send us a your favorite recipe This is an old family favorite. I love egg noodles and this casserole is full of them ! The whole family will enjoy this recipe. It can be prepared in advanced and keeps well in your freezer for a couple of weeks. What you need:
  • 1 pound of egg noodles cooked according to package directions 2 eight ounce cans of tuna fish 1 cup of mayonnaise 1 large onion, chopped 1 large green pepper, chopped 2 cloves of garlic, finely minced 2 tomatoes, chopped and seeded 1 1/2 - 2 cups of shredded cheddar cheese 3 tablespoons of olive or canola oil Butter for greasing casserole dish
What you do:
  • Preheat your oven to 350 degrees. Boil noodles according to package directions. Place cooked noodles into a bowl and add one tablespoon of butter or margarine and toss noodles. This will prevent your noodles from sticking. Heat frying pan under medium heat for one minute and then add olive or canola oil. Add chopped onion and pepper, tomatoes, and garlic. Cook until the onions appear translucent, about 10 minutes. Salt and pepper to taste.

    Polenta Casserole With Mushrooms, Tomatoes, and Ricotta For 6 servings • 2 teaspoons olive oil, divided • 2 cups chopped onion • 3 cups coarsely chopped cremini mushrooms (about 12 ounces) • 1-1/2 teaspoons salt, divided • 2 garlic cloves, chopped • 1/3 cup dry red wine • 1 tablespoon chopped fresh or 1 teaspoon dried rosemary • 1 tablespoon tomato paste • 1 (14.5-ounce) can diced tomatoes, undrained • 4 cups water • 1 cup instant polenta (such as Contadina) • 1/2 cup (2 ounces) grated fresh Parmesan cheese • 1/4 teaspoon black pepper, divided • 1/2 cup part-skim ricotta cheese • 1-1/2 teaspoons butter, cut into small pieces For smooth preparation, I cut all the vegetables first, then start the polenta. You can make the sauce while the polenta is cooking. 1. Preheat oven to 400 degrees. 2. Heat 1 teaspoon oil in a 10-inch cast-iron skillet over medium-high heat. Add onion; saute 8 minutes. Add mushrooms, 1/2 teaspoon salt, and garlic, and cook 4 minutes, stirring frequently. Stir in wine, rosemary, and tomato paste; reduce heat to medium, and cook 3 minutes.     • 1 can cream of celery soup
    • 1 cup mayonnaise
    • 1 egg - beaten
    • 2 packages frozen chopped broccoli (10 oz)
    • 1 package frozen cauliflower (10 oz)
    • 12 oz. shredded Cheddar cheese
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1/8 tsp paprika
    Preparation -
    Spray a large casserole dish with non-stick spray. In a mixing bowl combine soup, mayonaisse and beaten egg. Place partially thawed broccoli and cauliflower in another large mixing bowl. Stir in soup, mayonnaise and egg mixture. Add 8 oz. cheese and seasonongs and mix well. Pour mixture into prepared casserole dish. Smooth top of casserole using spatula. Bake at 350º for 45 minute. Top with remaining 4 oz. of cheese and bake 5 minutes longer.

    Cheesy Franks-N-Beans Casserole
    Amount Measure Ingredient Preparation Method 9 slices bacon crisp 32 ozs pork and beans 1/4 c brown sugar 2 tbsps Dijon-style mustard 3 tbsps worcestershire sauce 8 frankfurters 8 slices processed American cheese cut in strips Combine Beans, brown sugar, mustard and worcestershire sauce, mix well. Slit franks lengthwise, arrange 4 strips cheese in each. Pour half of bean mixture into 1 1/2 qt. baking dish, arrage 4 franks on top of beans. Place 3 slices bacon between franks. Repeat, arrange remaining 3 slices bacon on top of franks. Bake 30-40 min, or arrange in crockpot and heat on low for 8 hours..
    Beef Nacho Casserole
    Amount Measure Ingredient Preparation Method 1 lb Ground beef 12 oz Chunky salsa (1 jar) 1 c Sweet corn 3/4 c Mircale Whip(R) 1 tb Chili powder 2 c Tortilla chips (crushed) 2 c Colby/Monterey Jack cheese 1. Heat oven to 350øF. Brown meat; drain. Stir in salsa, corn, Miracle Whip(R) and chili powder. 2. Layer 1/2 meat mixture, chips and cheese in 2-quart casserole. Repeat layers. 3. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato, if desired.
