Cajun/Creole Week celebrates the French traditions of southwest Louisiana through music, dance, song, crafts, folklore, and food. The staff features senior artists and young inheritors of these traditions. Coordinator Lynne Terr has assembled a staff that is a “who’s who” of Cajun culture. The staff includes the Savoy family, three members of the Miller family, and Zydeco Force, a band with many ties to the late Delton Broussard. We’re again offering several levels of fiddle and accordion, including classes for complete beginners. Each day starts with a choice of jam sessions or visits to the Cajun Resource room, where you can browse, visit with the “accordion doctor,” and have a cup of good strong Cajun coffee. All classes meet for about two hours in the morning and again in the afternoon. Each afternoon the entire group gathers for special presentations on Cajun and Creole culture. Mini-classes, concerts, and dances all carry out the theme and a mid-week party features Cajun food. It’s a gala week of nonstop music and dancing.

2004 Cajun/Creole Cooking – Jackie Miller, Judy Smith Class Letter Dear C ooking Students, For the cooking class bring your notebook, favorite recipe to share, a good appetite and be ready to work. I will have handouts of the recipes we will be preparing. We will be reviewing the traditional way of Cajun cooking, discussing the evolution of today’s Cajun cooking and doing some cooking from both times. We will be cooking every morning and preparing and/or baking in the afternoon. Tape recorders and camcorders are welcome. Our class will be very informal but busy. Jackie Miller And from Cooking Class assistant Judie Smith: Welcome to the Cajun cooking class! I’m Judie Smith, and I’ll be assisting Jackie. The cooking class is one that combines a love of food, cooking, music, and camaraderie. We will be cooking small amounts of each recipe, just enough for the class itself. We will collect the materials fee on the first day of class. This is to cover the cost of ingredients we use for the class dishes. We will also be helping to prepare a Cajun snack for everyone at Cajun/Creole Week to taste one evening, but money for the ingredients will be collected from those we serve.
