Globe Peqout Press $35/176 pages From the moment I first opened Country Breads of the World (called simply Country Bread when originally published in England, hence the cover you see above) quite at random to the wonderful photograph of Pierre Koffmann I felt as if I had stepped into a magical place. Nothing has changed my mind since. No bread book I know manages to be quite so welcoming and instructive at the same time or, really, so charming. (This last quality is due in part to the breadbakers themselves, who are a fascinatingly various lot, and in part to the immediacy of Anthony Blake's photographs, some of which continue to haunt the imagination long after the book is shut.) I'm very flattered to find myself standing at the doorway, beckoning readers in. I'm also quite ashamed of myself for not reviewing the book sooner. The problem has been trying to find the right words really, to pull together lots and lots of impressions in some kind of sensible way. There are numerous individual points worth making, but the single most impressive thing about the book for me is how it has taken the various aspects of bread baking milling the grain, developing the leaven, working and shaping the dough, and finally, of course, baking the loaf and made each one of them the beginning of a section of their own instead of lumping them into one big chunk at the beginning.

In our busy, hectic lives it is hard to find enough time to cook for a special diet. We have to make it easier on ourselves in every way we can. Using commercially prepared foods that will fit your allergy diet is a great time-saver. Shop at a large health food store, if possible, for crackers, pastas, canned goods, soups, breads, and cereals that you can eat. Or, 5 Years Without Food: The Food Allergy Survival Guide contains a listing of sources of commercially prepared foods for allergy diets that you may be able to mail order directly or have your health food store get for you. (Click here for more information about the book) A bread machine can also lighten your workload by making yeast breads, non-yeast breads, and cakes with very little effort on your part. Usually you just add the ingredients to the machine, push a button or two, and come back to a wonderful treat.. The question I am most often asked about bread machine baking for an allergy diet is, “What machine should I buy?” If you wish to bake spelt or kamut yeast breads or egg-containing rice yeast breads, almost any bread machine will work for you. You can make non-yeast breads with spelt, kamut, rye, barley, rice, or quinoa flour (or even wheat flour!) using a bread machine with a non-yeast cycle. Several companies make machines with quick bread or cake cycles for non-yeast breads. A few of these machines mix the dough for a very long time before baking. The ideal mixing time for the recipes in the books from which this website is excerpted is 3 to 4 minutes. If your machine mixes longer than 4 minutes, add the oil to the flour mixture, but delay adding the other liquid ingredients until about 2 minutes before the end of the mixing time. For example, if it mixes for 6 minutes, rather than adding the liquids 1 1/2 to 2 minutes into the cycle, wait until 4 minutes after you start the machine.

Underwood best in organic bread at Brickmaiden Breads

I live for bread. Dense, chewy, handmade loaves with a faintly sour tang, or rustic batards studded with salty chunks of olives or fragrant walnuts. Slather on some good unsalted butter, and I'm happy. The hearty loaves from Brickmaiden Breads fit the bill for my bread requirements. From her bakery in Point Reyes, that epicenter of regional foodstuffs, owner Celine Underwood turns out spectacular organic artisan loaves by hand in her tiny wholesale bakery. Underwood, raised in West Marin, is a 26-year-old entrepreneur who began baking just seven years ago. She apprenticed with bakers throughout Northern California, including stints at Village Bakery in Sebastopol and Bovine Bakery in Point Reyes. Bovine Bakery owner Bridget Devlin became Underwood's business partner, and now Underwood sells Bovine Bakery's brownies and cookies along with her bread at farmers' markets. Two of the most influential people in Underwood's career have been baker Ian Duffy of the Daily Bread bakery in Boulder, Colo., and Chad Robertson, owner/baker of the acclaimed Bay Village Bakery. Underwood bought Robertson's Point Reyes bakery in the fall of 2000, and went into business for herself under the name Brickmaiden Breads. Robertson, meanwhile, relocated Bay Village Bakery to its current Mill Valley retail location.

Diane and Tom are avid "foodies". Our favorite TV channel is the Food Network. We can "kick it up a notch", and BAM it with Emeril and the best of them. We surf the web looking for new gourmet food suppliers and wine merchants. To better hone our cooking skills, we have attended cooking and baking courses at The Institute of Culinary Education in New York and King's Cooking Studio in New Jersey. We have also participated in wine courses given by Connie Fowler , a local New Jersey wine expert, Pierre's Bistro(Morristown, NJ), the StageHouse Inn (Scotch Plains, NJ), and Serenade (Chatham, NJ). Our "foodie"-mania is also reflected in our memberships in the Shitake Mushroom Society, the Vidalia Onion Lovers Club, Cooking Club of America, "Foodie Forum", Beer Across America, Wine Library Wine Club, Coffee Anyone Gourmet Coffee Club and D & M Champagne Society. We receive probably 25-50 food and cooking catalogues a month. Our mania around food and cooking centers mainly around our dinner and tea parties, our wine and food pairing seminars, building relationships with chefs, our favorite suppliers and restaurants and, of course, our favorite food fantasies. In the spring of 2000, we partnered with the TV Food Network to realize one of our food fantasiesto cook a dinner party for a 4 star chef!!

breads Cakes. Pumpkin Bread. Ingredients. 8 oz wholemeal flour. 3tsp baking powder. 4 oz of vegetable margarine. 4 oz of raw cane sugar.
Pumpkin Bread Ingredients 8 oz wholemeal flour 3 tsp baking powder 4 oz of vegetable margarine 4 oz of raw cane sugar 1/2 lb cooked pumpkin 2-3 tbs milk 3 oz raisins 1/2 tsp freshly greated nutmeg Method
Sift the flour and baking powder. Cream the margarine and sugar together in a bowl. Mash the cooked pumpkin until smooth and add the creamed mixture. Fold in the sifted ingredients and moisten with the milk. Finally, stir in the nutmeg and raisins. Spoon the misture into a greased 2 lb loaf tin and bake for 30-45 minutes at 350 degrees f. Grater Cakes Ingredients 1 large coconut 3-4 slices fresh root ginger 1 1/2 pt (850 ml) water 1 lb (450 g) raw cane sugar Method
Peel and grate the coconut and the peeled fresh ginger. Pour the water into a large heavy based saucepan, add the coconut and ginger and simmer on a low heat until the water is reduced to about 1/2 pt (275 ml). Add the raw cane sugar and once dissolved boil hard stirring continually until the mixture becomes thick and, if a little is dropped into cold water, will harden imediately. Drop spoonfuls of this onto a lightly oiled tray and allow to cool. Molasses and Cornmeal Bread Ingredients 6 oz cornmeal 2 oz wholemeal flour 4 tsp baking powder 1/4 tsp freshly grated nutmeg 1/4 tsp ground cinnamon 4 oz vegetable margarine 2 tbs molasses 2 tbs milk 4 oz grated coconut Method
Sift the cornmeal, flour, baking powder and spices together in a bowl. Melt the vegetable margarine and molasses in a saucepan and pour on to the dry ingredients. Stir in the milk and grated coconut. Mix Well. Pour the mixture into a greased 2 lb loaf pan. heat the oven to 350 degrees f. and bake the bread for 35 - 40 minutes until well risen.
