A must have. The recipes in this book are easy to use and wonderful. They cover every topic, as a basic cookbook, without going into technique. I had been hoping to have the same format as the columns had been; a complete menu idea, but that is the only disappointment in the book. In the 18 years that he served as president of the Chefs Association of South Africa, Bill Gallagher saw the image of chefs undergo a dramatic change. "What was regarded as a domestic job is now seen as more creative and artistic," he says. Gallagher believes that chefs are now considered to be true professionals. The husks of oats (sids), left over from the milling process, had too much goodness for bygone Orcadians to discard. So they were steeped in water for ten to 14 days until they fermented. After straining, a cream-coloured, somewhat gooey liquid called sooans remained, the basis of thin pancakes known as sooan scones. If you have never tasted these, it is easy to misjudge what their flavour will be like. They are not sour, as you might imagine, but instead have a well rounded, mealy taste, which I believe is an improvement on traditional thin pancakes. A variety of recipes exist. Although an egg is present in some of these, this is not an essential ingredient as the batter from sooans holds together well on the griddle. However, my mother used to say that using an egg in baking prolonged freshness of taste, and this might explain its inclusion. Another variation is that some recipes use kirned milk as a substitute for fresh milk, and a mixture of the two is also suggested. From these I have devised my own recipe for sooan scones. I give amounts in ounces and fluid ounces, rather than in cupfuls and ladlefuls, for those of you who feel more confident with exact quantities.
