Clifford Mould discusses British Cuisine and recommends some famous London Dining Rooms a la Russe as the new fangled manner of presenting each course in succession was called. Frequent breaks for dancing or walking on the terrace must have been a practical necessity as much as an excuse for decorous dalliance. All this came to an end with the two World Wars, separated as they were by the depression of the 20s and 30s. Rationing continued in Britain until the early 1950s, and the post war development of new technologies that enabled the rapid distribution of cheap food was welcomed enthusiastically, but sadly, very few people cared enough to notice the slippage in the standards of food quality. The nostalgia for such halcyon days lingers on - by no means confined to Britain and Merchant Ivory films. It's a huge industry in America where there are magazines devoted to Victorian living, and out of work actors spend the summer bringing to life contemporary figures at historic sites from Valley Forge to Dead Man's Gulch. So it isn't surprising that one of the most common questions we get asked by readers from abroad visiting Britain is, where can we find really good British cooking?

I've tried many other and this is by far the best for anyone wanting to cook British meals in the U.S. The measurements have all been scaled for an American kitchen and every recipe I've tried has come out wonderful. A LOVELY BOOK!!!! I purchased this book in 1983. I purchased a second, paperback version this year, as my original is well worn (and very well loved). I have used it countless times, cooking my way through most of its recipes. It has never failed me and has provided me with many dishes that are now family classics. It is a true gemsimple to use, charmingly written and fool proof in its results. If you have any interest in British food or British heritage this book is a treasure. Marcus Wareing is sitting, rod-backed, in the lobby of The Berkeley hotel, occasionally whipping his head around like a fox to observe people coming and going.
Wiry-thin, intense, serious, he doesn't look like a chef, and he doesn't really look like a boxer either - the only other activity he embraced with any dedication.
'Boxing instilled a lot of discipline in me,' he says. 'It was tough but I loved it, because it was one-on-one aggression, and it kept me off the streets.'
Wareing is very much a chef. Once known chiefly as a protégé of his great friend and mentor, Gordon Ramsay, Wareing is now basking in a limelight of his own. As Chef/Patron of Pétrus at The Berkeley, and of The Savoy Grill, he is the brightest young thing in British cuisine.
Wareing's achievements speak for themselves, all the louder because of where he came from. He is a working-class boy from Southport, Merseyside, one of the most economically depressed areas of Britain and many worlds away from the glamour of central London.
'No one from Southport ever came to work in London or made it as a chef in London,' he says. 'It was inconceivable. No one would even know where to start.'

by Marguerite Patten Last month I mentioned that I had met Marguerite Patten at the launch of The Great British Kitchen.
It was wonderful. Marguerite Patten is a true icon of British cooking and her book reflects what has been great about British food in the last century.
In her book, Marguerite selects recipes that she thinks have hit the culinary headlines at a particular period or that are outstandingly good. So many of the dishes are ones that have endured centuries of British cooking, and so they should as they are fabulous.
Not only does Marguerite give us the recipes from various decades, but she gives information of how she developed them, or where they originally came from. Letting us not forget the heritage we are lucky to have.
At the beginning of each chapter, events that touched the country are mentioned and these give us more insight into how we lived and how political, industrial and domestic circumstances influenced our diets and also our health.
In each chapter a person is highlighted who made an impact within the food world of his or her time. One of my favourite writers from the past is Eliza Acton and her book had a huge impact on cooking for the families of the growing middle classes at the beginning of the century.

Is British cooking still a dog's dinner?
Is it still chips with everything?
If you judged by the number of TV chefs, you'd think no-one in the UK would have any trouble telling the difference between coulis and stewed apple.
Britain has changed, conventional wisdom goes; the country once obsessed with meat and two overcooked veg is now cosmopolitan and daring, a nation of foodies.
It became so confident in its culinary skills that it even embraced its own unfashionable heritage (bangers and mash), and made it cool (bangers and rocket mash with onion gravy).
Well, that is the perception. But is it true? Tagliatelle: Pasta staple fare in UK supermarkets Government figures released on Thursday could suggest that it might be wide of the mark. Far from learning from our continental confreres, we still spend less than the Italians, Spanish and French on our weekly food shopping. In fact we even spend less than we ourselves did, 30 years ago.
