Watercress Soup, Indian Style Cold and refreshing, Watercress Soup is a sprightly addition to any menu. This version is jazzed up a bit to provide an opening note to an Indian meal of many tastes. If you are a Watercress Soup aficionado, you know there are many ways to make this soup. The base can include potatoes and chicken stock or it may be made entirely from cold dairy products like buttermilk and yogurt. Watercress may be added cooked or raw. Other seasonings are up to the creative cook.
