    Most Armenian dessert recipes are Middle Eastern classics such as baklava, bourma and knafe. I'm not a big fan of this delicacies so I tried to find a recipe for something a little bit different and that would conform more to what we consider dessert. I came across this recipe for Royal Armenian pudding and it seemed to fit the bill. It's an interesting dessert, though not one I'd make again. It tasted OK, but it was a little bit too heavy, too "nutty". The strawberry sauce also didn't work for me, I just couldn't get the egg to stiffen (though there was a probably some fault with my technique). Most of my guests (and I) only had a couple of bites of the pudding, though a couple ate about half. I'd advise that if you make it, serve it in very small portions.

    A restaurant and cafe culture is starting to flourish again in Armenia, with street stalls and privately run establishments replacing the colourless state restaurants typical of the Soviet era. New cafes and restaurants are now opening daily. Many of the cafes are in parks, and are very popular in summer with locals and tourists alike. Much Armenian cooking is based on lamb, either grilled and served as shashlik with flat bread, or prepared as soup (the most popular being bozbash , a dish which exists in infinite variations) or stew, often in combination with fruit or nuts. The newly butchered sheep carcasses hanging from trees near most khorovats (barbecued meat) stalls, although perhaps appearing somewhat gruesome to foreign visitors, testify to the freshness of the meat sizzling on the grill. A meal usually starts with a large spread of hors d’oeuvres, which may include peppers and vine leaves stuffed with rice and meat, pickled and fresh vegetables, salty white sheep’s cheese eaten with fresh green herbs and flat bread, and various kinds of cured meat ( basturma ). Almost magical, health-giving properties are ascribed to dried apricots from the Caucasus. Another desert speciality is made from grape juice, dried into thin sheets of a deep, reddish brown colour, and then rolled up into long cylinders around walnuts or other nuts. The ’ishkan’ salmon trout from Lake Sevan is proclaimed as a great delicacy, but it is now seldom available.

    Armenia is a mountainous, landlocked country, on the southeastern edge of Europe, and at the gateway to the Middle East, and all of Asia.
    That valuable geographical position for potential trade between continents became a curse of sorts. Over the centuries it was invaded and controlled by various empires, including the Roman, Byzantine, Arab, Persian, and Ottoman.
    Incorporated into the former Soviet Union in 1920, it finally, along with Azerbaijan, gained independence in 1991.
    Regional fighting with its neighbor (Azerbaijan) over land control bloodied both countrys, and a cease-fire agreement was finally reached in 1994.
    The local economy still suffers from the long-term ramifications of war, an Azerbaijan fuel blockade, and a very severe 1988 earthquake that destroyed much of its infrastructure, and killed over 55,000 of its citizens.

    My wife is Armenian from Lebanon but it is her mom who is the cook. In turn her mom was from Aleppo, Syria, which Patricia Wells describes as a culinary mecca in the Middle East in one of her travel food writings. This cookbook is the most authentic one for the traditional Armenian recipes of the Middle East diaspora: my mother-in-law has tested a number of them and confirms that they can be trusted. Of course there are as many variations of these recipes as cooks (more, since when I get her to dictate recipes for posterity more than once, they always change), but these simple straightforward ones work and are good.     This magazine of scholarship and commentary frequently publishes articles about Armenian women. The first issue of 2003 contains a series of articles about domestic violence and the role of NGO's in Armenia, and an article about Armenian women's memoirs.
