Adjunct Professor of Nutrition, Hunter College [This article was reprinted from Consumer News Aging is a process that begins at birth, not something that begins on our fiftieth birthday. If we are lucky, we get to take part in that process for a long time. Some people manage to keep the process going for 90 to 100 years. Others of us aren't so lucky. Aging is measured by time passing, but all of our clocks are not running at the same speed. Some people become old and frail at 40, while others stay young and vigorous until they die at 90. One of the environmental factors that affects us in the aging process is illness. Although an illness has parameters and does not have a single defined impact unless it kills us immediately, how we deal with the illness is very much under our control. HIV is such an illness. A person can deal with HIV disease either as an old 40 year old or a young 90 year old. Our aim should be to try to eliminate all the non-HIV related problems that we confront daily and concentrate on improving the quality of our lives. For example, we should stop using recreational drugs, stop drinking alcohol and stop smoking tobacco. What we should do is take part in some sort of stress reduction activity like yoga, do some kind of physical activity and try to get enough sleep.

Mitochondrial Nutrition,
Aging and Cognition
by Ward Dean , M.D., and Steven Wm. Fowkes Every cell of the body contains many tiny organelles called mitochondria (see inset, Figure 1 below). These mitochondria produce most of the energy used by the body. Cells with a high metabolic rate (heart muscle cells) may contain many thousands of mitochondria. Some cells may contain only dozens. Mitochondrial energy production is a foundation for health and wellbeing. It is necessary for physical strength, stamina and consciousness. Even subtle deficits in mitochondrial function can cause weakness, fatigue and cognitive difficulties. Chemicals which strongly interfere with mitochondrial function are known to be potent poisons. During aging, mitochondrial function may become compromised. Mitochondrial energy production is accomplished by two closely linked metabolic processes. First, the citric acid cycle converts biological fuel (carbohydrates and fatty acids) into ATP (adenosine triphosphate) and hydrogen (in the form of NADH and FADH2) ( see sidebar ) for further explanation of NADH and FADH2). The Aging Body
Physiological changes occur slowly over time in all body systems. These changes are influenced by life events, illnesses, genetic traits and socioeconomic factors.
Sensory Changes
Sensory changes include a decline in sight and peripheral vision, hearing, smell and taste. The losses are neither total nor rapid, but they do affect nutritional intake and health status.
  • Loss of visual acuteness may lead to less activity or a fear of cooking, especially using a stove. Inability to read food prices, nutrition labels or recipes may affect grocery shopping, food preparation and eating. This could have an adverse effect on nutritional status.
  • Loss of hearing may lead to less eating out or not asking questions of the waiter or store clerk.

Nutrition Program
Home-Delivered Meals and Group Site (Congregate) Meals With the aging of the U.S. population, increased attention is being given to delivering health and related services to older persons in the community. Since adequate nutrition is critical to health, functioning, and quality of life, it is an important component of home and community-based services for older adults.
How it works
The Elderly Nutrition Program provides meals served in group settings and delivered to people’s homes. Meals and other nutrition services are provided in a variety of settings, such as senior centers and churches. Group site meals: Meals are served weekdays in over 625 sites throughout the state including senior centers, churches, senior housing facilities and community buildings. Home-delivered meals: When older adults cannot leave their homes and cannot personally prepare nutritious meals, home delivered meals are an available option. Volunteers who deliver meals to homebound older persons have an important opportunity to check on the welfare of the homebound elderly and are encouraged to report any health or other problems that they may observe during their visits. Meals served under the Nutrition Program must provide at least one-third of the daily recommended dietary allowances established by the Food and Nutrition Board of the National Academy of Sciences-National Research Council.

We all age and most people prefer to age gracefully. Is it possible to slow down the aging process? The answer to this is, "Yes." However, it is necessary to be informed about some very simple concepts and behavioral changes that will lead to continued health over the years. First, the major cause of illness is CULTURE and cultural habits, with include the food we consume, lifestyle (alcohol and other drug abuse), stress stemming from work and relationship problems, and contact with Western biomedicine which, all factors considered, is, in my opinion, the major contributing factor to most ill health in this country. Second, what do you want in terms of health, and what are you willing to do to reclaim your health? The medical community has misinformed the public for years about tissue regeneration from years of health destroying behavior (smoking, alcohol abuse, digestive problems). Research has show that neural tissue, liver tissue, lung tissue will regenerate under proper detoxification and nutritional input, and age may not be the determining factor.
