HATZ (Breads) CHOERAG 1 Armenian roll 1 CHOERAG 2 Armenian roll 2 ... Convert US weights to metric CHOERAG -Sirna Piligian
(Armenian roll) 3 cups lukewarm milk
1 cup melted shortening
1 cup sugar
few dashes cinnamon
1 heaping tsp. mahleb, crushed (opt.)
1 tsp. salt
1 yeast cake
1 cup eggs
1 heaping tbsp. B.P.
11-12 cups flour Heat milk, set aside. Blend shortening, sugar, cinnamon, mahleb, salt, yeast cake, eggs, baking powder and milk together. Add flour a little at a time and mix and knead together. Dough will be a little sticky. To test, roll a piece of dough in hand. Press down; if it springs back, it is ready. Cover and let rise overnight. roll into desired shape by using small amounts of dough. Put on greased pan (about 12 on each pan). Put same shape on each pan so that it will cook evenly. Let rise again for 2-3 hours. After rising, brush tops with mixture of 1 egg and 1 teaspoon sugar and sprinkle with sesame seeds. Bake in preheated oven of 400F for 10-15 minutes. Put on the bottom rack of oven until bottom is browned and then move to higher rack.

All that's needed is a little adjustment, an open mind, and an experimental spirit. Try some of these tips when preparing your favorite home-cooked meals to make them lower in fat and more healthful. Adjust your recipes ~ Use applesauce or other fruit purees in place of butter or oil in baked goods. (Pureed prunes work well in chocolate baked goods.) Substitute 2 egg whites for one whole egg or three whites for two whole eggs. In place of sour cream, try using non-fat sour cream, yogurt or pureed lowfat cottage cheese. Use skim milk in place of whole milk. Replace heavy cream with evaporated skim milk or lowfat yogurt. Add various kinds of fruit or vegetable to baked breads to make them interesting and more flavorful. Add fiber such as oatmeal, wheat germ, Raisin Bran, Bran Flakes or All-Bran to muffins and breakfast breads. Use whole grain for part of your ingredients instead of highly refined products such as whole wheat flour, whole cornmeal, and oatmeal.

  • Water or milk (whole, skimmed, evaporated or reconstituted nonfat dry) are most often used for breads. Water makes the crust crisp, while milk produces a soft crust and a creamy-white crumb. The liquid must be at the correct temperature; if it is too hot, it will kill the yeast; if it is too cold, the dough will take longer to rise. Many different kinds of fat (butter, margarine, shortening, salad oil or lard) can be added to bread dough to improve flavor and make the dough stretch more easily. The bread will have a tender crumb and stays soft longer. Eggs added to a yeast dough add flavor, color and nutrition. They soften the crust and give the interior a fine crumb. Do not try to speed up the yeast in bread dough by increasing the amount of flour, sweetener or salt, or by adding ingredients. These will only make the bread heavier. To test the rising of the yeast dough: The dough is doubled when two fingertips pressed 1/2 inch into it leaves dents that remain. If dents fill in quickly, let rise 15 minutes longer and test again.

P lease allow me to introduce myself...Sandra J. Leonard. (Oh, the J. stands for Joan.) If you will permit me, I would like to take this opportunity to tell you a bit about myself. First off, I am a celiac, have celiac sprue disease and am on a total gluten-free diet (no wheat, rye, barley or oat grains) for life. It was just short of my 50th birthday when I was finally diagnosed after being sick most of my life. I have to admit it is great to feel so good all the time now. A fter finally being diagnosed, going on a gluten-free diet and regaining some of my health, I felt a strong urge to be around other folks that also had celiac sprue and were on gluten-free diets. I had seen the name of a person from my town when reading an article in a national celiac newsletter. I was able to locate her and met my first person with celiac disease. She in turn, knew other celiacs in the area. T hat is how the very first support group meetings came to be. Most were held in the living room of my home with other celiac friends, with a sharing of recipes and delicious gluten-free tastings. This little support group grew right out of the living room and has been meeting at a local area hospital for some time now. Hence, the Celiac Sprue Support Group, Ohio Miami Valley Area (Dayton and surrounding areas.) was formed and I officially became the chairman. U pon being diagnosed and informed that a gluten-free diet would be my new lifestyle for life, my thoughts were...."All my illness problems finally had a name...how bad could a gluten-free diet be?" The 'cure' sure sounded simple enough....I only had to stay on a gluten-free diet for life. What could be so bad about that...no drugs to take...just that gluten-free diet bit and I would be feeling good as new. It would be a snap.

2 tbsp. sugar
4 tbsp. margarine or oil
1 c. warm water Place into bread container in order given. Choose setting on machine. Options: Add 1/2 teaspoon cinnamon and 1/2 cup raisins after the first mixing cycle. The machine should beep at the correct time. Bread Machine Potato Bread 1 small potato, peeled and halved 3 tablespoon vegetable oil 2 tablespoon granulated sugar 1 1/2 teaspoon salt 3 cup all-purpose flour 1 1/2 teaspoon quick-rising dry yeast (or 1 1/4 tsp. bread machine yeast) In saucepan of boiling salted water, cook potato for 10 to 15 minutes or until tender; drain, reserving 3/4 cup cooking water. Mash potato well to make 1/2 cup. Let potato and cooking liquid cool to room temperature. Remove baking pan from large ( 1 1/2 to 2 lb.) bread machine. Add to pan (in order) cooking water, oil, sugar, salt, mashed potato and flour. Sprinkle yeast over top, making sure yeast does not touch water mixture.
