I was glad to finally arrive to Armenia in my exploration of international foods, as this was at last a cuisine I was actually familiar with. I started cooking Armenian food years ago and while its dishes do not form part of my everyday repertoire, I revisit some favorites from time to time. Not surprisingly, Armenian food is closely related to Middle Eastern food, and it offers some of the best examples of this genre. Recipes are generally very flavorful and interesting. For this meal I wanted to make some old favorites (such as stuffed kofta) but also explore some new recipes. I got a little bit ambitious and made quite a bit of food, too much for four people - most of it was very good, but even then we had too many leftovers. I'd recommend that you use the menu below for 6-8 people. My final menu consisted of:
  • Armenian Pizza
    little cheese pizzas served as hors d'oeuvres (instead of bread and cheese). Followed by:
  • Kofta
    stuffed meatballs, accompanied by a
  • Hazar Aghtsan
    a Romaine lettuce salad.

Jan. 16, 2002 When Gary Soultanian appears in the next episode of Calling All Cooks on the Food Network, he'll not only be cooking but honoring his grandmother. Yeterli Soultanian fled Armenia during the Turkish massacres of 1915-18 after seeing her entire family murdered. A kindly train conductor found safe passage for the 8-year-old orphan on a boat bound for Cypress, where she was adopted by refugees. She eventually found her way to America and married a fellow Armenian, settling first in Chicago and then in California. Soultanian's appearance on Calling All Cooks , which pays tribute to food and family, is scheduled to air at 12:30 a.m. Monday and repeat at 9 a.m. Jan. 25. Soultanian will reminisce about Yeterli, whom he called "Mama," and about helping her cook an Armenian feast every Sunday. "I couldn't wait to go to her house," he says. "I was her favorite."

Armenian Rice
Rice with Noodles in Chicken Broth
erves 2-3 4 Tbsp
(50 g) butter 1 cup
(200 g) uncooked rice 2 oz
(50 g) small egg noodles 2 cups
(500 ml) chicken stock basil (optional)
Melt butter in large saucepan, add egg noodles, and cook until browned.
Add rice, stir to coat with butter. Cook on medium high heat for 1 minute.
Add chicken stock, and optional basil, and stir to mix.
Reduce heat, cover, and cook for 25-30 minutes until rice is done. Remove from heat and let stand, covered, for 5 minutes before serving.

Difficulty: very easy.
Time: 5 minutes preparation, 30 minutes cooking.
Precision: Approximate measurement OK.

of 2 Growing up in an Armenian community in Cairo, Egypt, Maro Balarian never had a white Christmas. The land around her was always brown and dry. Balarian and her mother would try to bring color into their lives by growing chickpeas, lentils and wheat in bowls. Mother and daughter would display these cheerful plants in the middle of their table and serve steaming bowls of anoush abour, or sweet soup. Then they would hope for a green new year. "My mother would create 'flowers' [decorations] of walnuts and almonds on top of the sweet soup," Balarian says. "And with the green sprouts at the center of the table, it was so pretty." Balarian still eats anoush abour every Christmas. Now she shares it with her husband, Ohan, and their two children, Ashod and Lorig. "My family still plants seeds in cotton balls, too," says Balarian, "in remembrance of my mother." Serve this sweet Armenian Christmas soup to your friends and wish them a green new year, too.

About Armenian cuisine Russian Armenian cuisine is more than two thousand years old and it is still tasty and fresh! What are the historical traditions of the Armenian art of cookery? Firstly, it is bread. By the way, it is nonrandom that such expressions as “to have breakfast”, “to have dinner” and “to have supper” are replaced by “to eat bread” in Armenian. Of course, it means not only bread but also other courses. However, Armenians eat much bread, mostly “lavash”. Lavash is cooked in a “tonir”. Its old construction hasn’t changed since ancient times. “Tonir” is a round earthenware fireplace with an ash-pit in its lower side part. To cook a lavash from flour, warm water, leaven and salt one have to make dough is to be placed in a warm place for fermentation. After the fermentation is finished, the dough is divided into 300-400 g. balls and rolled out into a long wide cake. It’s as easy as a pie! That is why the recipe remained up to nowadays. Besides, there is an old tradition in some regions of Armenia to bake lavash in store for 3-4 months in autumn. Lavash is dried, put in piles, covered and stored. If it is necessary, lavash is moistened with water and household soda, covered with material, left for half an hour and becomes fresh. Another special feature of the Armenian food is much salt consuming. This tradition has historical background. Salt is such a necessary addition to people’s food that they worshipped it in ancient times.
