They were primarily farmers who came to this country, often to escape religious persecution in Europe. The cooking reflects both the German heritage and the hearty foods associated with the physical work involved in farming. Women spent a lot of time preparing three hearty meals a day. Preserving, such as canning and drying, was a necessity to help get through the winter months, and many recipes using preserved items are still popular. There are two misconceptions about the Pennsylvania Dutch that require explanation. One is caused by the use of the term "Dutch", which leads many to believe that the people came from Holland. In fact, the term came from the word "Deutsch", which is the German word for "German". Another thought is that all Pennsylvania Dutchmen are Amish. However, the Amish community represents only a small portion of the people who settled in eastern Pennsylvania during the German migration of the 18th century. The majority of the Pennsylvania Dutch are not Amish. Although the foods are very similar because of the German heritage, there are differences, probably based on the influences of the regions into which they settled. (Lighter aluminum Dutch Ovens is available but not recommended.) Three-legged Dutch Ovens are the preferred design, allowing them to perch easily over the coals. When using charcoal briquettes, heat is controlled by placing 1 briquette under the pot for every 25 degrees of heat required by the recipe. Coals are sometimes placed on the lid as well, which can also be used as a skillet or griddle when placed upside down on the fire or stove. For easy cleanup, the bottom and the sides of Dutch Ovens are often lined with aluminum foil. Whether baking or boiling, a Dutch Oven is always used with the lid on to prevent ashes from falling into the food. Cooking gloves or hot-pot tongs are always used when removing the lid or handle any part of the hot oven. A wooden or bamboo spoon is best for stirring. A Dutch Oven won't rust if it is correctly "seasoned" with oil before use and properly maintained and kept dry. Never scrub Dutch Ovens (or any other cast iron appliance with soap. Store Dutch Ovens in a warm, dry place with the lid cracked so air can circulate. While appearing to be indestructible, Dutch Ovens can shatter if dropped on a hard surface, or crack if cold water is poured into them when too hot.

     Extractions: Troop 625 Search Now: By Tracy Williams The most impressive cooking I have ever demonstrated was a stacked Dutch Oven meal. You will need three Dutch Ovens. The bottom one is a 14" Dutch Oven, then you can use a 12" and a 10" oven. Have a good amount of charcoal going. In the bottom oven, layer sliced thin skinned potatoes (skin and all), sliced onions, and raw bacon. When the oven is about 3/4 full, put the lid on and add a layer of charcoal to the lid. Cover the top with charcoal. Put the 12" oven on top of the bottom oven. When the second oven is hot, put in about 2 pounds of hamburger meat (coarsely ground ok). Stir until no longer pink. Add a large can of tomatoes (we like the Rotel brand). Also add chili powder, salt, and pepper. Stir in a can of chili beans like Ranch Style beans. Put the lid on and add a layer of coals to the lid. In the top oven, put one of the cake mix cobblers. A favorite is the apple pie filling, spice cake mix, and a Dr. Pepper or root beer. I prefer to line this Dutch Oven with foil. I don't like scrubbing off the crusty sugary remains. Add the lid and put some coals on top.

I think the first thing a person should learn about Dutch oven cooking is how to control the heat. Most of the cooking is done on the top of oven. As a general rule, you should have twice as much heat on the top of the oven as you do on the bottom. That is easy if you are using charcoal. You can simply count them. If you are using coals from a fire, it depends on what kind of wood you are using and hard woods seem to work the best. You just have try some and see what works the best. Any wood will work ,but you will find that some is surely better. I use only Kingsford charcoal because it is always the same. When I cook in the mountains of Idaho I use either aspen or fir. In the southwest cedar or mesquite seem to work well. Now that we know how to control the heat

You really don't need special recipes for the Dutch Oven. All that you need to do is learn some basic procedures and how to control the heat. If done properly, you can place the food in the oven and enjoy yourself while your dinner cooks. CONTROLLING HEAT Use charcoal if you are just starting to cook in the Dutch Oven. If you are the cook, DON'T FORGET TO BUY CHARCOAL. For a hot Dutch Oven, place the number of hot coals underneath equal to the diameter of the oven. Place double that number on top. For a 12 inch oven, 12 underneath and 24 on top. This will give you a hot oven of about 400 degrees. To reduce your oven temperature, reduce the number of coals 1 bottom and 2 top for every 25 degrees. If it is very cold and/or windy you will need to add a few extra coals. Always preheat your oven before you add the food. Your coals should last about an hour. If your cooking time is more than an hour, or if the coals are burning fast because of the wind, you must have extra hot coals ready to keep the oven temperature consistent. SPECIAL TECHNIQUES
