Makes about 4 dozen cookies

Argentinean Caramel-Filled Crescents (Pasteles)

Ingredients cups all-purpose flour cup powdered sugar teaspoon baking powder teaspoon salt cup butter, cut into small pieces to 7 tablespoons ice water package (14 ounces) caramel candies, unwrapped tablespoons milk cup flaked coconut egg tablespoon water Place flour, powdered sugar, baking powder and salt in large bowl; stir to combine. Cut butter into flour mixture with pastry blender or 2 knives until mixture forms pea-sized pieces. Add water, 1 tablespoon at a time; toss with fork until mixture holds together. Divide dough in half; cover and refrigerate 30 minutes or until firm. Meanwhile, melt caramels and milk in medium saucepan over low heat, stirring constantly; stir in coconut. Remove from heat; cool. Working with 1 portion at a time, roll out dough on lightly floured surface to 1/8-inch thickness. Cut dough with 3-inch round cookie cutter. Reroll trimmings and cut out more cookies. Note These cookies do not freeze well.

But as soon as she rode a MTB for the first time, she knew that was her sport. Almost immediately after her first race in her town of Olivos, Buenos Aires, she was picked up by a local bike shop (DAX) to race in their team, and promote women's sports. That's how she started racing with a loaned Specialized Stumpjumper. After several local races, she was offered to go to the Argentinean National Championships Finals, where she took 1st place, in front of the soon to be National Champion. She earned a spot into the National Team and with the support of her town and family, she participated in her first World Championships, in Vail Colorado, in 1994.
