How to Make Your Own Rock Candy
You will need:
  • 1 Glass jar or drinking glass
  • 1 Piece of cotton string
  • 1 Pencil or stick
  • 1 Paper clip
  • 1 Food coloring (optional)
  • 1 c Water
  • 2 c Sugar
  • Additional sugar
Tie a short piece of cotton string to the middle of the pencil or stick. Attach a paper clip to the end of the string for a weight. Moisten the string very lightly, and roll in a bit of sugar (this will "attract" the sugar crystals from the syrup to the string). Place the pencil or stick over the top of the glass or jar with the string hanging down inside. Heat the water to boiling, and dissolve the 2 cups of sugar into it. For the biggest crystals FAST, heat the sugar-water solution a SECOND time, and dissolve as much additional sugar as you can into it. Add a few drops of food coloring to the solution if you want colored candy. Pour the solution into the prepared glass or jar and leave undisturbed for a couple of days. Depending on how much sugar you were able to dissolve into the water, you should start to see crystals growing in a few hours to a few days.

Almond Cream Cheese Candies
You will need:
  • 1 pkg (3 oz) softened cream cheese
  • 1/2 tsp liquid almond flavor
  • 6-7 dozen whole almonds
  • 3 cups powdered sugar
  • Candy paper cups
Mix together cream cheese and almond flavor. Gradually add 2 - 2 1/2 cups powdered sugar. Knead until no longer sticky. Shape into 3/4 inch thick balls. Roll in powdered sugar. Flatten balls by pressing an almond into the center. Set in candy papers. Let dry at room temperature. Store loosely covered in fridge. Makes 6-7 dozen candies. Cream Cheese Mints You will need:
  • 1 pkg (3 oz) softened cream cheese
  • 1/2 tsp liquid peppermint flavor
  • 3 cups powdered sugar
  • Candy paper cups
  • Food coloring (optional)
Mix together cream cheese and peppermint flavor. Gradually add 2 - 2 1/2 cups powdered sugar. Knead until no longer sticky. Divide into portions (one for each color). Knead in food colors of your choice. Shape into 3/4 inch thick balls. Roll in powdered sugar. Flatten balls w/ a fork (or press your thumb into the center).

  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 cup dark corn syrup
  • 1/2 cup half and half
  • 2 - 1 oz. squares unsweetened chocolate
  • 1 tsp. vanilla
  • 1 T. butter
Preparation -
Place sugars, corn syrup, half and half and chocolate in a large saucepan. Bring to a boil over medium high heat until chocolate is melted and sugar is dissolved. Reduce heat to medium and cook, stirring occasionally, until mixture reaches 250° F on a candy thermometer (firm ball stage). Remove from heat. Stir in butter until it melts. Stir in vanilla. Pour into a buttered 8" x 8" x 2" pan. Cool, then cut cut into small squares. Wrap individual pieces in plastic wrap. Store in a cool, dry place. Printer Friendly Version Vanilla Caramels

Learn all the secrets of really GREAT candy making! Learning to read a candy thermometer will keep you from over-cooking your candy
  • Nothing is more important to successful candy making than understanding, and getting the correct thermometer reading
TO DO: The first thing that should be done each day, before you start, is to TEST YOUR THERMOMETER: Immerse the thermometer into cold water. Bring the water to a boil. At what temperature DOES water boil today at your house?
We are taught that water boils at 212 degrees...well...very seldom! At sea level water boils at 212 degrees (on a sunny day.) Water will boil at different temperatures depending on altitude. Most of us don't live at sea level...and it can be cloudy or raining...So we learn to compensate:
If YOUR water boils at 210 degrees, you should ALSO reduce the candy-cooking time by 2 degrees. (Most of the time, water boils here about 208 degrees). HERE'S HOW IT IS: IF you were to cook the candy to the usual - say - 280 degrees ON the thermometer, then it would be 2 degrees overcooked. Since the weather or ground level has caused your thermometer to be 2 degrees off, you would need to cook it only to 278 degrees. Try not to cook candies on a rainy day. The barometric pressure, when the air is heavy- on rainy and cludy days, holds the thermometer down. Candy is done sooner too. "Make candy when the sun shines," ...motto of good candy makers. It is very difficult to make candies that turn out perfect on rainy days...even for an experienced candymaker. I recommend a TAYLOR or WILTON thermometer. They are around $10-15.00. These are encased in metal and the bulb will not accidentely touch the bottom of the pan and give false readings. I also use it to stir with if I am making candy that should be stirred.

Candy can also be a great homemade gift for friends and family. After all, who would not want to receive a box of homemade chocolate truffles in their stocking? Although you can spend a lifetime learning everything there is to know about the confectioners' trade, there are plenty of easy to make recipes that will delight your friends and family. All you need to get started are a few common kitchen items, some simple ingredients, and a modicum of know how. Tools of the Trade

Sugar is the most basic ingredient in candy. Use an unopened package of sugar; this will insure that there has been no contamination from other ingredients commonly found in the kitchen, such as flour or salt. Use unsalted butter; the salt content of salted butter is impossible to ascertain, and it can affect your final product. Never, ever use margarine in a recipe that calls for butter. Margarine has a higher water content than butter, and this will significantly affect the cooking time. Hints and Tips
Dissolve sugar into liquid ingredients over low heat, and then bring to a boil. Either clamp the thermometer to the side of the pan, or periodically place it in the syrup to measure the temperature. In any case, the bulb of the thermometer should not touch the sides or bottom of the pan; touching the bulb to the pan will not give an accurate reading. Always clean the thermometer after each testing, and keep at the ready in a glass of warm water. Cook until the desired temperature is reached, stirring as directed in the recipe.

WARTIME COOKERY
Food shortages in this as in all wars will be due to lack of man power for production, lack of transportation facilities for distribution and reservation of shippable foods for the armed forces. This war is only complicated by multiplication.... the number of places from which food cannot be shipped and the wide scattering of places to which our food supplies must be shipped in order to feed our own and allied military forces. Frozen Coffee Parfait
Makes 6 to 8 servings. We recommend one of the following coffees for this recipe: Yemen Mocha, Mexico Bourbon de Coatepec, or, Java Blawan Washed. In a large bowl, combine the sweetened condensed milk and the coffee with mixer on high whip for three to five minutes and then, by hand, fold in the whipped whipping cream. Make sure the mixture is evenly distributed. 1 14 oz can sweetened condensed milk Spoon the mixture in 6 to 8 serving dishes, then freeze for 3 hours or until firm. 1/3 cup double strength coffee (sweetened with 4 tablespoons of sugar while hot) allow to cool before using Garnish before serving with a chocolate covered coffee bean and chocolate syrup if desired. Return leftovers to the freezer. 1 cup whipped heavy whipping cream
Serves 10 to 12 depending on the thickness of the slices 1 Pillsbury or other Moist Cake mix (the kind with pudding in the mix) Milk Chocolate or German Chocolate Instead of beating only at low to medium speed with the mixer, use low speed to blend the ingredients and then, using high speed, beat the batter for 3 to 5 minutes till it is fairly fluffy.
