If a recipe calls for margarine use it to grease the bottom and sides of the saucepan. Always blend the mixture together thoroughly before placing it into the saucepan. Drop a small amount of candy from a spoon into the cold water. As the drop of candy cools down you should be able to tell if it is thread like or lift it out and look and feel the drop of candy to see if it is hard or soft to the touch.

Sweetheart Fantasy Fudge
3 cups granulated sugar
3/4 cup margarine
2/3 cup evaporated milk (5 1/3 ounce can)
1 cup chopped nuts
1 teaspoon vanilla extract
12 ounces white chocolate or 1 (12 ounce) package
semisweet chocolate pieces
1 (7 ounce) jar Marshmallow Creme
Maraschino cherries Grease a 13 x 9-inch pan. Set aside. Combine sugar, margarine and milk in heavy 2 1/2 quart saucepan; bring to full rolling boil, stirring constantly. Boil 5 minutes over medium heat or until candy thermometer reaches 238 degrees F, stirring constantly to prevent scorching. Remove from heat, then stir in chocolate until melted. Add Marshmallow Creme, nuts and vanilla extract; beat until well blended. Pour into prepared pan. Garnish with maraschino cherries. Cool at room temperature. Cut into squares. Yield: about 3 pounds

High Altitude Candy Cooking
Liquids evaporate more rapidly at high altitudes, so candies and syrups should be cooked for a shorter amount of time. Syrup will become too concentrated, and candy too hard, by the time prescribed sea level temperatures are reached. To prevent excessive evaporation of liquid, decrease the final cooking temperature by 1°F. for each 500 feet in elevation (or 2°F. for each 1000 feet) above sea level. The cold water test is the surest way to determine the correct amount of cooking for candies. Making candy at home can be a fun and even a special event. You can personalize candy, making it special for someone special! In addition, making your own gumdrops, lollipops, fudges, truffles or taffy can lead to tasty candies that taste better than "store bought".
Here are a few home made candy making tips:
Always use the recommended size saucepan. If you use a different sized pan you can negatively affect the quality and cooking time. If a size is not stated, then size is not important.
Never double a candy recipes. When you try this, you change the cooking time specified in the recipe and this could result in a failed batch of candy - and quite the mess not to mention the waste!
A cool, dry day is best for making candy. Heat, humidity and altitude can affect quality. If the best time for you is on a humid day, cook the candy to a temperature a degree or so higher than the recipe specifies.
Always dissolve sugar completely over a low heat to prevent crystallization. In addition, use a heat-safe spatula to scrape down the sides of your pan to get any grains absorbed into the mixture. When the candy reaches the boiling stage, do not stir it until it is cool. Opposite the heating process, you never want to stir the candy during the cooling process.
Always use a reliable candy thermometer, checking your candy thermometer for accuracy. Do this by placing it in water and bring it to boiling. The thermometer should read 212-degrees at the boiling point. To get an accurate reading, be sure the thermometer stands upright in cooking mixture and the bulb does not rest on bottom of pan. Read it at eye level; watch temperature closely. After 200-degrees, temperatures go up very quickly. If the reading is too high or too low, take the difference into account when testing your temperature while making candy.

    In a medium bowl, stir together the flour, baking soda, salt and cinnamon. In a 1 quart glass jar, layer the ingredients in the following order: Flour mixture, walnuts, 1/2 cup of the mini candy coated chocolates, raisins, oats, remaining candies, and brown sugar. Pack down well after each addition and attach a tag with the instructions. Enclose a card with the following instructions: 1) Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets; 2) In a large bowl, cream together 3/4 cup of butter, 1 egg and 3/4 teaspoon of vanilla until light and fluffy. Stir in the contents of the jar until well blended. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets; 3) Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    One more party recipe, also easy to make. Don't forget to get pretty paper cups for these too! Better stock up on those, there are so many similar recipes... 1 can sweetened condensed milk 1/2 lb finely chopped Brazil nuts 2 Tbsp of unsalted butter or tub margarine (you can use only 1 Tbsp and it will still work out) 2 heaping Tbsp of Nestlé Quick or 1 Tbsp of Quick and 1 of Hershey's Cocoa. In a heavy saucepan mix chocolate with condensed milk and nuts and add the margarine. Cook in low heat stirring constantly until you can see the bottom of the pan. Continue to stir for another two minutes. Pour onto a plate and let cool completely before you form the little balls (I usually leave it in the cupboard until next day). Butter your hands slightly to form the little balls. Roll the balls in chocolate powder or jimmies and put them in small paper cups. Maria's Cookbook
