At lunch, you will find the Argentine Pavillion full of South American businessmen looking for a taste of home. In the evening, the crowd is more eclectic, but the emphasis is still on classic Argentinean fare.
Starters We recommend you skip the rather ordinary Ensalada Argentina, which is just iceberg lettuce with tomato wedges, cucumber slices and shredded carrots, although the avocado dressing that accompanies it has an interesting tang. Instead, go for the Argentinean Combo, an assortment of appetizers, including empanadas (spicy meat pies), matambre (a hearty slice of a vegetable and pork terrine), and several salads.

INGREDIENTS

Chimichurri Sauce
PREPARATION
Choose a 12 lb.piece of prime rib. Rub sea salt all over the meat and cover it with a piece of cotton cloth. Leave in the refrigerator for about 48 hours. After that period, remove the cloth and bake at med-high temperature for 45 min. Upon removing from the oven, the meat will be sealed on the outside and very red on the inside. The next step is to cut vertically between the bones, making steaks that weigh approximately 2 lb. Mix all ingredients and let stand for at least an hour.
We recommend serving this dish with a lettuce, tomato and onion salad and a baked potato with a touch of butter. A good red wine is the perfect accompaniment for this savory dish.

We simply gathered images which we want to share with you (as this mountain of garbage along the side of the freeway that joins Frankfurt and Breda, in Germany). After loading my baggage in a taxi, the day I arrived in Brussels, the chauffeur told me: "if you want I'll take you, but that is only four blocks away and I have to charge you no less than ten dollars for that", I thanked him, took hold of my bag and went on by foot. I share the first night in a community hotel's with a fellow from the USA, one from Germany and an Englishman. The American guy was reading "A hundred years of solitude" (by the Colombian Gabriel García Márquez). In the room next ours, there was a family from Togo, in Africa. They were over 12 people, dressed in their traditional clothes and cooking their traditional meals wich they shared with whoever accepted, in a hall in the hotel. I met with people from Japan, New Zealand, and other distant countries. I recive a lot of astonishings images and experiences.

    Argentinean barbecue steak with anchovy and pepper sauce
    Argentinean barbecue steak, quick and easy to make. An anchovy sauce with steak? Sounds strange but it's a classic combination.
    Preparation time:
    5 minutes
    Cooking time: 1 to 2 minutes
    Serves 6
    18 very thinly sliced fillet steaks. About 50g (2 ounces) each.
    About 10 anchovies in olive oil, finely chopped
    10 tablespoons of olive oil 3 tablespoons of red wine vinegar 3 tablespoons of fresh parsley, finely chopped 1 teaspoon of freshly ground black pepper salt 1. Place the anchovies, oil, vinegar and pepper in a small pan and gently simmer for 2 to 3 minutes. Keep warm at the side of the barbecue. 2. Season the steaks and cook over very hot coals for about 30 seconds per side, then transfer to serving plates. 3. Stir the chopped parsley into the sauce and pour over the steaks. 4. Serve the steaks immediately.

    American food - that's burgers, steaks and piles of doughnuts, right? Er, no, not really, and certainly not at armadillo. Brazilian born chef/owner Rogerio David takes his culinary inspiration from throughout Latin America, from Mexico to Argentina, Brazil and beyond; and there is not a burger bun in sight. Instead the menu is spiked with South American ingredients such as spicy poblano chillies, cassava and various punchy salsas. This isn't the place to come if you're after some plain meat and potatoes. The genius of David's cooking is that, as peculiar as the ingredients or combinations may at first seem, the way that they translate on the plate is always thoroughly convincing, thanks to the chef's well-considered balances of hot, sweet, earthy and spicy. The Latin American experience is a beginning-to-end affair at Armadillo, starting with Margaritas, Pisco sours, and Mexican beers, and finishing with say, Mexican coffee flavored with cinnamon, or a drink favored by South American called mate, a kind of tea made from a dried herb. The wine list is dedicated mainly to Chilean and Argentinean wines and, like the food is attractively priced. This is the sort of cooking that Londoners deserve more of.
