Vegetables 1 tb Corn oil 1 md Onion; chopped 1 Garlic clove; chopped 1 Potato; peeled - cut into small pieces 1/2 c Cauliflower (chopped) 1 Carrot; chopped (1/2 C.) 1/2 c Green peas, fresh or frozen 1/2 c Thin-sliced green beans 1/4 ts Salt 1/4 ts Freshly ground black pepper 1 cup Corn oil, for deep-frying Directions Mix the meal, egg and salt together, adding just enough water to make a moist dough that holds together. Set aside. Heat the oil in a skillet, add the onion and garlic, and stir-fry over moderate heat until light brown, about 3 min. Set aside. Take the potato and 1/2 C. each of any other 3 vegetables and blanch in boiling water for 5 minutes. Drain well. Add these to the pan with the onion and garlic and stir-fry over moderate heat for 3 minutes, to mix well. Add salt and pepper. Cool. Take 1 heaping T. of the dough and press it out on a flat surface into a 2 1/2 inch square. Put 1 T. of the vegetable mixture on the bottom half of the square and fold it over into a triangle. Prepare all the samoosi this way. Heat the oil in a wok or skillet and brown the turnovers over moderate heat for about 3 minutes. Drain on paper towels. Serve warm. Makes about 20 turnovers.

Although it is impossible to know the exact number of victims of self-immolation, since many never make it to the hospital, one radio broadcast network reported 164 deaths from self-immolation in Herat in the past year. Another source estimated that over 380 women were burned over the past 12 months in Herat alone, 20 percent were said to be accidental and 80 percent from attempts of self-immolation. However, at this time, options and forms of assistance for women living in violence are extremely limited all over Afghanistan. Due to financial restrictions some families try to take care of victims at home. For most, if not all of these victims, it is only a matter of time before infection sets in, blood pressure drops and death ensues. As it is against the Islam religion to commit suicide, the cultural-religious stigma is a common deterrent to victims seeking proper medical treatment. Out of shame, many families will say the self-immolation was a cooking accident.

We also conducted a nutrition survey among children in Sozma Qala . A sample of 765 children aged 6 months to 5 years was checked, along with 758 mothers. A shocking 14% of children, and 10% of mothers were found to be malnourished or at risk of malnutrition, so we decided to distribute food to all families with children, in addition to any food they had already received.

The other alternative was the Russian Hospital which was not as popular because the Russians do not have the bedside manner of American physicians. Usually the foreign doctor is invited to dinner to thank him for treating a relative. In Kabul, family customs are westernized at least to the extent that the family dined on tables and chairs, had stereos and radios, and modern cooking appliances. What is more unusual is to be invited to visit a family of the working class. We had this opportunity when Hassim, one of the house cooks invited us to lunch at his home. Hassim's family compound is located on a quiet street. The only opening to the compound was the gate. Much of the family living takes placed in a central courtyard. In the center of the courtyard was a well with a leather bucket. Each extended family group has a room off the courtyard. A boy leads a camel down the street in front of Hassim's family compound in Kabul.

Emmalee Tarry Home Health Clinic Search Comments A Rural Health Clinic On our way to view the Buddhas in the Bamiyan Valley we stopped at the Ghorband Village Health Center where the director was expecting us. The clinic serves 45,000 people from the surrounding rural area. Young doctors from Kabul University are required by the government to serve two to three years in one of the rural health centers. The doctors are away today, but inside the building is clean and functional with posters urging smallpox vaccination. The clinic has a special program for expectant mothers and young children. Within one month measles vaccinations will be available. The clinic sponsors a health education program in schools and homes most necessarily in this land where the germ theory of disease is not fully recognized. The director is most proud of the well project being build with UNICEF funds. In the valley below the clinic men labor to dig the well shaft by hand passing the dirt to the surface with a rope.. When the well shaft is finished it will be reinforced with concrete pipe. A pump will bring the water up the hill to a tank. The water will be used by the clinic and pipes will be laid to about 3,000 homes in the valley. It's hoped this clean drinking water will save the lives of many children. The well digging is underway, but there is no progress on the tank. The director sadly explains that the local mullahs ( Moslem religious leaders) do not like the well project and therefore do not send enough labor.

Nearly every family in this capital of one million is cooking its evening meal and trying to keep the bitter winter chill at bay. But in a partially destroyed city where most homes lack electricity, the only fuel available is wood, cut from the surrounding hillsides and trucked into Kabul and other cities. The interiors of the dilapidated concrete homes and, presumably the lungs of inhabitants are covered with soot. Amid the ongoing US-led campaign against the Taliban and Al Qaeda, little has been said about Afghanistan's environment. That is a critical oversight, because the landlocked country of 25 million is facing a crippling environmental disaster, one greatly exacerbated by 23 years of war. At this point, another round of civil war could wipe out the country's forests as well as several endangered species.
