Great British Cooking : Wellkept Secret, A > Customer Review #1: A must for every kitchen...

Like a previous reviewer I too have spent time in the U.K. (as I married a Scotsman). The recipes in here are the standards to British cooking. Ive tried many other and this is by far the best for anyone wanting to cook British meals in the U.S. The measurements have all been scaled for an American kitchen and every recipe Ive tried has come out wonderful. A LOVELY BOOK!!!!
Great British Cooking : Wellkept Secret, A > Customer Review #2: An Unjustly Maligned Cuisine British cooking has been a much maligned cuisine over the years. One is reminded of the joke which goes: In the European conception of heaven, the French are the chefs, the British are the police, the Germans are the engineers, etc., while in the European conception of Hell, the Germans are the police, the British are the chefs, etc. While this joke is based on national stereotypes, it does illustrate the common perception of British cooking.

Great British Cooking: no, it's not all boiled!

Author's Product Rating
Pros
You might think the title of the book is an oxymoron. It's not.
Cons One of the best books on the subject, but some pictures would have been nice. The Bottom Line All sorts of recipes, trivia, fun facts, and adventures for the cook who's not afraid of something both new and traditional. Full Review Mention british cooking to any gourmet or gourmand, and you will see them quake in horror. After all, Great Britain is the home of boiled, starchy horrible messes that manage to take all of the life and vigor out of anything called food. Which is rather funny, since it was the British who took the custom of having a snack and elevated it into an art form, namely, the art of having afternoon tea. Relax, this book is for the curious and the hopeful. Alongside such treats as English Trifle, Beef Wellington and Yorkshire Pudding, we get recipes for sweets, savories, sauces and that most English of culinary arts roasting. There's hardly a boiled veggie in sight, which makes this midsized cookbook (about 300 pages or so) a great bargain at close to 13 dollars american.

The report examines the range of influences on trends in eating and uses Mintel's own primary consumer research to examine attitudes and changes over time and to answer the core issue of the influence of media on British eating habits. Mintel's research considers a number of potential influences on trends in cooking and eating habits. These include the population's composition by age and by socio-economic group, earnings and the economy, employment levels, the demand for convenience, trends in eating out, the incidence of foreign travel, cooking skills, health issues, and, of course, the influence of TV and other media. It offers food manufacturers and retailers an analysis of consumers eating habits that can be directly transferred into effective marketing plans, segmenting consumers into defined cook types for superior targeting. Mintel's revealing findings include:

h
british cooking at its best by Diana Serbe She sent a recipe at the same time that she signed up for membership on the site. At the time, we were researching and testing pot pies (see Four and Twenty Blackbirds). We were up to our ears in that tasty British pastry and this Englishwoman sent us a recipe for a Hot Pot which is a similar dish, but without the pastries (or the calories therin). We tried it. It was light and clean, and added another dimension to our article. We've gotten to know Isobel, and to enjoy her style of communicating. Without notice or fanfare, she'll send a recipe saying that she was experimenting, that this recipe turned out well. We look forward to the recipes, for our own palates, as well as our members because her food is nutrition oriented, but always savory. We don't call it 'health food,' but it qualifies. We know a lot about a cook if we look at their recipes. Isobel's recipes are bright and eager, just like the face that smiles at us from this page. They are intelligent recipes, not given to excess or unnecessary embellishment. We've put them on the site and in our personal repertoires as well.

Magazine Antiques
March, 2000 by Miriam Kramer
Britain's reputation for overcooked vegetables, sickly sweet desserts, and drinks consumed at room temperature has contributed to its dismissal as a culinary desert. As a commentator noted, "the French and Italians cook, while the English just write about it." However, a current exhibition entitled Eat, Drink and Be Merry: The British at Table 1600-2000 demonstrates that the British did not merely subsist, they dined elegantly and well. The exhibition is on view until June 4 at Fairfax House in York. It will then be at Kenwood House in London from June 27 to September 24 and at the Assembly House in Norwich from October 14 to January 7, 2001. In the exhibition, table settings from various periods have been re-created using realistic representations of food whenever possible. Paintings depicting food and meals are on view as well. The earliest re-creation in the show, from a contemporary wall painting, is of a Jacobean banquet of about 1610. The centerpiece is an elaborate confectionery that is both decorative and edible. Nearly a century later the duke of Newcastle gave a feast at Windsor Castle, and this too is re-created, with the dessert on the table at the same time as the first and second courses, which was the fashion of the time.
