Do you long for a wonderful meal at the end of a hard day of paddling, or do you just want to open a packet, add water and eat to refuel your body? For those of you interested in the fine art of camp cooking, several books have been published over the years:
  • Kayak Cookery by Linda Daniel
  • Wilderness Cuisine by Carole Latimer
  • Supermarket Backpacker - Harriett Barker (an oldie)
Here are a few basic meal ideas:
  • Breakfasts - bagels or english muffins with peanut butter and jam, instant oatmeal, cream of wheat or rice, cheese quasidillas, cereal or granola with milk, fruit leathers, scrambled eggs, couscous or rice cakes.
  • Lunches - stopping for lunch is not always feasible or opening the hatches and digging out stoves and pots takes too much time, so most folks rarely cook lunch. Rely on bagels, trail mix, apples and oranges, pita bread, cheese, gorp, dried fruit, nuts, beef jerkey, canned oysters, clams,sardines or tuna salad on crackers, beef stick (summer sausage/dry salami),granola bars and hard candies. If you want to take a break, especially on a cold day, get out your gear and put on a pot of soup to warm you up.
  • Suppers - here's where you can be a minimalist and open a can of soup or show your friends your gourmet talents. If you lack ambition or it's cold/rainy/buggy/etc., bring ready to eat one-pot meals like beef stew, soup or chili in a can. Also, packaged rice or noodle dishes such as red beans are handy and usually good tasting. If space and time are limited, use the freeze dried meals that you just add water to. I always carry one of these for emergencies. On the gourmet side, the possibilities are endless - bring a frozen, one pot meal for the first night, use fresh vegetables during the first week, dehydrate entire one-pot dishes at home or dehydrate parts of the meal and assemble dinner at camp.

Camp Kitchens Made Easy
Here are just a few tips to make life in your camp kitchen a little bit simpler and easier:
  • Color code everything that you need for your kitchen to make it easier to find and sort through. Use different colored stuff sacks or ditty bags. Keep your spices in a blue bag, your stove in a blue bag, your cook set in a blue bag, your food in a blue bag, etc.
  • Use bright colored items to make them harder to lose and easier to find. Get the brightest colored lighter you can find, paint your pot grippers (aka Copenhagens) a brighter color, pick bright colored utensils, etc.
  • Take an old closed-cell foam sleeping pad and cut it into an 8" by 8" square. Wrap it completely with duct tape. This has many uses. It can be used as a cutting board, a stove pad, a butt pad to sit on, and it can be used to cushion sharp objects in your pack. You can even draw a checker board on it for some entertainment if you get tent-bound.
  • Take a multi tool instead of just a knife. The pliers can serve as pot grippers if they are lost or broken. You have a knife and scissors right there, and you even have a saw or a serrated blade for cutting tougher stuff. Plus, if any equipment breaks this can help you repair it.

    OnionCut an onion in half and scoop out all but the two outside layers. Crack an egg into each half, or fill with chopped, seasoned meat, cap, and place directly on hot coals. PotatoCut out the centre of a potato. Fill with hamburger and diced onion, or with butter and cheese. Plug the hole with some of the pieces you removed. Coat potato with 2 inches of thick mud and place in coals. Cook for about an hour. Eat the insides. MMmmmm. Another idea is to slice off the top of a spud, hollow out a tunnel, and crack an egg into the hollow. Rub a bit of the egg white around the cut top, then put the "lid" back on the potato. Wrap in foil and bake in coals. Paper Cup/Paper BagFill a cup with water and drop in an egg, with or without the shell. Set the cup into the coals. Don't forget eggs and bacon in a paper bag. Put strips of bacon on the bottom of the bag, crack an egg or two on top of the bacon, fold over the top of the bag and hang it on a stick over hot coals. BreadPress a wad of dough onto the end of a stick and bake over hot coals. Try cinnamon twists. Pat dough into a rectangle, spread with butter, cinnamon and brown sugar, and cut into 2" strips. Wrap strip around a green stick and toast over the coals.

There's nothing that smells any better than the scent of bacon frying and coffee brewing when you crawl out of your tent in the morning (that is, if you can get someone else to get up earlier and get breakfast started!) And there is no shortage of cooking equipment on the market to make the job easy. Of course, you could just cook everything over the campfire, but that gets messy and it's hard to control the temperature. The best thing to do is to invest in a good quality camp stove. Here are just a few examples of what's available: This is a propane cooking stove that uses the disposable propane canisters. It is the most convenient type of stove available, and comes in one, two, or three burner varieties. This is a fuel stove, and these can be butane, dual-fuel, etc. The fuel container must be filled manually, and must be pumped to maintain pressure. These work best in colder temperatures or higher altitudes, and also come in one, two, or three burner designs. Here's a handy item for those who simply must have pancakes when they go camping. This is a propane-powered griddle, and I'm seriously considering getting one for my next camping trip!

    A long time ago my lord and I considered the problem of keeping food at the Pennsic War. Coolers are drastically unmedieval, and keeping them fed with ice and drained is a nuisance. Going to market every time you want something perishable is worse. Faced with a problem to solve given period technology, a useful starting point is to ask "How did they solve that?" After all, people whose lives involved dealing with a problem day in and day out are likely to have found better answers than you or I can come up with off the cuff. The most useful period answers we have so far found are (1) period nibbles, (2) meatless meals, and (3) pickled meat. The week before the War, my lord and I make nibbles: various sweets from period cookbooks which will keep over a couple of weeks or more. These can be eaten for breakfast, thrust upon a fighter who will not stop long enough to eat, served to friends who drop by the encampment, or used to dress up a cold meal of bread and cheese and hard sausage when we don't feel like cooking. Many but not all of our favorite recipes, given below, are from Islamic sources. They can be supplement with nuts and dried fruit. There are a fair number of period recipes for beans, lentils, pasta with cheese, and soups made with onion and root vegetablesall dishes whose ingredients will keep for several days without refrigeration. I described a dinner using such recipes in T.I. two years ago ("A Dinner at Pennsic", T.I. #113). Another of our favorites is an Andalusian dish of lentils with onions and eggs (see "An Islamic Dinner", T.I. #105), served with rice. We also have period recipes for pastries such as Murakkaba (see "A Dinner at Pennsic") and Musamanna (below), which are cooked in a frying pan and can therefore be made on site without an oven.
