DIETARY CHOICES PLAY AN IMPORTANT ROLE IN REDUCING CANCER RISK
Cancer is not a single disease, but the generic name for more than 100 diseases, all having in common the uncontrolled reproduction of abnormal cells. Although scientists are only now beginning to understand the causes and growth of cancer, there exists a large and growing body of evidence showing that the foods we choose each day play a major part in cancer prevention.
LIFESTYLE CHOICES INFLUENCE CANCER RISK
Scientists have long estimated that a large percentage of our cancer risk is related to our lifestyle choices. The international report on cancer prevention from the American Institute for Cancer Research, Food, Nutrition and the Prevention of Cancer: a global perspective, found that 30% to 40% of all cancers are directly linked to the foods we eat, the exercise we get and how well we watch our weight. And the report estimates that 30% of cancers can be prevented by not using tobacco. What this means is that we have the potential through our daily food and lifestyle choices to make a major impact on the cancer risk we each face in our lives.
The cancer prevention opportunities offered by research and education programs in diet, nutrition and cancer are enormous. It has only been in the last 15 to 20 years that research in diet and cancer has been given more attention and has begun to attract the levels of funding that can bring strong results. Today an increasing understanding of the role of vitamins, minerals, fats, fiber and phytochemicals offers each of us the opportunity to make simple changes for lower cancer risk.

by Avian Joseph PORT OF SPAIN, Feb 24 (IPS) - Catherine Nurse, 48, had her left breast removed late last year. About two months before the operation, she felt two lumps and "prayed it wouldn't be that." A mother of seven, she was still breast feeding her three- year-old son and had been told that women do not get cancer when breast feeding. On the day of the diagnosis, desperate for comfort, she carried her baby to the hospital, fearing the worst. "I sat down holding my child, and when the doctor gave me the bad news, I paused a little bit and said: "Alright, you know best." It is this quiet courage that has sustained Nurse through the trauma of losing one breast and all the side effects associated with chemotherapy, including hair loss. Cancer is the second highest cause of death in several Caribbean islands after heart disease. Breast cancer is on the increase, especially among women of African descent.

Are there any health hazards associated with Chinese food? Of course a lot of Chinese foods are high in fat and cholesterol, but what I am worried about is the cooking methods. Generally, they heat the oil to a very high temperature and then throw in the meat or vegetable and make a big sound, sometimes the food even catches fire. As far as I know, I think oil heated to a high temperature, to the point where it begins to emit smoke, may contain cancer-causing substances. Is that true? I guess I am kind of obsessed about cancer because my grandfather died of stomach cancer two years ago and I was with him for several months before he died. What are the major causes of cancer? How can we avoid them? If we eat some cancer-causing substance, are we more likely to get stomach or intestinal cancer because that's where the food passes through, or are we equally likely to get other cancers? I mean, do a person's digestive organs have a particularly high susceptibility to cancer compared to other parts of the body because they are exposed to the food, which is where almost all the carcinogens come from? A study conducted at Loma Linda University, California, on 100,000 Californian Seventh Day Adventists, with emphasis on diet showed that their cancer rate (all kinds) is half that of the national average. The Australian, June 10, 1975 reported: "According to a survey of 800 Adventists in Sydney, incidence of common malignant diseases such as lung cancer and stomach cancer is only one-third that of the rest of the community. Incidence of abnormal blood pressure and high cholesterol levels was about 10% of that of the rest of the community". Upon investigation, the connection between bad diet and cancer becomes just as obvious as its implication with the other degenerative diseases. The pollution and oxygen deprivation in the fluids of the body which form the environment surrounding the cells of all tissues is directly attributable to bad diet, and the factors causing lipotoxemia have already been fully described. In the cancers common in industrial countries, once again fat appears to be the main villain (see Figs 20.2, 20.3, 20.5), followed by cholesterol and excess protein. Apart from its contribution to lipotoxemia, fat adds further to the cancer risk, as already mentioned, by causing increased production of the growth stimulating hormone, estrogen. As previously explained, red cell aggregation, platelet stickiness and high blood viscosity invariably accompany a diet high in these substances, and are made worse by sugar, alcohol, tea, coffee, salt, and the rest of the tasty junk with which our bodies are assaulted.

Diet*Calc version 1.4.1 is now available (May 2004). A revision history describing changes made for this release is provided in readme.txt Diet*Calc is PC software that can be used to analyze Diet History Questionnaire (DHQ) data (see Steps for Using the DHQ ). Diet*Calc generates nutrient and food group intake estimates for the standard versions of the DHQ distributed by the NCI, as well as modified versions of the DHQ. As the effects of a single type of food on the body are influenced by the combination of other foods in the diet, it is highly likely that a balanced, varied diet can offer us some protection against cancer. The starting point should be the recommended Australian Dietary Guidelines: Enjoy a wide variety of nutritious foods
    Eat plenty of breads and cereals (preferably wholegrain), vegetables (including legumes) and fruits Eat a diet low in fat and, in particular, low in saturated fat
    Maintain a healthy body weight by balancing physical activity and food intake
    If you drink alcohol, limit your intake
    Eat only a moderate amount of sugars and foods containing added sugars
    Choose low salt foods and use salt sparingly
    Encourage and support breast feeding
    Eat foods containing calcium (particularly important for men with advancing prostate cancer)
    Eat foods containing iron (particularly vegetarians) These Guidelines can help us to assess alternative diets and avoid unhealthy outcomes. In general, they are just as suitable for multiple morbidities (e.g.. heart and prostate). The most successful diet will be that which meets all our needs, including being easy to stick to, being palatable and being inexpensive (in time and money).
