Gilly Lehmann received her doctorate in France for her dissertation on the cookery book in eighteenth-century Britain. The British Housewife of 1756 for Prospect Books, and made several contributions to learned journals both here and in France. Notes from the dust jacket This is the first full-scale study of the world of eighteenth-century British cookery books, their authors, their readers and their recipes. For many decades, we have treated them as collectables - often fetching thousands at auction and in rare-book catalogues - or as quaint survivors, while ignoring their true history or what they have to tell us about the Georgians at table. The publication of cookery books was pursued more vigorously in Britain than in any other west European country: it was also the genre that attracted more women writers to its ranks - indeed, perhaps the very first woman to earn her living from her writing in modern Britain was Hannah Woolley, author of The Cook's Guide and other works. Reason enough to look more closely at the form. This book pursues the authors: their identity, their intentions, their biographies; and it weighs up their audience. How far did the one determine the other? How far did the character of the authors and their output direct the course of British cookery during the eighteenth century?

Smoked Trout Tips on Cooking Trout Trout is available all year round from supermarkets, individual shops, fishmongers or direct from fish-farm shops. It can be purchased fresh or frozen, as fillets, steaks or whole fish and also comes in hot and cold smoked varieties. Trout is low in both fat (a third of the fat of salmon) and calories (just 135kcals per 100g), with high levels of A and B vitamins, calcium, selenium and the vital Omega-3. It is also quick and easy to cook, as well as being very versatile: BAKED
Whole fish, steaks and fillets can be oven-baked in a greased dish or wrapped in individual foil parcels and baked in a medium oven. In each case, top with a knob of butter and moisten with a little fruit juice, wine or cider. Allow 20/30 mins for portion-size fish and steaks FRIED/SAUTEED
Use whole or boned fish, steaks or fillets. Dust with seasoned flour and fry in a little oil or butter for 5 minutes each side. Serve simply with a squeeze of lemon, herb butter or mayonnaise.

Ha! Here it is, my secret of grossing people out: my childhood experiences of food. I never thought any of them were strange as I grew up, but when I tell people about them now I get some odd looks. Below you'll find a small sampling of delicacies I encountered as a child. Black Pudding Black pudding, also known as blood sausage, is a pudding made of curdled and boiled pig blood, mixed with chunks of pork fat (for texture and juiciness) and spices, then stuffed into a sausage casing. When served sliced and grilled it has a peculiar grainy texture all its own. It's perfectly black (except for the chunks of fat) and is really quite delicious. I haven't eaten it since childhood, though I do remember it fondly. I never questioned what is was when I was a child, simply accepted it as "that funny black stuff we ate instead of fish." Lamb's Hearts This was one of Mum's specialties, not Dad's. Lamb's hearts are roasted in the oven like a joint of meat. They're the size of a child's fist, have a rubbery-velvety texture, and when you slice them in cross-section with your knife you can see all the various chambers and arteries of the heart. I ate these about once a fortnight as a child, we called it "having hearts", yet I didn't realize what they were until several years later.
