Pacific Food
In most urban areas where volunteers live and work there is a wide variety of imported western foodstuffs available if you are willing to pay the prices. However, these prices can prove to be unaffordable on a volunteer's budget. One solution to this is to, as much a possible, buy and eat the locally produced food. The traditional diet consists mainly of root crops such as cassava, yams, taro root, sweet potato, and breadfruit; fruits such as guava, citrus, pineapple, paw-paw, mango and coconut. Fish is eaten as the main source of protein. Rice, although introduced from the western diet, is also now commonly eaten instead of the root crops. There are some useful facts sheets available on all the foods mentioned above from the South Pacific Commission.

  • Efficient cooking methods, such as putting lids on pots, simmering gently instead of boiling vigorously and using a pressure cooker, can save half the greenhouse gas generated during cooking.
  • Cook toast in a toaster instead of under the griller: reduce greenhouse gas emissions by up to three quarters.
  • An electric kettle or gas cooker generates about one kilogram of greenhouse gas for every 10 litres of water boiled, half as much as using a microwave or an electric cooktop.

Up to 90% of the energy used by ovens is wasted: use alternatives - microwave, electric frypan, pressure cooker.
  • Fan-forced ovens generate up to 35% less greenhouse gas than conventional ovens and more items can be cooked at the same time, as heat is more evenly distributed around the oven.
  • For maximum efficiency when cooking with electricity, use pots and pans with flat bases that match the size of the element.
  • Thaw food in the fresh food compartment of the fridge before cooking. Cooking time is reduced and less greenhouse gas is generated.

How to cook a galah: celebrating Australia's culinary heritage
In 2002 a history of Australian cookery How to cook a galah was published by Thomas Lothian of Melbourne. This represented the result of many years of research from my work in the Humanities. When I began the research I was immediately struck by how marginalized Indigenous culture was and how, as a result, Australian culture as a whole was weakened and racked with cultural cringe. My investigation showed that in fact non-Indigenous Australians had learnt much from Indigenous Australians and that many mainstream Australian traditions had originated in Indigenous culture, but that this had been forgotten or ignored. In the book many myths are dispelled and new facts revealed about how the food we eat today has evolved. The book is part history, part cookbook, partly a compendium of stories, quotes and anecdotes from old diaries, memoirs and oral records from Australians of all walks of life as well as visitors to this country. It is a feast for all food lovers, full of food lore and cookery traditions from the first Australians, through colonial times down to the present day. It is illustrated with old photographs and paintings, some of them never before published, which evoke the past and the richness of our culinary heritage.

Lorraine Lamothe Rug Art For more than 40,000 years before European navigators visited the shores of the Great South Land, Aborigines occupied Australia, including its arid deserts, tropical rainforests, coastal plains, mountains, and especially its major river systems. Estimates by anthropologists put the population of Australian Aborigines before 1770 at more than 300,000. They spoke 500 different languages grouped in thirty-one related language families. Aborigines were completely at home in their surroundings and had no trouble "living off the land." This was mainly because of their intimate knowledge of the topography and natural resources of their tribal territories, and their complete understanding of the habits of the animals they hunted. The Australian aborigines extensively used insects from their surroundings as food, medicine, and as part of their cultural beliefs. However, most data concerning the use of insects by Australian Aborigines occur as scattered references in various anthropological, gastronomical, and pharmaceutical sources. This article highlights the use of insects by the Australian Aborigines. Another lepidopteran that was considered a food delicacy by the Aborigines was the witchety grub. Although different source suggest different names for this insect, the larvae of (Xyleutes leucomochla Turn) is the true witchety grub of the Aborigines. Witchety grubs (larvae) are found in the roots of Acacia bushes, commonly known as the witchety bush in central Australia. These grubs were the most important insect food of the desert and were a much values staple in the diet of the Aborigines-especially women and children. Men also loved the grubs but would seldom dig them. The grubs were collected by digging up the roots and chopping them up to obtain the grubs within. The grubs can be eaten raw or can be cooked in ashes. Cooking causes the grub to swell and their skins to stiffen. Cooked witchety grubs frequently have been likened in taste to almonds. The larvae are rich in calories, protein, and fat. Ten large grubs are sufficient to provide the daily needs of an adult.
