Pipoca
is thought to be an Amazonian Indian word that means "cracked skin"; the English word is POPCORN! Brazilians serve popcorn as an appetizer. Make some popcorn the old-fashioned way, heating 4 to 6 tablespoons of oil in a heavy lidded pot, and adding a cup popcorn kernels when the oil is hot enough to pop one test kernel of corn. Cook over high heat, shaking the pot constantly. Remove from heat and salt to taste. Makes about 4 servings. Castanha-do-Pará (Brazil Nuts)
You can buy brazil nuts in a can, shelled and salted, but see if you can find them in the shell. Shell enough nuts to yield about 1 pound of nut meats. Preheat broiler, and arrange nut meats on a cookie sheet and drizzle 2 tablespoons of olive oil over them, Place under broiler for 2 to 3 minutes until nuts are heated through. Remove from oven, pat nuts dry with paper towels, and put in a paper bag with salt. Shake the bag to coat with salt and serve warm.

Brazilian cooking history is in every bite of the country's food. Native Indians developed corn porridge, cassava meal, sweet potatoes, many roots, hearts of palm, many species of game and fish, and the preservation of meats by smoking and drying. In 1533, the Portuguese colonized Brazil. After a lengthy Moorish occupation, Portugal had adapted a variety of North African cooking traditions, among them coffee, dried fruits and pastries. These culinary customs were in turn exported to Brazil, with the twist of being prepared using local ingredients.
The largest single influence on Brazilian cuisine came with African slaves. Dende, peppers and coconut milk, staples of West African cooking, became firmly established on the Brazilian palate. During the Nineteenth Century, slavery ended and an independent Brazil became a melting pot for immigrants from all over the world. Waves of new arrivals from Asia, Western and Eastern Europe and the Middle East brought kitchen traditions with them that put a truly eclectic spin on Brazilian cuisine. The nation's multiethnic and multifaceted cooking is always unique and delicious.

Advance Preparation: 1 to 4 hours for marinating the fish This recipe comes from the most unlikely of sources, a Rio de Janeiro meat emporium called Porcão (Big Pig). Like most churrascarias (barbecue restaurants), Porcão specializes in an astonishing assortment of grilled meats presented on swordlike spits and carved directly onto your plate at the table. Conspicuous consumption is the name of the game: The waiters keep bringing food until you expressly ask them to stop. The following kebabs caught my eye (and taste buds) precisely because they weren’t meat. Porcão makes them with surubinho, a giant mild, sweet freshwater fish from the Amazon. The closest equivalent in North America would be halibut- which you could use-as well as tuna, sea bass, or any firm, meaty fish. I usually make the recipe with swordfish. Coconut milk is a traditional ingredient in northern Brazilian cooking. Its high fat content keeps the fish moist and flavorful. Be sure to use unsweetened coconut milk: reliable brands include A Taste of Thai, which is available at most supermarkets. For additional flavor, Porcão’s chef bastes the kebabs with garlic butter as they cook. The fish will have plenty of flavor without this step, but it does offer added richness.

Each region of Brazil - depending on its indigenous culture, which European group colonized it, nearness to rivers or the ocean annual rain and soil conditions - developed its own very diverse dishes. Food The cuisine from Bahia dates back to the time of slavery when the masters saved scraps from the table or leftovers from the previous day's meal to give to the slaves. Some slaves were allowed to fish and look for shrimp and clams. Remembering their cooking-pot training from Africa, the women would put bits of ingredients together and add the milk of coconuts or the oil from the dendê palm. Over the years these concoctions were worked out in recipes and were given names. Today it is called Bahian food. Some of its delicacies are: Vatapá: Shrimp are either cut up or ground together with pieces of fish, then cooked with dendê palm oil, coconut milk and pieces or bread. The dish is served over white rice. Sarapatel: The liver and heart of either a pig or a sheep are mixed with fresh blood of either animal; tomatoes, peppers, and onions are added and everything is cooked together.

(WHITE RICE BRAZILIAN STYLE) Soak 1 kg American long grain rice. Semi-prepared rice is not suitable. Heat in a large saucepan 1/4 litre of oil and soften one chopped onion and one crushed clove of garlic. Add the drained rice and cook for 10 minutes stirring from time to time. Pour in 1 litre of boiling water. Cook uncovered till the water has evaporated. Cover and remove from heat. This Brazilian style rice is perfect if each grain is separate when served. It accompanies nearly every dish.

Draw off the heat and add the milk obtained from the flesh of one coconut. Stir well and cook for another 5 minutes. This rice is chiefly served with the dishes from Bahia, e.g. caruru, fish, crab and shrimp moquecas.

Eating well is one of the keys to happiness. Food has the power to cheer one up from the gloomiest moods, but if and only if it is good . You can't always expect that a bowl of cereal or ramen is going to put a smile on your face. Also, I don't think that edibles (I don't dare call them real food) out of cans would have the same effect. These things may all be nourishment, but not food for the soul. After long arguments with various people who claim that preparing something good to eat takes too much time and may even cost too much money, I decided I could help out by showing the way. I mean, my way. My number one rule is that fresh is always best. When it's not an option (vegetables and fruit may get out of season in certain places), frozen is the next best choice. Canned... well... when there is nothing else around, canned food may be ok, but it will never taste as good as the real thing. I usually tend to pass those 'meal in a can' thingies, specially if I have the means and the time to schlop something together. And the time one needs can be as little as 10 minutes. Here are some recipes you can try. Right now you won't find many quick and easy ideas in this page, but I'll be making an effort to add more of them. My rationale is that if I'm taking the time to cook something, it should better be great so I usually aim a little high and get a bit elaborate. Come back often to check for new additions (or maybe addictions ?) and feel free to send me email with your favourites to add to this page.
