There are two basic types of arthritis: osteoarthritis and rheumatoid arthritis Osteoarthritis is a degenerative condition that causes stiffness and pain in the joints, and is usually the result of ageing, except that in underdeveloped countries, where people work hard throughout life osteoarthritis is a much less common problem. Rheumatoid arthritis is a chronic inflammatory condition which causes joints to swell and become painful. The exact cause of rheumatoid arthritis is not known, although one reason for the prevalence of rheumatoid arthritis may be a high-fat, high-cholesterol diet. Indeed, inflammatory arthritis is much more common in countries where rich foods are eaten, like the United States, Canada, Western Europe, Australia, and New Zealand.(In a few people, some plant proteins, such as the gluten of wheat, may also be a contributory cause.)

Although they can't prevent aging, boomers can reduce the risk from obesity, and diet and exercise can help them achieve it, doctors say. Osteoarthritis, the most common form, develops as cartilage that cushions the joints wears away, leaving the ends of the bones rubbing against each other. The Arthritis Foundation says X-rays can find signs of osteoarthritis in most people over 60. The condition commonly begins to show up between ages 40 and 60, so most boomers are "right smack in the target," said Bill Roberts, an associate professor of family medicine at the University of Minnesota and president-elect of the American College of Sports Medicine. Extra weight on the cartilage brings extra risk of the joint disease. "The simple explanation is, you're putting more biomechanical stress on the joints," said Kevin Fontaine, an assistant professor of rheumatology at the Johns Hopkins School of Medicine.

Cause: Arthritis means "inflammation of a joint". There are many known and unknown causes for the more severe forms of arthritis. An example of a form of arthritis with a known cause is gout, due to the consumption of foods (rich in purines) by susceptible persons. Osteoarthritis is supposed to be "a normal part of aging". Many aggressive and crippling forms, including rheumatoid arthritis, ankylosing spondylitis, psoriatic arthritis, and systemic lupus, are grouped together as "inflammatory arthritis". Their cause is generally held to be unknown. But, consider these facts:
Inflammatory arthritis is much more common among people of countries where rich foods are eaten. Such places are the United States, Canada, Western Europe, Australia, and New Zealand. In parts of the world (including most of Asia and Africa) where people eat little meat and few dairy products, where grains, vegetables and fruits make up most of their diet, rheumatoid arthritis, ankylosing spondylitis, psoriatic arthritis, and lupus arthritis are very rare. In the few individuals in whom an arthritis does occur, the disease is mild and not crippling.

The 13-month study of 44 patients with active rheumatoid arthritis found that those on vegetarian regimens experienced fewer arthritis symptoms than the volunteers whose diet contained meat and other animal products.
  • One explanation stems from the fact that vegetarian diets contain different types of fats from those found in diets that include animal products. While it's true that the bulk of the fat in our bodies is used as a source of energy or to store energy, a small amount of fat goes to form powerful hormone-like compounds called prostaglandins or PGs.
  • There are several different families of PGs, each causing the body to behave in different ways. Where arthritis is concerned, some PGs can encourage inflammation while others will not. The type of fat we eat is one the factors that determines how much of each type of PG the body makes.
  • Previous research has found that omega-3 fatty acids, which are found in fish oil as well as borage seed oil, evening primrose oil and flaxseed oil, are able to decrease the painful symptoms of arthritis. Theoretically, the body turns them into PGs that don't encourage inflammation. By contrast, animal products and the omega-6 polyunsaturated vegetable oils turn into PGs that promote inflammation.

Osteoarthritis, the most common form of the disease, afflicts more than 21 million Americans. Rheumatoid arthritis plagues about 2 million more. The Arthritis Foundation has warned that, as the average age of the U.S. population rises, arthritis could become the epidemic of the future. The Centers for Disease Control and Prevention (CDC) project that by the year 2020, arthritis will affect nearly 60 million Americans. Many of these special diets originated from the observation that RA is not found in societies that eat a more 'primitive' diet. It is predominantly found in societies consuming the so-called western diet. You can manage RA by eating a healthy diet rich in whole foods, vegetables and fiber and low in sugar, meat, refined carbohydrate and saturated fat.
