Cut the grapefruit into segments, with the skin and pith chopped off, so that the flesh is exposed. Marinate the fruit in the wine for at least one hour. Cook the pasta until al dente While the pasta is cooking, break the pecans into pieces, and brown in a dry pan. Discard (or drink!) the bulk of the marinating wine, and gently heat the fruit in a large pan. Add the marscapone to the fruit, and gently heat through. Bake the aubergine for 45 minutes. Slice the aubergine in half lengthwise, and let it cool down enough to work with. Combine the filling ingredients. Scoop out the bulk of the aubergine's flesh, and chop it roughly. Combine the aubergine flesh with the filling ingredients. Refill the aubergine halves with the filling. Combine the topping ingredients. Cover the filled aubergine halves with the topping. Bake the aubergine halves for a further 15 minutes, until the filling is hot and the cheese is melted.
