You Say Farofa , I Say...Blech Shawn says: I never got farofa. What I mean is, I got it with every meal. Really, what is the point? Farofa (flour taken from ground manioc root, then baked with oil) has the dry, crumbly consistency of sawdustand not coincidentally, that's what it tastes like. Brazilians painstakingly disguise the flavor, sometimes with raisins and dried fruit, but the end result tastes like...sawdust with raisins or dried fruit. Eating it made sense in the days when Brazilians lived in peasant huts; farofa was the sole source of carbohydrates. Like potatoes for the Irish, farofa kept you going. But Brazilian cooking now incorporates lots of carbslike rice. Potatoes. French fries. Sometimes all three at once. But no matter how many starches are piled on your plate, farofa will be there to top it off. Because you can never get enough carbohydrates.

Molho Nago (Nago Sauce)
    Ingredients:
  • 4 or 5 preserved malagueta peppers
  • 1/2 teaspoon salt
  • 5 tablespoon
  • 8 crushed dried smoked shrimp (available in Chinese markets)
  • 6 medium-size okra pods, cooked and cut into rounds
  • 1/3 cup fresh lime juice Instructions:
    Place the malagueta peppers, salt, shrimp, and okra in a food processor and pulse until you have pureed them. Then gradually add the lime juice and mix until you have a thick liquid. If the sauce is being served with a stew, add a few tablespoons of the stew liquid to the sauce and then serve.
    Nago is the Bahian term for the descendants of the Yoruba slaves who arrived in that region from southwestern Nigeria and eastern Benin in the eighteenth and nineteenth centuries. By the 1800s, people from this area represented the majority of the slaves in the Bahian region. The cooking of the Yoruba people shows its African origins in its use of malagueta pepper, dende, and okra. It is considered by culinary historians to be one of the most original regional cuisines in all of Brazil. This sauce is traditionally served with stews.

The new revolution in food is now occurring in the United States, not in France," proclaims Chef Claude Troisgros, scion of the famed Troisgros family of Roanne, France. Surprising words from a chef born and trained in France. The Troisgros family has provided France with some of its most creative, adventurous and famous masters of French cuisine. Claude's grandfather, Jean-Baptiste, created a furor in gastronomic circles when he first paired fish with red wine four decades ago. His father, Pierre, and his late uncle, Jean, turned their family's modest restaurant in Roanne into the celebrated three-star Michelin restaurant, Troisgros. The Troisgros brothers and their close friend and fellow chef, Paul Bocuse, revolutionized French cooking in the 1960s as champions of nouvelle cuisine, a style of cooking that set the tone in restaurants the world over for more than a decade. Sixty-eight-year-old Pierre is still cooking today, while yet another son, Michel, is adding new energy to the third-generation restaurant and hotel. Pierre's daughter, Anne Marie, is carrying on the tradition at Yves Gravelier in Bordeaux. "When I first started working in Brazil, the European chefs were importing everything, most of it frozen and very expensive," he recalls. "I wondered why. There were wonderful Brazilian products in the market, so I began to work with the fresh, native produce, and I developed a style of tropical French cooking that became my signature." He intended to stay in Brazil for an adventuresome two-year stint, but he became captivated by the country's tropical flavors and climate and has remained there for almost 20 years.

Now, seriously, many were the subject of stories published in the Food Section of The Boston Globe, The Washington Post and other American papers. The Hearts of Palm Salad and the Onion Salad recipes were published in Steven Raichlen's High-Flavor, Low-Fat Cooking . A couple of recipes were given to us by the Brazilian Embassy chef in Washington, DC. Gee... Our feijoada recipe has been featured in National Geographic Traveler magazine...is this glory or what If the dessert section keeps getting bigger and bigger...well, it's because there are more of them in Brazil! Fruits, eggs and sugar have long been combined into some of the most marvelous confections on Earth. Originally created from pork odds and ends by Bahia's African slaves, this delicious rice-and-bean combination has been elevated to Brazil's national dish. In Rio and Sao Paulo, a multifarious buffet of roasted and boiled meats accompany this rice and beans. This version is adapted from one made by Valmor Neto at his San Francisco restaurant, Bahia Brasil. Particular attention has been paid to reducing the salt and fat of the traditional dish.
You don't need to include all of the meats. Pick out the ones you like best and add them. If you leave them out altogether, the dish becomes simply black beans, to which you should add extra onions, celery, peppers, and other spices. I like to pass a clove or two of garlic through a press into the beans about 5 minutes before serving, to bring up the flavor.
Serve bowls of Farofa on the side to sprinkle over the beans. Feijoada is also served with Arroz a Baiana, Couve, Cracklings, and Molho de Pimenta.
2 cups (1 pound) black beans , rinsed and picked over 3/4 pound pork butt or shoulder, trimmed of fat

Brazilian cuisine expert Yara Castro Roberts, an Emmy award nominee host for PBS-WGBH cooking show series, conducts the Brazilian Cuisine Seminars in Ouro Preto, Brazil. The week features hands-on Brazilian cuisine with dishes from Minas Gerais, Bahia and the Amazonas regions, field trips to neighboring coffee plantations, sugar cane distillery, fine dining and cultural activities. The seminars focus on Brazilian culinary art and its relationship with various aspects of Brazilian cultural life. The academy is located in Ouro Preto, a 17th century colonial town in the mountains of Minas Gerais. It is one of the world's best preserved examples of colonial baroque architecture offering a number of local festivals and historical celebrations. Yara began her culinary education as a young girl, learning from her mother who was a chef and owned a cooking school. She graduated from Boson University Culinary Arts, has degrees in History of Art from the Ecole du Louvre and Education from the Sorbonne in Paris. Yara is quadrilingual in Portuguese, French, Spanish, and English and speaks some Italian and Russian. She is a vivacious and seemingly inexhaustible ambassador for food and other things Brazilian, making the classes most enjoyable and informative.

    Brazil, the largest country in South America, borders every other South American country except Chile and Ecuador. From west to east it stretches nearly 2,700 miles from the Andean foothills eastward to the Atlantic Ocean. Its official name is the Federal Republic of Brazil, or, in Portuguese, the Rep™blica Federativa do Brasil. It occupies almost half the area of South America and is the world's fifth largest country. Although just slightly smaller than the United States in area, Brazil's population is about 40% less. Most Brazilians live in the densely populated areas of eastern Brazil. Although urbanization has not produced actual declines in rural population, internal migration has caused cities to grow much faster than rural areas. The largest cities are Sao Paulo (16 million people), Rio de Janeiro (11 million), Belo Horizante (3.8 million), Salvador (2.3 million), Recife (1.8 million), and Porto Alegre (3.1 million).
