Salt, Garlic Powder and Pepper to taste
Flour for Dredging
1 Envelope Beefy Onion Soup Mix
1 Can Beef Broth
1 Can Cream of Mushroom Soup Preparation
  • Preheat oven to 325 degrees. Season Belgian Blue Beef Rump Roast well with salt, pepper and garlic powder. Dredge in flour and sear all sides on medium heat in oven proof slow roaster. While meat is browning, empty envelope of beefy onion soup mix into a container and add small amount of the beef broth. Beat with a wire whisk to break up lumps. Add remainder of beef broth and cream of mushroom soup. Add enough water to make four cups. Pour mixture over browned roast and bring to a boil. Transfer to oven and bake 3 to 4 hours or until tender.
  • Preparation time: 3 1/2 to 4 1/2 hours
    Serves 6 to 10 Special Cooking Tip: Since Belgian Blue Beef is so lean, you're not cooking fat. It cooks more quickly and you can use a lower temperature. We recommend cooking your desired cut to a doneness of rare to medium for optimum quality.

    Beef Recipes Grilled Belgian Blue Beef Ribeye Steak with Herb Peppercorn Butter 4 Belgian Blue Beef Ribeye Steaks
    1/4 cup dry white wine
    1 tablespoon minced fresh shallots
    1 tablespoon chopped fresh chives
    1 teaspoon chopped fresh tarragon
    1/2 teaspoon coarsely ground pepper
    1/4 teaspoon salt
    1/2 cup softened butter Preparation
  • In 1 quart saucepan stir together all ingredients except butter and steaks. Cookover medium heat, stirring occasionally, until all liquid has evaporated (5 to 6 min.). Set aside; cool completely. In small bowl stir together butter and cooled herbs. Place mixture on waxed paper; shape into 4" log. Refrigerate until serving time. To grill: Place steaks on grill over medium coals. Grill steaks 5 to 6 minutes for rare(150 degrees), for medium (160 degrees), turning once. Turn the steaks a few minutes sooner (1/3 less time) and check for doneness. To broil: move your rack farther away from the heat source. Broil as ordinary beef, but shorten the cooking time. Turn the steaks a few minutes sooner and check for doneness. Place 1/2" slice herb butter on each grilled or broiled steak. Serve as butter is melting over steaks. Tip: Remaining herb butter can be used to season cooked vegetables or to serve with breads.

    1-1/2 tablespoons vegetable oil 1-1/2 tablespoons cornstarch 1/8 cup butter or margarine 1/2 teaspoon dried thyme 1/2 tablespoon salt 4 cups peeled, sliced onion 4 large cloves garlic, peeled and minced 2 tablespoons light brown sugar, firmly packed 2 large sprigs parsley or 1 tablespoon dried 2 tablespoons white vinegar 1 large bay leaf 1 teaspoon pepper 1 can (12 ounces) light beer In a large skillet, over medium heat, sauté the meat in the oil until well browned on all sides. Remove the meat to a bowl and season with 1/2 teaspoon salt and the pepper. In the same skillet, melt the butter and sauté the onion, stirring often, until medium brown. A minute before the onion is done, stir in the garlic. Turn the onion and garlic into the slow cooker. Add the browned meat and juices from the bowl. To the still hot skillet, add the beer, sugar, parsley, bay leaf and thyme. Scrape up the pan juices and turn into the cooker. Cover and cook on Low for 6 to 8 hours.

    Belgium's Duvel Moortgat Brewery was founded in 1871 by Jan-Leonard Moortgat. Duvel, a Belgian strong ale at 8.5% alcohol by volume (abv), is refermented in the bottle like champagne.Maredsous is brewed by the Moortgats for the Maredsous Benedictine Abbey. The 8% is light in body with a sweet palate, while the Maredsous 10 is one of the strongest Belgian Abbey beers, with a well-rounded body and balance of malt and fruit. The 170-year-old DeKoninck is the only brewery in Antwerp, Belgium. Their British-like DeKoninck ale is amber in color with a slight maltiness.

    Excellent Belgian cookbook. Details recipes from all over Belgium, dividing them on a regional basis. No pictures, but the recipes themselves speak volumes. There are quite a few recipes using game which may not appeal to everyone. This is a more complete look at Belgian cuisine rather than the very good Everyone eats well in Belgium, which concerns itself with Flemish cuisine.I would definately recommend this cookbook.

    Picture this: It's a quiet Sunday morning and you're awakened by the warm, yeasty smell of waffles. You wander into the diningroom only to marvel at the perfect pattern of squares sprinkled across a plate of Belgian waffles. Fresh strawberries and whipped cream are set out and you grab a plate and dig in! Well, Belgian waffles don't need to be a dream. This month, I present my favorite recipe. It features sour cream and a hint of vanilla in the form of vanilla sugar and extract. The combination results in a fluffy waffle that's both sweet and creamy. The texture is perfect for holding a serving of fresh, juicy strawberries and a dollop of whipped cream my personal favorite accompaniments! I used to think that Belgian waffles were weekend fare until I realized that they freeze well. This recipe makes 8-10 waffles and unless you have a full house, there will probably be leftovers. Just lay a sheet of waxed papper between each waffle and pop them in a resealable plastic freezer bag. Then, when you get the urge to have them during the week, take them out and toast them in a 350 degree oven for 15-20 minutes or pop them in your toaster for a really quick treat. You can also microwave them, but you lose some of the crunchy outer texture. Belgian Waffles

Went on a little field trip to the local wine and beer store and picked up a bottle. Also, found some Rodenbach and others. Saw another I hadn't had in a while which I recommend, a '97 Lindemans Cuvee Rene' gueuze, a lambic with hints of orange and coriander. What's really funny are the names of some of the Belgian ales. Mort Subite(sudden death), Delirium Tremens(delirious tremors), La Fin du Monde(the end of the world), Maudite(the damned), Duvel (devil) and Lucifer, to name a few. Along with the quad La Trappe, I picked up a bottle of the Delirium Tremens; I'll let you know if there's something to the name!
