Ever hear of a licuado? How about a ayran or a jallab? Agua fresca maybe? Or an operation that has so many different types of bottled water that it has a water sommelier? Multiple-Martini power lunches are out, and non-alcohol beverages now rule lunch. While flavored Martinis may be popular, even cocktail hour patrons are turning to virgin versions of the latest flavor faves. The quest for new flavor experiences, in fact, has motivated many operators to become innovative with their beverage menus, especially on the n/a side. In the not too distant past, the best abstaining customers could hope for were coffee, tea, juice, a soda, milk and plain old ice water. For operators, the obvious benefit of a thoughtful non-alcohol beverage list is its tremendous profit potential. Waters, juices and lemonades are commanding between $2 and $5 on many menus. Operators often get more for bottled teas and sodas. And specialty drinks may bring in even more.

VERY-LOW ALCOHOL BEVERAGES What looks like a beer, smells like a beer, tastes like a beer, even foams like a beer, but is not a beer? The answer is: a "NON-ALCOHOLIC BEER," a name that brewers have given to very low-alcohol beverages. These so-called "non-alcoholic" brews are not free of alcohol. By law, non-alcoholic beverages may contain no more than 0.5 percent alcohol by volume. For products to be treated as an alcoholic beverage under the law, they must contain at least 0.5 percent alcohol by volume. By comparison, natural fermentation produces similar low levels of alcohol in most fruit juices. Typical levels of alcohol in orange juice range from 0.2 percent to 0.5 percent. The alcohol level in the two best selling "non-alcoholic brews" is 0.28 percent and 0.37 percent. Most true beers in Indiana contain about 4 percent alcohol, with low-alcohol beers having about 2.5 percent alcohol, and light beers about 3.2 percent alcohol (ranging from 1.9 percent to 4 percent). Although the very-low alcohol beverages do not contain enough alcohol to cause intoxication when taken in reasonable doses it would take about 30 12-ounce servings in one hour to bring a 150-pound man's blood-alcohol concentration up to about 0.10 percent alcohol by volume they have been the center of controversy since more aggressive marketing efforts began a few years ago.

Blend on Highest Speed for around 5 to 10 seconds and pour. To achieve a closer taste to the real thing use Carbonated Water but regular tap water will due. You can also substitute Strawberries or pineapple for the Orange Juice or mix flavors. I have adjusted the recipe by taking 1/4th the ingredients and use one of the New hand held blenders to mix a single serving in a cup. Be sure when you do this you don't fill the cup too full or you'll have a mess.

Another note: I find this punch to be a little on the tart side so I add a tablespoon or 2 of sugar to the mix. GOLDEN GLOW PUNCH 25 servings (about 1/2 cup each) (For more servings, just keep the same proportions. Nonalcoholic Party Punch (from Cooking for a Crowd by Susan Wyler) Makes about 3 gallons (punch 04) 2 bottles ( 1-1/2 quarts each) Mauna L'ai guava/passion-fruit drink 2 bottles (1-1/2 quarts each) cranberry juice cocktail 2 quarts grapefruit juice 3 bottles (1 liter each) ginger ale 4 or 5 limes, halved lengthwise and cut into thin slices 1. In a large punch bowl, blend together juices and ginger ale. Add 2 trays ice cubes and the lime slices. 2. To serve, put 2 or 3 ice cubes in glass or cup and ladle on the punch, making sure everyone gets a slice of lime. I made this for a dinner party for 45. The other beverage choice was water and there seems to be just enough punch for everyone. All purpose punch (US mongrel measures) (punch 02) 1 2-liter bottle clear pop (club soda, gingerale, lemon-lime or similar) 1 12-oz can frozen orange juice 1 can (42 oz? more than a quart anyway) pineapple juice Reconstitute the orange juice in the punch bowl, add the pineapple juice and soda pop. If you have a good size punch bowl a bundt cake pan molds an ice ring that will last several hours before it melts unless it is 100F in the shade. Congratulations! Becky's Punch (punch 03) 2 12-oz cans frozen pink (or yellow) lemonade concentrate 1 12-oz can frozen limeade concentrate 1 46-oz can pineapple juice 3 lemonade cans cold water 1 2-liter bottle 7-up (or your favorite) Mix it all together, add some pretty ice rings, mint leaves, etc. for decoration. Makes about 6 quarts. Nice refreshing lime/pineapple taste, easy to keep extra makings in reserve. Happy wedding! Randy Title: #47493 Tropical Punch Cooler Categories: Beverages Yield: 30 servings 1/4 c Powdered sugar 1 1/2 c Water 2 (16 oz.) pkg. frozen -peaches, -partially thawed 2 (6 oz.) cans frozen orange -juice -concentrate, thawed 3 1/2 c Pineapple juice, chilled 1 l Bottle ginger ale or 7-Up Preparation : In blender container or food processor bowl with metal blade, combine 2 tablespoons of the powdered sugar, 3/4 cup of the water, 1 package peach slices and 1 can orange juice concentrate; blend until smooth. Pour into 4 quart non-metal container. Repeat with remaining powdered sugar, water, peach slices and orange juice concentrate. Add pineapple juice; blend well. Refrigerate until serving time. Just before serving add ginger ale,; stir gently to blend. 30 (1/2 cup) servings. Note: Two 16 ounce cans peach slices in heavy syrup can be substituted for 2 (16 ounce) packages frozen peaches. Omit powdered sugar. Banana Slush Punch Recipe By : Kathi Sandler Serving Size : 1 Preparation Time :0:00 Categories : Beverages Amount Measure Ingredient Preparation Method 5 bananas 1 can frozen Orange juice concentrate 12 oz. 1 can frozen Lemonade concentrate 6 oz. 2 cups sugar 1 can Pineapple juice 46 oz. 2 2 liter Lemon Lime Soda chilled Mash bananas thoroughly and add slightly thawed frozen juices. Add sugar and pineapple juice. Stir well to disslove sugar. Pour into one gallon container and add enough water to come within one inch of the top. Freeze. When ready to serve, pour in a 2 gallon punch bowl. Add lemon- lime soda. Enjoy! Punch base can be frozen and kept indefinately. **The way I do it is: Mash the bananas in the blender and add frozen juices to that. In a large pitcher, add pineapple juice and sugar and stir until dissolved. Mix the two together and pour into a clean one gallon milk or water (preferable) container. Fill with water and freeze. When ready to serve, cut plastic bottle off of the frozen base and pour chilled soda over. Can break up big chunk as it melts.
