcium, depending on the variety of cheese. Cut up two one-inch cubes of natural cheese for a healthy calcium snack with very low carbs. Wow - what a great snack on the go!

Make sure the mixture is evenly distributed. 1 14 oz can sweetened condensed milk Spoon the mixture in 6 to 8 serving dishes, then freeze for 3 hours or until firm. 1/3 cup double strength coffee (sweetened with 4 tablespoons of sugar while hot) allow to cool before using Garnish before serving with a chocolate covered coffee bean and chocolate syrup if desired.
