Lettuce Ponds
Lettuce is seeded, transplanted and harvested every day. Two boards are harvested, cleaned and transplanted each day giving a daily production of 128 head. There are a total of 52 boards in the combined two lettuce ponds. The growing cycle of the lettuce in the ponds is 26 days.
The nutrient solution is cooled by a chiller to a temperature between 70 and 73 F. This helps prevent root diseases. The solution is circulated and aerated by a pump and perimeter piping in the bottom of the pond. The pond is 12 inches deep.
Bato Bucket System
Tomatoes

Two tomato plants are grown in each bato bucket. The plants are trained vertically by the use of plastic clips onto the support strings. The plants are alternately sloped to each side in a V-cordon method to maximize light utilization. All suckers are removed at the leaf axils to get a single stem plant as these are staking varieties. Once the plants reach the overhead wires in about 4 months they are lowered and allowed again to reach the wires. This process of lowering is repeated as needed, usually weekly. The plants will bear fruit after 3 months and continue up to 6 to 8 months depending upon their vigor.
Peppers
European Cucumber

These plants are sown every 5 weeks. They will begin fruiting 5 weeks after sowing. Only one plant per pot is planted as they have much larger leaves than tomatoes or peppers and intercept more light so wider spacing is necessary. The cucumbers are also trained vertically up to the support wires, where they are topped and several suckers allowed to continue growing over the wires and fall down. All suckers, tendrils and much of the fruit are removed from the main stem to allow the plant to become vigorous. This vigor is needed in order that the plant may support the heavy fruit load later.

Anguilla Anguilla, the most northerly of the British Leeward Islands, retains the laid-back character of a sleepy backwater. It's small and lightly populated, but the islanders are friendly and easy going. It also has some of the finest beaches in the Caribbean. The interior of the island is flat, dry and scrubby, pockmarked with salt ponds and devoid of dramatic scenery. Anguilla's main appeal to visitors is its beautiful fringing beaches, aquamarine waters and its nearby coral-encrusted islets, which offer great swimming, snorkelling and diving. The island has only recently developed visitor facilities; it made a decision in the 1980s to develop tourism with a slant toward luxury hotels and villas. It has since become one of the trendier top-end destinations in the Eastern Caribbean. Inexpensive ferries shuttle between Anguilla and bustling St Martin, making Anguilla easy to visit as a day trip. GRUNT (haemulon sciurus)
  • Marine fish that resemble snappers; they are called "grunts" because they make sounds by grinding their pharyngeal teeth together. The noises are amplified by their swim bladder. They are denizens of reefs and mangrove swamps and are esteemed as game and food fish. They may be seen in dense schools over the reefs during the day, dispersing at night over the flats to feed on small fish and crustaceans. Many species have fire-red-lined mouths. Individuals of certain species have been observed pressing their open mouths together in a manner resembling kissing. Many species are less than 0.3 m (1 ft) long, and very few are over 0.6 m (2 ft) in length.

  • Feeds on burrowing organisms, sometimes "spitting" jets of water into the sand to uncover them. Length is under one foot.
    MUTTON/NASSAU GROUPER (epinephelus striatus)
  • In addition to the black saddle on the tail base, the Mutton/Nassau is distinguished form the red grouper by the dark band running through the eye, five dark bars banding the body, and black dots that ring the eye. Large than the red grouper, it attains a length of four feet. These fish are edible. Some large specimens can cause poisoning.
    AMBER/YELLOW JACK (caranx bartholomaei)
  • Another edible game fish is the yellow jack, a strong fast moving family, Carnivorous and sliver in color with a yellow tail which gives it a distinctive look. The yellow jack grows to about three feet.

    1-January-04 Night Ferry service between Anguilla and St Maarten set rescheduled to commence January 5th 2004 The night Ferry service between Anguilla and St Maarten which was due to be reinstated as of tomorrow January 1, 2004 will now commence on Monday 5th January 2004. According to information from the Anguilla Tourist Board the slight change is due to unforeseen circumstances.
    The service, which had been halted in 1995 following the passage of Hurricane Luis, was renegotiated with the French Authorities recently. Both Government and Tourism Officials have expressed their pleasure with the development as it provides opportunities for late connections for passengers travelling to Anguilla via St Maarten, and for increased commuter service for locals. The new service will also facilitate dining and other excursions for guest on Anguilla and St Maarten/St Martin. The ferryboat will leave Blowing Point at 9.20 pm and departs Marigot at 10.00pm. Each passenger will have to pay a one-way fee of twenty-five US dollars that includes tax.

    Creating development and management plans for a marine park is
    one of the final student projects. Students are expected to engage actively in all course activities and projects, to share in discussions, to interact with peers, staff and guests/hosts on the island so that all of us may learn with and from each other. Each person involved with the course brings his/her own set of experiences, perspectives, and academic backgrounds to this month-long experience; it is this diversity that adds interest, depth, and breadth to the course. We are confident that each of you will be a positive ambassador for the University and for yourselves. Additionally, we plan to be involved in service learning when we can (previous service projects have included provision of fish/coral survey information to the Fisheries Department, participation in a project to prepare the "old courthouse" for renovation, and installation of manta mooring systems). In addition, students will be expected to complete and submit the projects listed below for assessment and grading for overall course grade. A total of six components (some composed of sub-projects) will be graded, then averaged. Some assignments are done on an individual basis, some with your "buddy" or partner, and some with a small project group.
