    Toss with 2 tsp cumin, dash of coriander and some cayenne,
    1-2 tbsp lemon juice,
    1 tsp vinegar and salt.
    Method:-
    Add about a tablespoon of water and
    "toss" with hands. (don't ask why it seems to taste better!) This

In cities both food and water are safe although the change in your diet may produce short-term gastrointestinal upsets. EGYPTIAN MEALS Although Egyptian eating habits may seem erratic, most natives begin the day with a light breakfast of beans (or bean cakes), eggs, and/or pickles, cheeses, and jams. Most families eat their large, starchy lunch around 1400-1700 and follow it with a siesta. They may take a British-style tea at 1700 or 1800 and eat a light supper (often leftovers from lunch) late in the evening. Dinner parties, however, are scheduled late, often no earlier than 2100, with the meal served an hour or two later. In restaurants lunch is normally 1300-1600, dinner 2000-2400. Restaurants In Egypt, as in the rest of the world, restaurants are only as good as the cooks they employ, and cooks seem to be continually changing. For current information on the best restaurants, the expatriate community is unbeatable, and the magazine Cairo Today includes monthly tips listing places to try, and publishes an annual dining guide. Most establishments use native ingredients and will offer fruits and vegetables in season. Menus are in both Arabic and English except in Alexandria, where they are in Arabic and French. In large restaurants, the maitre d'hotel will speak English, French, and possible German, Italian, or Greek. These establishments serve a mixture of international cuisine but often include Egyptian or Middle Eastern fare as well. Most hotels also maintain 24-hour coffee shops.

    After four decades of cooking for my family, I am taking this opportunity to share my cooking with you. Some recipes have been handed down unchanged for generations, others have been changed over the years to suit our health-conscious times. For example, I eliminate frying whenever possible, use vegetable oil instead of saturated fats, and buy leaner meats.

    by Forester Nigel FitzMaurice The preparation of complex compounds for medicinal or recreational purposes has a long history. It is the intention of this paper to present some examples of non-alcoholic preparations described by an Iraqi doctor of the 9th century CE. These preparations, arising out of a medicinal background, may be seen as steps along the way toward becoming non medicinal, recreational beverages. Three are technically electuaries, that is, syrups. One is a poultice, with ingredients very commonly found in later teas, cordials, and other similar drinks. The remainder is a tonic beverage already.
    The recipes under study are all taken from a translation of the Aqrabadhin (formulary) of al-Kindi. The original author was Abu Yusuf Ya'qub ibn Ishaq al-Kindi, a doctor living in Baghdad in the period c. 800-870 CE. Kindi's formulary became famous, and was widely distributed throughout the Muslim world, and even beyond. Most of the formulae presented in his work are typical of Mediaeval medical prescriptions, and involve salves, ointments, poultices, or internal medicines with ingredients of varying strengths and toxicity's.
