The area of Alost is famous for its cultures of onions. The onion soup is a classic recipe there. It has become throughout Belgium a great recipe traditionally cooked at the end of the New Year's Eve, after a long partying night !
  • Peel the onions, potatoes and the garlic Cut all of them in small pieces Take a pan, add your vegetables, your potatoes and the garlic, the water and some salt. Bring to the boil until the vegetables and potatoes are cooked. Mix everything (with a mixer) Salt and pepper to your taste
  • Serve this soup in bowls and offer to your guest on the side small pieces of butter-fried bread on which you rubbed some garlic before or not. Also leave some gratted Belgian cheese at their disposal. This soup will be delicous !

    Recipe based on: Everybody Eats Well In Belgium by Ruth Van Waerebeek,
    Serving Size : 4
    1 Cup Bread Crumbs
    3/4 Cup Milk
    1 Pound Ground Beef
    1/2 Pound Ground Pork
    1 Large Egg
    1 Medium Shallot finely chopped
    1 Tablespoon Fresh Parsley finely chopped
    Salt And Pepper to taste
    1 Pinch Nutmeg 2 Tablespoons All-Purpose Flour 2 Tablespoons Unsalted Butter 1 Tablespoon Olive Oil 1 Medium Onion finely chopped 3 Medium Belgian Endive cored and chopped 1 Teaspoon Sugar Salt And Pepper to taste 1 1/2 Tablespoons Flour 1 Cup Beer 1/2 Cup Chicken Stock 2 Tablespoons Fresh Parsley finely chopped Soak bread crumbs in milk and squeeze dry. In mixing bowl, combine bread, ground meats, egg, shallots, parsley, salt, pepper and nutmeg. Mix well. Form into 2 inch diameter meatballs. Dust with flour. In deep dutch oven heat the butter and oil, add meatballs and sauté until well browned, about 5 minutes. Remove to a platter and set aside. Add onion and endives to pan, cook over low heat stirring constantly for 10 minutes. Sprinkle with sugar, salt, pepper and flour. Cook stirring for 1 minute. Add beer and broth, bring to a quick boil. Reduce heat to a simmer and return meatballs to the pan. Simmer partially covered, until the meat is cooked through and has absorbed the flavors of the sauce, 45 minutes. Sprinkle with parsley and serve.

    Over many centuries the Belgians have evolved a varied, complex, unique and idiosyncratic beer culture. They give beer the respect that most nations reserve for wine. The Belgians also have the world's most nuanced and elegant beer cuisine.
    Belgian beers are worldly and suited to world cuisines. In the Middle Ages, Belgium was the center of the spice trade for Northern Europe. Brewers began incorporating rare spices and fruits ( coriander, ginger, caraway, curacao orange peel, star anise, paradise grain aromatic peppers and more) in their beers very early on. These subtle spicings mean that the beers marry well with cuisines from many nations. Only in Belgium do the brewers persist in the widespread use of spices.

The incorrectly named french fries must surely rank among Belgium's most universal contributions to modern culture. Because frites are cheap and filling, they are the staple food of most budget travellers in both Belgium and the neighbouring Netherlands.     Comment by Peter Sain ley Berry: The Constitution Rests On Irish Magic And Belgian Cooking Although it is still too early to know for certain whether the European Constitution will be agreed under the Irish Presidency, there were distinct signs this week that the smart money might soon be flowing in that direction. The Germans have acknowledged a willingness to compromise over voting strengths so long as the principle of the 'double majority' system is retained. While the Irish have now indicated their plans for approaching the constitutional issue at the summit of European leaders on 25th and 26th March. One Irish Minister referred this week to the Constitution as an 'immense prize:' it is a fish they are quietly determined to land. It is too early to assess how - and indeed if at all - the appalling terrorist tragedy in Madrid might effect the results of the Spanish General Election on Sunday March 14th. Our thoughts go out to the victims and their families. We must wait for the electors to deliver the result through the ballot box. But at the same time this terrible incident demonstrates that where terrorism is concerned no man, no country, is - as John Donne put it - an island entire of itself. His words echo appropriately down the centuries. "Any man's death diminishes me, because I am involved in mankind; And therefore never send to know for whom the bell tolls; It tolls for thee."
