A Brief History of Fudge
Fudge was invented in the United States more than 100 years ago. The exact origin is disputed, but most stories claim that the first batch of fudge resulted from a bungled batch of caramels. One of the first documentations of fudge is found in a letter written by Emelyn Battersby Hartridge, a student at Vassar College in Poughkeepsie, NewYork. She wrote that her schoolmate's cousin made fudge in Baltimore in 1886 and sold it for 40 cents a pound. Miss Hartridge got hold of the fudge recipe, and in 1888, made 30 pounds of this delicious fudge for the Vassar Senior Auction. Word spread of this great confection to other women's colleges. (Wellesley and Smith have their own versions of this fudge recipe.)

Candy Recipes MAMIE EISENHOWER CHOCOLATE FUDGE
4-1/2 c. granulated sugar
2 tbsp. butter
1 can evaporated milk
Pinch of salt
12 oz. semi-sweet chocolate or chocolate bits
12 oz German sweet chocolate
1 pt. marshmallow cream
2 c. nutmeats, chopped
After boiling first ingredients 6 minutes, or soft ball forms, 232 degrees, pour boiling syrup over ingredients in bowl, beat until chocolate melts. Pour into buttered pan. Let stand a few hours before cutting into squares. EASY FUDGE 4 1/2 c. sugar 1 can evaporated milk 1 lg. pkg. semi-sweet chocolate chips 1-1/2 sticks of margarine 1-1/2 tbsp vanilla 1 c. nuts (optional)

1 c Sugar
1/2 c White corn syrup
1/8 ts Salt
1 ts Butter
1 ts Vanilla
1 ts Baking soda
Stir together peanuts, sugar, syrup, and salt. Cook 4 minutes on high. Stirring well, cook another 4 minutes. Add butter and vanilla to peanut mixture; stir well to blend. Cook for about 2 minutes (peanuts will be slightly browned and syrup hot). Add baking soda and gently stir till foamy. Pour onto aluminum foil. Christmas Recipe Molasses-on-Snow Candy
from The Little House in the Big Woods
by Laura Ingalls Wilder Ma was busy all day long, cooking good things for Christmas. One morning she boiled molasses and sugar together until they made a thick syrup, and Pa brought in two pans of clean, white snow from outdoors. Laura and Mary each had a pan, and Pa and Ma showed them how to pour the dark syrup in little streams onto the snow. They made circles, and curlicues, and squiggledy things, and these hardened at once and were candy. Laura and Mary might eat one piece each, but the rest was saved for Christmas Day. LITTLE HOUSE IN THE BIG WOODS For this seasonal specialty, it's helpful to have two peopleone to watch the bubbling molasses while the other readies the pans. Don't be tempted to eat the snow, which may contain pollutants. (Warning: This candy can get VERY HOT and can burn; always cook with a grown up!) For 3/4 pound of candy you will need:
1 cup dark molasses
1 cup brown sugar
4 9-inch pie pans 2-quart saucepan with lip 6-ounce glass a heatproof pitcher fresh snow Fill the pans with fresh snow, then set outside in snow to chill when you start cooking.
