Beef Casserole Recipe
2 lbs. round steak, cut into 1/2 inch cubes 3 Tbsp. oil 1 lg. onion, chopped 1 clove garlic, minced 3 Tbsp. flour 3 oz. can of mushrooms 1 cup sour cream 8 oz. tomato sauce 1 tsp. salt pepper
In a large saucepan, brown the beef in oil. Add onion and garlic. Cook until the onions are tender. Add flour, stirring until beef cubes are coated. Add the mushrooms with juice, and the celery. In a small bowl, combine the remaining ingredients. Mix well. Pour over meat. Toss well. Remove from heat.

LAMB AND MUTTON
LAMB is the name given to the meat of lambs; mutton, to the meat of sheep. Lamb, coming as it does from the young creature, is immature, and less nutritious than mutton. The flesh of mutton ranks with the flesh of beef in nutritive value and digestibility. The fat of mutton, on account of its larger percentage of stearic acid, is more difficult of digestion than the fat of beef.

The web site reviewed in this article has changed location and name. SOAR is now known as Recipe Source and can be found at http://www.recipesource.com If you're looking for that perfect recipe for strawberry-rhubarb pie or a little-known casserole that's served at your favorite diner, you often need to look no further than SOAR. SOAR stands for "The Searchable Online Archive of Recipes" and is hosted and maintained on a University of California - Berkeley server. The inspiration (and a lot of the work) behind SOAR was supplied by one of UC - Berkeley's students, Jennifer Snider Coopersmith. Many thanks to Jennifer, as what started out as an experiment in bringing recipes on the web to one central location has turned into an archive of almost 70,000 recipes as of March 2000. What makes SOAR such a valuable resource is the plethora of ways that the recipes are organized for visitors. In addition to the search forms which vary from simple keyword searches to more advanced forms that allow a visitor to specify things like case sensitivity and the maximum number of returned recipes recipes are also organized into a large number of different categories. Each category has sub-categories to help direct visitors to the recipes they desire. Once a sub-category has been chosen, the recipes are then split into alphabetized sections containing about 50 recipes each. This is to reduce the download times and improve access. Of course, each visitor also has the option to get a full list of the recipes in a given category. Once a visitor has found a recipe that he or she would like to see, one click on the title reveals the entire recipe. It's that simple.

Spring and summer are times for barbecues and potlucks. It seems like everywhere you look, people bring their favorite casseroles to large gatherings. Casseroles are easy to prepare and do well for large crowds. They come in all different forms from the standard green bean casserole to something as fancy and delicious as crescent chicken casserole. I got together with a few of my friends and discussed our favorite casserole recipes and am passing them on to you here. I will start with the favorite of many the green bean casserole. All you do for this one is take a couple of cans of green beans, a can of cream of mushroom or celery soup, a half of a cup of milk, and some french fried onions. Combine part of the onions with the drained beans, whisk together the soup and milk, and then pour the soup mixture over the beans in a baking dish. This should be baked for about 30 minutes, then topped with some more of the french onions and baked for another 5 to 10 minutes. Green Bean Casserole
